SALTED MARGARITA COOKIES
Enjoy these wonderful cookies made with Betty Crocker® sugar cookie mix and sprinkled with sea salt - a distinctive dessert.

Steps:
- In large bowl, stir together cookie mix and lime peel until blended. Add butter, egg and lime juice. Beat with electric mixer on medium-low speed until blended and soft dough forms.
- On 17-inch piece plastic wrap, shape dough into 12-inch log. Wrap tightly; freeze at least 30 minutes or until firm enough to slice.
- Heat oven to 375°F. Unwrap dough; cut into 1/4-inch slices. Onto ungreased cookie sheets, place slices 2 inches apart, reshaping if necessary; lightly sprinkle with salt.
- Bake 8 to 10 minutes or until pale brown on bottom. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely before storing in airtight container. If desired, garnish cookies with freshly grated lime peel just before serving.

MARGARITA COOKIES
This comes from the cookbook "1 Dough, 100 Cookies" by Linda Doeser and has become one of my favorites. It is a fairly basic recipe but the frosting really brings it to a whole new level. I used regular sugar instead of superfine sugar and Sauza tequila (not a white variety) that I happened to have in my pantry. I am not a tequila connoisseur but this seemed to work out just fine. Enjoy!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Line 2 cookie sheets with baking parchment.
- Put the butter, sugar, and lime rind into a bowl and mix well with a wooden spoon, then beat in the egg yolk and orange liqueur or orange extract.
- Sift together the flour and a pinch of salt into the mixture and stir until thoroughly combined.
- Scoop up tablespoons of the dough and put them on the prepared cookie sheets, then flatten gently. Bake for 10-15 minutes, until light golden brown.
- Let cool on the cookie sheets for 5-10 minutes, then using a metal spatula, carefully transfer to wire racks to cool completely.
- Sift the confectioners' sugar into a bowl and stir in sufficient tequila to give the mixture the consistency of thick cream.
- With the cookies still on the racks, drizzle the frosting over them with a teaspoon. Let set.

MARGARITA BARS
My friend Janie made these for a cookie exchange. She said the recipe is from Pillsbury. Will make you pucker up.

Steps:
- In a big mixing bowl, add all the crust ingredients; mix on low speed until crumbly.
- Flour your hands/fingers; press mixture firmly in the bottom of an ungreased 13x9 inch baking dish.
- Bake at 350° for 20 to 25 minutes or until a light golden brown.
- In another bowl, beat eggs.
- Add sugar, flour, and baking powder; stir to blend.
- Add in margarita mix and lime peel; stir to blend.
- Take crust out of the oven.
- Pour filling over the warm crust; place back in the oven.
- Bake 18-22 minutes or until the top is golden brown and the filling is set.
- Let cool until completely cooled.
- Right before serving, sift powdered sugar over the top; cut into bars.
MARGARITA BAR
Steps:
- For the original margarita:
- Ratio for any volume of margarita: 3:2:1 = 3 parts tequila: 2 parts Triple Sec, 1 part lime juice. Place whichever amount you choose, depending upon your guests, into a large pitcher.;
- For the simple syrup:
- Simmer water and sugar over high heat until the sugar has completely dissolved then chill.;
- For the lime salt:
- Combine the salt and lime zest with a mortar and pestle. Set in a plate to dip your glass in.;
- For the margarita bar:
- Have buckets if ice and shakers set up around the margarita pitchers.
- Fill glasses with ice, original margarita and flavor profiles, if desired.
- Dip the rims of the glasses into the simple syrup then into the lime-salt so the salt sticks to the rim of the glass.
- Pour the mixed drink into your salted glass and enjoy.

Bake 20-25 minutes or until light golden brown. Filling: Beat eggs slightly in large bowl. Mix in granulated sugar, flour, and baking powder until well blended. Stir in margarita mix and lime peel. Remove pan from oven. Pour Filling over warm crust. Bake 18-22 minutes longer or until top is golden brown and Filling is set. Cool completely, at least an hour. Just before serving, cut into bars, and sprinkle with confectioners' sugar. Editor's Extra: For easy lemon squares, make the same crust and substitute lemon juice for margarita mix in Filling; just leave out the lime peel. Or use lemon peel. Yum!
