- Roll the dough into 12 balls. Roll the balls in shredded coconut, if desired.
- Store in the fridge or freezer in a sealed container. I like them best stored in the freezer. They don't freeze solid so you can pop one out and enjoy right away.

MAPLE-NUT POPCORN
What's a party without popcorn? This recipe has a great maple flavor that candy-coats the popcorn. For added crunch there is a variety of nuts and you won't miss the hint of spice. I can eat my weight in this stuff.

- Combine the popcorn, mixed nuts, salt, paprika and cayenne pepper in large serving bowl.
- Line a large baking sheet with aluminum foil and coat with nonstick spray.
- Melt the butter in a heavy-bottomed saucepan over medium-high heat. Pour in the maple syrup and continue cooking until the mixture reads 275 degrees F on a candy thermometer, about 15 minutes.
- Carefully pour the mixture over the popcorn and nuts. Toss, using a spoon that has been coated in nonstick spray, to coat the popcorn evenly with syrup. Allow the popcorn to cool before serving
MAPLED NUT BUTTER TART
Steps:
- Preheat oven to 350 degrees F.
- Combine butter, egg, milk, maple syrup and vanilla. Add chopped nuts and gently pour into tart shell. Garnish with extra nuts if you like.
- Bake for 25 to 30 minutes until top of tart is puffed and bubbly and crust is starting to brown. Cool for 20 minutes before removing from tart pan.
- Can be served warm or at room temperature. Add a dollop of whipped cream for an extra special treat

This is wonderful on scones! I recently had friends stay in a Bed and Breakfast near my home. I met them every morning there and was served breakfast with them. This was served with the B&B's Dried Cherry Scones. We all loved it! I will post the recipe for Dried Cherry Scones on this site.

MAPLE NUT CAKE
After searching quite a lot, I finally found this recipe that pretty well duplicates the maple nut cake they served at our local buffet before it closed down. I found it at Allrecipes.com. My husband dearly loves this cake, with it's maple-y goodness and walnuts. It goes very well with the Maple Butter Frosting (found at same website), which I'll post separately.

Steps:
- Preheat oven to 350 degrees F and grease an 8x8 inch square pan.
- Cream the butter, add the sugar and continue creaming until light and fluffy.
- Beat in the eggs one at a time.
- Stir in the maple flavoring.
- Combine the flour, baking powder, and salt.
- Add the flour mixture in 3 parts alternately with the milk to the butter mixture, beginning and ending with flour.
- Stir in the walnuts and pour in the prepared pan.
- Bake at 350 degrees F for 40-45 minutes or until an toothpick inserted in the center comes out clean.
- Let cake cool completely, then frost with Maple Butter Frosting.
MAPLE WALNUT BUTTER
My father has been putting this on his pancakes, waffles, and French toast since my parents got married almost 32 years ago! (Mom always had ways of spoiling us!)...Thanks to Dad, now all the men in our family (brothers, in laws, and husbands) do the same! - Sift cake flour, sugar, baking powder, and salt into a bowl.
- Stir in the brown sugar.
- Make a well; add oil, egg yolks, water, maple flavoring in order given.
- Beat until smooth.
- In another bowl beat egg whites and cream of tarter until very stiff (I would do this first).
- Pour yolk mixture over whites, folding very carefully to prevent breaking whites.
- Add walnuts.
- Pour into an ungreased tube pan.
- Bake 55 minutes in a 325 degree Fahrenheit oven; then for last 10 minutes at 350 degrees Fahrenheit; invert when done.
- FROSTING:.
- Melt butter until golden brown; don't scorch.
- Remove from heat.
- Stir in powdered sugar.
- Blend in sweet cream and maple flavoring.
- Beat until smooth.
- Spread on chiffon or angel cake.

- Line a baking sheet with aluminum foil; spray lightly with cooking spray. Reserve 2 tablespoons of almonds and sprinkle the rest evenly over the foil.
- Combine brown sugar and maple syrup in a 2-quart saucepan over medium heat. Cook and stir until sugar is dissolved and caramel mixture comes to a full boil, about 10 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Turn oven off once preheated; place prepared baking sheet in the oven to warm.
- Attach a candy thermometer to the saucepan with the caramel mixture. Add butter. Cook, stirring occasionally, until the mixture reaches 300 degrees F (149 degrees C) or until a small amount dropped into ice water forms a hard, brittle strand, about 20 minutes.
- Remove baking sheet from the oven and immediately pour the caramel mixture over the almonds. Spread evenly to about 1/4-inch thickness. Sprinkle remaining almonds and chocolate chips over open spaces. Spread chocolate evenly once melted. Let brittle cool completely, at least 30 minutes. Break into pieces.

HOMEMADE WALNUT BUTTER RECIPE

- If you'd like to toast the walnuts, preheat your oven to 350 degrees F. Spread the walnuts on a rimmed baking sheet. Toast until fragrant, 8-10 minutes. Allow to slightly cool.
- Transfer the walnuts to your food processor. Process on high, stopping 3-4 times to scrape the sides with a spatula and allow the food processor to rest, until smooth and creamy, 10-15 minutes.
- If using the optional additions, now is the time to add the sea salt, honey and coconut oil to the food processor. Process until smooth and fully incorporated, 1-2 more minutes.
- Keep the walnut butter in an airtight container. I keep it on the kitchen counter, but I use a little every day so it only lasts about a week. If you plan to store the walnut butter for longer, I suggest storing it in the fridge. If stored at room temperature, some oil separation will occur - stir before using.

MAPLE-NUT CHEESECAKE

- Preheat oven to 325°F.
- Grease a 9" springform pan.
- MAKE THE CRUST:
- Mix graham cracker crumbs, walnuts, sugar, and cinnamon in a medium bowl. Add the melted butter and stir to combine until the mixture looks like sand. Use the back of a measuring cup to press the crust firmly into the bottom and up the side of the pan. Bake the crust for 10 min. and allow to cool.
- FOR THE FILLING:
- In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese and sugar until smooth and creamy, about 2 to 3 min.
- Add the maple syrup, vanilla, and eggs, and beat on low until just combined. Pour over the crust and smooth the top evenly.
- Bake for 45 to 55 min. or until the center is set. (The center will still jiggle slightly when shaken.) Turn the oven off and open the door slightly. Leave the cheesecake inside to cool for 1 hour. Then chill in the refrigerator for at least 4 hours or overnight.
- FOR THE TOPPING:
- Before serving, drizzle melted chocolate over the top and side of cheesecake and top with chopped walnuts.
