CARAMEL CHOCOLATE SHORTBREADS

Shortbread alone is a treat, but when topped with layers of caramel, chocolate and toasted coconut, it becomes akin to a candy bar. Using mini chocolate chips makes this recipe super easy -- they melt right into the cookie.

3/4 cup sweetened shredded coconut
2 sticks (1 cup) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon fine salt
3/4 cup confectioners' sugar
2 cups all-purpose flour, plus more for dusting (see Cook's Note)
One 11-ounce bag caramels, pieces unwrapped
Nonstick cooking spray, for spraying the spoon
1 cup mini semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil, leaving about a 2-inch overhang on 2 sides. Spread the coconut in a single layer on a baking sheet and set aside.
  • Beat the butter, vanilla and salt with an electric mixer on medium speed in a large bowl until smooth and creamy. Add the confectioners' sugar and mix on low until just incorporated. Beat in the flour in 2 batches to make a smooth dough.
  • Lightly flour your hands and press the dough into the prepared baking pan. Bake the shortbread until the edges are firm and the top is dry, 28 to 30 minutes. Top the shortbread with the caramels in an even layer. Return to the oven along with the baking sheet of coconut and cook, tossing the coconut once, until the caramels are melted and the coconut is golden, about 10 minutes.
  • Spray the back of a spoon with cooking spray and use it to spread the caramel all over the shortbread. Sprinkle with the chocolate and let sit until the chips are melted, about 5 minutes. Sprinkle with the toasted coconut and let cool completely, about 1 hour.
  • Using the foil overhang as handles, lift the shortbread out of the pan and cut into 12 pieces.

250g plain flour
200g unsalted butter , chilled and chopped
100g golden caster sugar
¼ tsp vanilla extract
90g butter
379g can condensed milk
2 tbsp golden syrup
2 tbsp dark brown sugar
300g dark chocolate
50g butter
25g white chocolate , melted (optional)

Steps:

  • Heat oven to 160C/140C fan/gas 4. Line a 20cm x 30 cm tin with baking parchment. Rub the flour and butter together with your fingertips until the mixture resembles fine breadcrumbs then stir in the sugar, vanilla and pinch of salt.
  • Tip the mixture into the prepared tin in an even layer, then press the mixture down firmly with the back of a spoon. Bake for 45-50 mins or until light golden brown. Leave to cool completely in the tin.
  • For the caramel, put the butter, condensed milk, sugar and syrup in a pan with a pinch of salt. Heat gently until simmering, then whisk for 6 mins until thick and fudgy. Be careful as the caramel will be very hot. Leave to cool for 5 mins, then pour the caramel over the cooled shortbread. Leave to cool completely.
  • Stir the dark chocolate and the butter in a bowl set over a pan of simmering water until melted (alternatively heat in the microwave, stirring after every 30 sec blast to make sure it doesn't burn). Once melted and glossy pour the chocolate mixture over the caramel. To decorate, go to the next step, or leave to cool completely then cut into squares or triangles.
  • For extra flourish, put melted white chocolate into a piping bag and pipe straight lines over the full length of the shortbread after applying the dark chocolate layer. Turn the tray 90° and drag a skewer through it in long strokes up and down the rows to create a feathered design. Gently shake the tin to settle the chocolate then leave to set completely. Cut into squares or triangles.

3/4 cup butter

1 (14 ounce) can sweetened condensed milk
8 ounces high quality milk chocolate
1/3 cup toasted and sliced almonds

Steps:

  • Beat 1/2 cup butter and 1/4 cup sugar until pale.
  • Add flour and ground almonds to form a soft dough.
  • Press dough into a 8 inch square pan that has been greased,lined with parchment paper.
  • BakeBake shortbread at 350 for 20 to 25 minutes,or untilpale golden brown.
  • Leave in pan until cool.
  • To Make Topping: Cook 3/4 cup butter, 3/8 cup sugar, syrup, and sweetened condensed milk in a saucepan on low heat.
  • Bring to a boil,stirring constantly.
  • Boil for 5 to 7 minutes until it has thickened and has a pale caramel color.
  • Spread caramel on cooled shortbread, and let set about 40 minutes.
  • Melt chocolate over low heat.
  • Spread melted chocolate on top of caramel and sprinkle on toasted almonds.

3 sticks unsalted butter, plus more for the pan
1 cup granulated sugar
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
3 tablespoons light corn syrup
2 tablespoons heavy cream
1 teaspoon instant espresso powder
1/4 teaspoon kosher salt
1/2 teaspoon cider vinegar
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish, then line with parchment paper, leaving an overhang on 2 sides; butter the parchment.
  • Beat 2 1/2 sticks butter, the granulated sugar and 1 teaspoon vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Reduce the mixer speed to low; add the flour and beat until just incorporated.
  • Transfer the dough to the prepared baking dish and set a piece of plastic wrap directly on the surface. Press into an even layer, then peel off the plastic. Bake until golden brown, 30 to 35 minutes. Transfer to a rack to cool slightly, then remove from the pan using the parchment. Cut into triangles.
  • Make the caramel: Combine the remaining 1/2 stick butter, the brown sugar, corn syrup, heavy cream, espresso powder and kosher salt in a small saucepan over medium heat. Cook, stirring occasionally, until a candy thermometer registers 235 degrees F, about 6 minutes. Remove from the heat and stir in the remaining 1 teaspoon vanilla and the vinegar. Let cool 5 minutes, then drizzle over the shortbread. Sprinkle with sea salt.

1/4 cup sugar
1 1/4 cups flour
1/2 cup butter
1/2 cup brown sugar
2 tablespoons corn syrup

1 1/4 cups semi-sweet chocolate chips

Steps:

  • Mix 2/3 cup butter, 1/4 cup sugar& 1 1/4 cups flour until the mixture is crumbly.
  • Pat into a 9" pan.
  • Bake at 350F for 20 minutes.
  • Meanwhile bring the caramel ingredients to a boil and boil for 5 minutes then pour over the shortbread base.
  • Cool.
  • Melt chocolate in a double boiler and pour over the cooled caramel shortbread Cool- cut into small squares.

An irresistible gluten-free version of the classic millionaire's shortbread, packed with chocolate and caramel, and a free-from biscuit base

150g unsalted butter, plus extra for the tin
300g gluten-free plain flour
100g caster sugar
250g cold salted butter, cubed
6 tbsp light muscovado sugar
4 tbsp golden syrup
390g can condensed milk
1 heaped tsp sea salt
200g milk chocolate
100g white chocolate

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Line the base of a 20cm square cake tin and lightly butter the sides. Blitz the flour, butter and sugar with a pinch of salt and 2 tbsp ice cold water in a food processor until you have a clumpy mixture. Press this into the prepared tin and bake for 25 mins until light golden. Set aside to cool completely.
  • For the caramel, place all of the ingredients in a saucepan. Melt everything together over a low-medium heat until the sugar has dissolved, then turn up the heat and bring to a gentle simmer. Stir continuously for 8-10 mins until the mixture has thickened and darkened a little. Pour the mixture over the biscuit base and chill for 2 hrs.
  • Once the caramel is set, melt the two chocolates in separate bowls, either in short bursts in the microwave or or set over a pan of gently simmering water. Spoon both chocolates over the caramel, then gently swirl it using a cocktail stick to create a marbled effect. Chill for a further 40 mins. Bring to room temperature before slicing into 12 squares.

Steps:

  • Line an 18x27cm (7x11inch) rectangular cake tin with non-stick baking paper. Heat the oven to 180c.
  • Place the butter and sugar for the shortbread into a bowl and beat with a wooden spoon until fluffy and light. Next, beat in the flour until it forms a soft dough. Press the mixture evenly into your cake tin and bake for 220-25 minutes until pale golden.
  • Place the caramel ingredients into a large saucepan over a medium heat. Stir continuously until the sugar has dissolved, then turn the heat up and boil for 5-7 minutes, stirring all the time to ensure the mixture doesn't burn.
  • The caramel is ready when it turns a deep golden colour and has thickened to a soft fudge consistency. Stir in a teaspoon of salt (trust me!) and then pour the caramel over the shortbread and leave to set for about an hour.
  • Put the chocolate in a bowl on top of a small saucepan of simmering water and stir until melted. Pour the melted chocolate over the caramel, and leave in a cool place to set. Once set, cut into squares and serve, or keep in a tin for up to 1 week.

1/2 cup butter

Steps:

  • PREHEAT oven to 350 degrees.

  • Boil the rest of the butter, the rest of the sugar and the cream (stir well all the time!) on a medium high fire until it begins to turn brown.

I don't really know where I got this recipe from, But I've had it hanging around for a while. These are so yummy, my boyfriend asks for them at least once a week. Perfect for a holiday dinner, cookie exchange, or any other party where you want to dazzle your friends/make them love you forever. I sprinkle the top of this with sea salt before I pop it in the oven, I think it adds that little extra something. I've also drizzled it with melted chocolate after they've cooled, but their so rich you really don't need it!

1 cup butter sweet cream
1 cup sugar
2 egg yolks
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
2 cups all purpose flour
1/2 lb slivered almonds
3/4 cup sugar
1/2 cup butter
1/4 cup honey
3 tablespoons milk or 3 tablespoons heavy cream

Steps:

  • For the Shortbread:.
  • Preheat your oven to 350.
  • prepare a 9" x 13" pan with either flour and butter, or a piece of parchment paper pressed into the pan and up the sides slightly. (I use parchment).
  • Cream your butter and sugar together.
  • scrape the bowl and add yolks.
  • scrape the bowl again, making sure the yolks are mixed in, but don't over mix.
  • Add your spices and one cup of flour, mix briefly until just combined, then add your second cup of flour.
  • Your dough should be moist and clumpy, dump this into your pan and press to fit in an even layer, with your fingertips. this doesn't have to be perfect.
  • Bake for 15-20 min, until just set and lightly browned at edges.
  • Prep your ingredience for the caramel as you put the shortbread in the oven.
  • Put everything except the almonds into a heavy bottomed sauce pan.
  • when you pull the short bread out of the oven, turn the burner on medium, and heat until the mixture is bubbly and starting to brown, stirring fairly constantly. Using a heat resistant spatula is great, so you can scrape along the bottom to prevent burning. this will take 5 min or so from everything melting.
  • Turn off the heat and stir in your almonds until evenly coated.
  • spread the whole mixture on top of the shortbread and pop it back into the oven for another 15 to 20 minute.
  • the mix will bubble in the oven, its done when the caramel starts to turn golden and the almonds at the edges start to toast.
  • Let this cool for 20-30 min, then cut with a bench knife or a chefs knife. I like to cut them into triangles, but like brownies, you can go for whatever floats your boat on this end!
