This was always my father's favorite flavour of ice cream, and there is nothing tastier or better than fresh homemade icecream. This goes great with large wedges of apple walnut pie,a nd if you are feeling really decadent, butterscotch sauce poured over all.

Number Of Ingredients 6

1 cup grade b maple syrup
2 cups heavy cream
1 cup whole milk
1/4 teaspoon salt
2 large eggs
1/3 cup walnuts, toasted and chopped

Steps:

  • Boil syrup in a 2 quart heavy saucepan over moderately high heat until reduced to 3/4 cup, 5 to 10 minutes.
  • Stir in cream, milk and salt and bring to a boil over moderate heat.
  • Whisk eggs in a large bow, then add hot cream in a slow stream, whisking.
  • Transfer to a saucepan and cook over moderately low heat, stirring constantly, until slightly thickened and an instant read thermometer registers 170*F, 1 to 2 minutes (do not let boil!).
  • Pour custard through a fine sieve into a clean metal bowl, then cool, stirring occasionally.
  • Chill, covered, until cold, at least 3 hours.
  • Freeze custard in an ice-cream maker until soft frozen, then with motor running, add nuts.
  • Continue churning ice cream until frozen, then transfer to an airtight container and put in freezer to harden.

1 cup maple syrup
1/4 cup lightly packed brown sugar
1 tablespoon butter
1/4 cup water
1/4 cup half-and-half cream
1/2 teaspoon vanilla extract
1/4-1/2 walnuts, chopped

Steps:

  • In a heavy saucepot combine the maple syrup, brown sugar, butter and water.
  • Stir over medium heat until mixture comes to a boil.
  • Over low heat simmer until slightly thickened which takes about ten minutes.
  • Stir in the cream, vanilla, and nuts.
  • Cool to room temperature before using so it will thicken to right consistency.
  • Makes 1 cup of sauce.

1 cinnamon stick
A few grates of fresh nutmeg
1 cup heavy cream
2 pints mixed berries, black, raspberry and blue or, halved strawberries
1 pint black walnut or maple walnut ice cream

Steps:

  • Combine maple syrup, cinnamon stick, nutmeg and cream in a small pot, bring to a bubble, reduce heat to low and simmer for 20 minutes. Remove from heat and combine with berries.
  • Serve warm berries in small bowls topped with scoops of ice cream.

1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
5 tablespoons unsalted butter, softened
1/4 cup sugar, plus
1 teaspoon sugar
1/4 cup light brown sugar, firmly packed
1 large egg
6 tablespoons sour cream
6 tablespoons vermont maple syrup
2 tablespoons finely chopped walnuts
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to 400°.
  • Place paper liners in 12 muffin cups.
  • In a medium bowl, stir together flour, baking powder, baking soda and salt.
  • Using an electric mixer, cream butter, 1/4 cup sugar, and brown sugar on medium-high speed for 3 minutes, until light and fluffy.
  • Add egg and beat well.
  • In a small bowl, whisk together sour cream and maple syrup.
  • On low speed, add 1/2 dry ingredients to butter-sugar mixture.
  • Pour in 1/3 sour cream mixture.
  • Add remaining dry ingredients in 2 batches, alternating with sour cream mixture.
  • Beat until just blended.
  • In a small bowl, stir together walnuts, cinnamon and remaining 1 teaspoon sugar.
  • Pour batter into muffin cups.
  • Sprinkle top of each muffin with walnut mixture.
  • Bake until muffins are golden brown, about 20 minutes.
  • Place tins on wire rack to cool about 5 minutes.
  • Remove from tins and serve warm.

In going through my late mother's things, I came across this recipe she had clipped years ago. It just screams "Thanksgiving" to me, and I am dying to try it.

1 (9 inch) pie crusts, baked
1 1/4 cups vermont maple syrup
1/2 cup milk
3 eggs, separated
1 tablespoon unflavored gelatin (1 envelope)
1/4 cup warm water
1 teaspoon maple extract
1 cup whipped cream
3/4 cup finely chopped walnuts
1 cup non-dairy whipped topping

Steps:

  • To make filling, combine maple syrup and milk in saucepan. Beat egg yolks and add to saucepan. Cook and stir for about 2 minutes over medium heat. Dissolve gelatin in water. Remove saucepan from heat. Stir in dissolved gelatin and maple extract. Refrigerate 30-45 minutes, until mixture begins to thicken.
  • Beat egg whites until stiff. Fold in whipped cream. Stir into thickened maple mixture. Stir in nuts. Spoon into baked pie shell. (You may not use all of the filling.) Refrigerate until firm.
  • Spread whipped topping over filling and serve.

A delightful cool treat that is healthier than regular ice cream but still has a creamy rich flavor. I like to break my over ripe bananas into chucks before freezing them so that they are ready to go when making banana bread or ice cream. The prep time will depend on your food processer, mine only takes about 2 - 4 minutes, bananas should be frozen sold (like over night).

1 banana, frozen
1 tablespoon maple syrup
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1 tablespoon walnut pieces

Steps:

  • Place banana, maple syrup, cinnamon and vanilla extract in a food processor and allow the motor to run until it's smooth and creamy. Stop and break up large clumps with a spatula as needed.
  • Stir in walnut pieces.
  • **Tips: Can easily double.
  • **If you are not going to eat right away put in freezer safe container with a lid being sure to stir every hour or so to keep it from getting too icy.

2 tablespoons butter or 2 tablespoons margarine
2/3 cup Carnation Evaporated Milk
1 1/2 cups granulated sugar
1/4 teaspoon salt
2 cups miniature marshmallows (4 ounces)
2 cups NESTLÉ® TOLL HOUSE® Premier White Morsels (12 oz package)
1/2 cup walnuts, chopped
1 1/2 teaspoons maple extract
to taste walnuts, Chopped (optional)

Steps:

  • Combine butter, evaporated milk,sugar and salt in medium, heavy duty saucepan.
  • Bring to a full rolling boil, stirring constantly, over medium heat. Boil, stirring constantly for 4-1/2 to 5 minutes.
  • Remove from heat. Stir in marshmallows, morsels, nuts and maple flavoring.
  • Stir vigorously for 1 minute or until marshmallows are melted.
  • Pour into buttered 13x9 inch baking pan.
  • (I used a square casserole) Cool until firm.
  • Cut into squares.
  • Makes about 50 pieces Makes a nice, creamy fudge!
