Steps:
- Combine the sugar, lime juice and 2/3 cup regular water in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the sugar is dissolved, about 2 minutes. Add the seltzer water to the syrup mixture, sprinkle the gelatin on top and leave it to bloom for 5 minutes.
- Microwave the bloomed gelatin mixture until dissolved, about 30 seconds. Sir in the tequila and orange liqueur. Divide the mixture among twelve 2-ounce glasses. Refrigerate until set, at least 3 hours.
- Before serving, garnish each shot with a small pinch of flaky sea salt and a lime wedge.
BLOOD ORANGE MARGARITA SHOTS
Sparkling blood orange is the perfect mix of sweet and tart when paired with zingy tequila. This summer, enjoy a fun, orange wedge-shaped twist on a classic Margarita.

Steps:
- Halve the oranges and gently scrape out the pulp, membrane and white pith with a spoon or melon baller. Place the orange rinds in muffin tins or fit them all into a pan so they can be filled without tipping over.
- Put 1/2 cup cold water in a bowl, sprinkle the gelatin evenly on top and let it absorb the water for 2 minutes. Whisk in 3/4 cup boiling water until the gelatin is fully dissolved and then whisk in the sugar until dissolved. Cool the mixture to room temperature and then stir in the blood orange sparkling soda, tequila and orange liqueur. Spoon the gelatin mixture into the orange rinds. Refrigerate overnight.
- Carefully slice each orange half into 2 wedges and serve.
MARGARITA SHRIMP
I LOVE Margaritas and I LOVE Shrimp! So, why not combine the two? Remember to serve with a BIG Margarita to drink! Tart, sweet, spicy, lime, shrimp and TEQUILA! Oh ya! Updated after Culinary's review and wonderful suggestion to serve this with more of the same! So save some limes and salt to finish it off if you like! Oh and another Margarita would be good too please! lol Serves 4 as Main dish and generous 8 as an appy- more if you are not so generous! lol!

Steps:
- Sample the tequila to make sure it has not gone bad! lol.
- Mix all marinade ingredients in a medium mixing bowl.
- Add shrimp, cover and let marinate in refrigerator for about 30 minutes.
- Sample the tequila AGAIN to make sure it has not gone bad since you tasted it in step 1! lol.
- Remove shrimp and discard marinade. Thread shrimp onto skewers or just put them in a grill wok or basket and grill for 5-6 minutes. Turn when they begin to turn pink on the bottom. Do NOT overcook.
- Remove from grill and serve immediately.
- BUT NOT before you SAMPLE the tequila AGAIN! hehehe.
- Enjoy!

MARGARITA JELLO SHOTS OF THE JELLO MASTERS
Inspiration for this shot comes from the Jello Maven himself, Chaz Bosten Baden, and his archive of Jello shot recipes at http://www.boston-baden.com/hazel/Jello/. I have altered it to suit my tastes and used many other shots from his site, having since been named the "Jello Shot Master" by my friends.

Steps:
- Mix boiling water and Jello. Stir for a minute until dissolved. Add rest of ingredients, stir.
- Pour into small paper dixie cups, cool on one or two cookies sheets stacked in the refrigerator.
- Unless you use ice and water for the cold water, allow 5 or more hours for Jello to cool and set.
- For every party I throw, I'll make this recipe and one more from Hazel's site to satisfy the partygoers.
