TRIPLE BERRY MARGARITAS

Easy homemade margaritas with plenty of summer berries.

Number Of Ingredients 11

1 cup water
3/4 cup sugar
1/3 cup blackberries
1/3 cup sliced strawberries
1/3 cup blueberries
1/4 cup sugar or salt (for glass rims)
2 cups ice (you can eyeball this)
1/2 cup triple berry simple syrup
1/2 cup fresh lime juice
1 cup tequila
Optional Garnishes: Lime slices, fresh berries

Steps:

  • Combine all ingredients in a medium saucepan over medium heat. Bring mixture to a simmer and cook 4-5 minutes until berries have softened and sugar has dissolved.
  • Remove syrup from heat and let it cool completely.
  • Strain the simple syrup to remove the berry pieces and set strained simple syrup aside for the margaritas. (I like to save the cooked-down berries for smoothies later in the week!)
  • Lay two plates down on the counter. Add just enough water to the first plate to cover its surface. Add your sugar or salt (I like sugar on my cocktail glasses!) to the second plate and spread it out evenly. Grab four cocktail glasses and dip the rim of each glass lightly into the shallow water on the first plate, and then into the sugar or salt on the second plate. Shake off the excess, fill each glass with 1/4 cup or so of ice, and set aside.
  • Combine triple berry simple syrup, lime juice, and tequila in a cocktail shaker. (Depending on the size of your shaker, you may need to do this in two batches). Add a handful of ice and shake well until margaritas are chilled.
  • Divide margaritas evenly between your four cocktail glasses.
  • Garnish margaritas with extra lime slices and fresh berries (optional) and serve immediately.

This raspberry margarita recipe has the best zingy berry flavor! Mix up this easy drink with fresh berries to impress all your friends.

3 ounces* tequila blanco (or reposado)
3 ounces triple sec (or Cointreau)
2 ounces fresh lime juice
1 ounce simple syrup
1 cup fresh raspberries (or frozen**, if desired)
1 cup ice

Steps:

  • Cut a notch in a lime wedge, then run the lime around the rim of two glasses. Dip the edge of each rim into a plate of salt (or for a festive look, use our Margarita Salt).
  • Place all ingredients in a blender. Blend until fully combined. Taste and add additional sweetener if desired. Pour into the glasses and serve.
  • Place 1 1/2 cups tequila, 1 1/2 cups triple sec, 1 cup lime juice, and 1/2 cup simple syrup, and 4 cups raspberries in a blender and blend until cold.

1/2 cup strawberry puree (frozen can or fresh strawberries, pureed)
1 cup tequila
2 limes, juiced
Splash Triple Sec
Splash simple syrup (equal amounts sugar and water heated until sugar dissolves, then cooled)

Steps:

  • Combine in a blender, ice, strawberry water, tequila, lime juice, Triple Sec and simple syrup. Puree until smooth. Pour into rocks glasses and serve.

1/4 cup mixed berries (I used blueberries, cherries (frozen) and blackberries.)
1 ounce simple syrup
2 ounces fresh squeezed lime juice
2 ounces tequila
ice for serving
berries for garnish (if desired)

Steps:

  • Use a wedge of lime to wet the rim of a glass and dip in either sugar or salt.
  • Add berries and simple syrup to the glass and muddle.
  • Stir in lime juice and tequila.
  • Top with ice and garnish with fresh berries if desired.
  • Note: If the seeds from the blackberries bother you simply strain through a sieve before serving.
  • Note: To make a large batch of simple syrup just combine equal parts sugar and water. I do 1/2 cup water 1/2 cup sugar. Keeps in the fridge for up to a month.

CLASSIC HOMEMADE COLESLAW

Forget shop-bought versions and make a homemade slaw. It's an ideal side dish for barbecues or to serve with burgers, salads, sandwiches and more

1 small white cabbage or ½ large
4 carrots, peeled
1 large red onion
½ small bunch dill, chives, parsley or coriander, finely chopped (optional)
1 tbsp Dijon mustard
50g mayonnaise
50g yogurt, soured cream or more mayo
1-2 tbsp white wine vinegar
a few pinches of paprika

Steps:

  • Remove any bruised or damaged outer cabbage leaves. Halve through the stem, and remove the dense core with a sharp knife and discard. Put cut side down onto a chopping board, and slice as finely as you can into thin shreds. You can also do this on a mandoline (you might want to quarter before slicing) or in a food processor with the shredding attachment. Tip into a bowl.
  • Grate the carrots on a box grater to coarsely shred, or cut into thin strips using a julienne peeled or the grater attachment on the food processor. Tip into the bowl. Finely slice the onion, and thin as you can, and add to the bowl with the other veg. Add the herbs if using. A mixture is nice if you have some to use up.
  • In a jug, whisk the mustard, mayo, yogurt and vinegar. Season well, and taste for sharpness and creamy. Add more vinegar if you like.
  • Tip the dressing into the veg bowl, and mix everything together well with a large spoon. Stir so all the veg gets coated lightly in the dressing. Sprinkle with a few pinches of paprika, and serve straight away. Can be covered and chilled for up to 3 days. Mix well before serving.

1/2 cup mayonnaise
1 to 2 tablespoons honey
1 teaspoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon celery seed

1/4 cup chopped fresh or frozen cranberries

Steps:

  • In a small bowl, combine the first six ingredients. Place cabbage in a serving bowl. Add mayonnaise mixture and toss to coat evenly. Fold in cranberries. Serve immediately.

1 cup dried sweetened cranberries

Steps:

  • Whisk together the first 5 ingredients in medium bowl. Cover dressing to chill till ready to use.
