MAPLE SUGAR COOKIES (NO CHILL, CUTOUT COOKIES)



Maple Sugar Cookies (No Chill, Cutout Cookies) image

Soft cut-out sugar cookies with crisp, defined edges that are loaded with maple syrup flavor. Use your favorite cookie cutter for fun shapes, and top with a sweet maple icing! Check out the video in the body of the post for step by step instructions.

3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter (softened to room temperature)
1 cup light brown sugar (packed)
1 egg (room temperature)
1 teaspoon maple extract
1/2 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1 cup powdered sugar (sifted)
1/4 cup pure maple syrup

Steps:

  • Preheat oven to 350°F. Prepare 2 baking sheets with nonstick silicon mats or parchment paper and set aside.
  • In a large bowl, sift together flour, baking powder and salt. Set aside.
  • In a separate large bowl using a stand of hand mixer, cream together butter and brown sugar until light and creamy.
  • Add egg, maple extract, vanilla extract and almond extract and beat to combine.
  • Add dry ingredients 1 cup at a time, beating on medium speed to combine between each addition.
  • On a lightly floured surface, roll out dough to about 1/4" thick (I like to use rolling pin rings to ensure the dough is even). Use your favorite cookie cutter to cut out each cookie and place on prepared baking sheets. Since these won't spread, you can add more to a sheet than usual, but I still like to leave 1" between each cookie for even baking.
  • Bake for about 8 minutes until cookies are set, but edges are not yet browned.
  • Bake one batch at a time, allowing the baking sheet to cool completely before adding the next batch of cookies to bake - this will ensure even and consistent baking times.
  • Let cool 5-10 minutes on baking sheet, then transfer to wire racks to cool completely.
  • While cookies are cooling, combine sifted powdered sugar and maple syrup in a small mixing bowl and use a whisk to combine - the icing will thicken and become a tan color.
  • Use a small icing spatula to coat each cookie. I like to spread all the way to the edges, but you can also pour the icing into a piping bag and drizzle on top instead if you'd prefer.
  • Let set completely, then serve and enjoy!

1 cup butter-flavored shortening
1-1/4 cups sugar
2 large eggs, room temperature
1/4 cup maple syrup
3 teaspoons vanilla extract
3 cups all-purpose flour

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in syrup and vanilla. Combine the remaining ingredients; gradually add to the creamed mixture and mix well. Cover and refrigerate for 2 hours or until easy to handle. , On a lightly floured surface, roll out to 1/8-in. thickness. Cut with a floured 2-1/2-in. cookie cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 350° for 9-12 minutes or until golden brown. Remove to wire racks to cool.

This recipe is from Wilton and was on the back of some cookie cutters I recently purchased. I liked that it didn't require chilling. It's a rich, buttery cookie, very tasty.

1 cup unsalted butter
1 1/2 cups granulated sugar
1 egg
2 teaspoons vanilla
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • In mixing bowl, cream butter with sugar until light and fluffy. Beat in egg and vanilla.
  • Mix flour, baking powder, and salt in a separate bowl; add to butter mixture 1 cup at a time, mixing after each addition.
  • Do not chill dough. Divide dough into two balls. On a floured surface roll each ball into a circle approximately 12" wide and 1/8" thick. Dip cookie cutter in flour and cut out cookies.
  • Bake on ungreased cookie sheet for 6 - 7 minutes or until cookies are lightly browned. It helps to line pans with parchment paper for easy cookie removal.

MAPLE BROWN SUGAR COOKIES

I got this recipe from my great grandmother years ago before she passed on. We make these a lot in the fall as the maple flavor reminds us of the leaves falling. We also add finely chopped pecans to give it a little crunch. Prep time does not include chill time.

3/4 cup sugar
3/4 cup firmly packed brown sugar
1 cup butter, softened
1 teaspoon vanilla
1 egg
2 1/2 cups all-purpose flour
1/4 teaspoon maple extract

Steps:

  • In large bowl combine sugars and butter; beat until light and fluffy.
  • Add vanilla and egg; blend well.
  • Lightly spoon flour into measuring cup; level off.
  • Stir in flour until well blended.
  • Divide dough into thirds; cover with plastic wraps.
  • Heat oven to 375 degrees.
  • In medium bowl, combine cookie dough and maple extract, blend well.
  • Shape mixture into 1"; place 2" apart on ungreased cookie sheets.
  • With glass dipped in sugar, flatten to about 1/4" thickness.
  • Bake for 6-9 minutes.
  • Cook cookies 1 minute before removing from cookie sheet.
  • VARIATION: To make as cut out cookies.
  • Chill dough in refrigerator for 15 minutes to harden and then roll out on lightly floured board.
  • Roll out to 1/4" thickness and cut cookies accordingly.
  • Bake for 6 to 9 minutes.

MAPLE LEAF SUGAR COOKIES

Perfect for Fall. Cookies to make between Halloween and Thanksgiving. I use my Maple Leaf cookie cutters, and even make a few with my Oak Leaf cutter. I believe the secret to this recipe is to use pure maple syrup. I count chilling time in with the prep time.

3 cups flour (All-purpose, sifted)
1/4 teaspoon salt
1 cup butter (2 sticks, softened)
1/2 cup sugar (granulated)
1/2 cup brown sugar (dark, well packed)
1 large egg yolk
1 cup maple syrup (pure grade A)
1/2 cup sugar (sanding, large crystals)

Steps:

  • Measure 3 cups of sifted flour and salt into sifter.
  • Set aside. (I put the sifter on the flour tin lid, so I won't loose the flour that comes through before I sift into the other ingredients.).
  • Beat softened butter and the two sugars until light and creamy. (medium high speed on electric mixer).
  • Reduce speed and add egg yolk until well blended.
  • Add 1/2 cup maple syrup and mix until blended.
  • Remove beaters and now use a wooden spoon.
  • Slowly sift flour into bowl mixing with wooden spoon, until just well blended.
  • Divide dough into thirds and make each 1/3 into a flat disc.
  • Place on sheets of floured wax paper, with well floured hands.
  • Refrigerate for at least 2 hours, or overnight to thoroughly chill dough.
  • Take discs from refrigerator and roll out to 1/8" to 1/4" thickness, and put in freezer to firm for about 15 minutes. (this makes it easier to handle the cut cookies).
  • Preheat oven to 325°.
  • Line cookie sheets with foil and spray lightly with vegetable cooking spray.
  • Cut cookies from chilled dough and bake for 10-15 minutes, depending on thickness of cookie.
  • Move cookies to wire rack and brush with maple syrup (this is the other 1/2 cup of syrup) and sprinkle with sanding sugar. (I use red, yellow, and green sanding sugars, although the white is lovely too.).
  • Place in tin or serving plate when cool.

1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 400.
  • Cream together the butter and sugar.
  • Add the egg and vanilla, mix until well blended.
  • In a separate bowl sift together the flour and and baking powder.
  • Then graduadually add it to the butter mixture and blend well.
  • Form the dough in to a smooth ball.
  • Roll out the dough on a lightly floured surface to 1/8 to 1/4" thick.
  • Cut out with cookie cutters and place on ungreased cookie sheets.
  • Fill each sheet with cookies of equal size to ensure even baking.
  • Bake 6 minutes (a bit longer for thicker cookies).
  • They shouldn't brown at all.
  • Remove from cookie sheets and cool on wire wracks
  • Decorate as desired when cool.

2 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda

1/8 teaspoon ground nutmeg
6 tablespoons granulated sugar
1/2 cup maple syrup
1 teaspoon maple flavoring
2 large egg whites, divided
1/3 cup chopped walnuts
2 tablespoons turbinado sugar or 2 tablespoons granulated sugar

Steps:

  • Melt butter in a small saucepan over low heat.
  • Cook until milk solids stop crackling and turn amber (about 5 minutes), stirring occasionally.
  • Transfer butter mixture to a small bowl, scraping pan to include milk solids.
  • Cover and cool butter mixture in the refrigerator for 20 minutes or until soft and congealed but not firm.
  • Combine flour and next 5 ingredients (through nutmeg) in a bowl, stirring with a whisk.
  • Combine chilled butter mixture and granulated sugar in a large bowl; beat at medium speed until well blended (about 3 minutes).
  • Add syrup, flavoring, and 1 egg white to butter mixture; beat at low speed 2 minutes or until well blended.
  • Add flour mixture to butter mixture; beat on low speed until blended.
  • Divide dough in half. Shape each portion into a ball; wrap in plastic wrap. Chill 1 hour or until firm.
  • Preheat oven to 350°.
  • Place walnuts and turbinado sugar in a food processor; pulse 15 times or until mixture is coarsely ground.
  • Place remaining 1 egg white in another small bowl; stir with a whisk.
  • Working with one portion of the dough at a time (keep remaining dough chilled until use), roll dough to a 1/8-inch thickness on a floured surface, and cut with a 2 1/2-inch cutter.
  • Place cookies, on a baking sheet coated with cooking spray.
  • Gently brush tops of cookies with egg white; sprinkle evenly with half of walnut mixture.
  • Bake for 12 minutes or until pale brown.
  • Remove cookies from pan; cool completely on wire racks.
  • Repeat procedure with remaining dough, egg white, and walnut mixture.

  • Cream the butters and sugar together in the bowl of an electric mixer on low to medium speed. (Use the paddle attachment). Mix until thoroughly incorporated - for about one minute. Scrape down the sides of the bowl with a plastic spatula and mix again for a few seconds more. Over mixing the butter and sugar in this step will cause too much air to be incorporated into the dough. If you'd like a light and fluffy cookie, that's ideal, however the dough will spread more during baking; not ideal if you'd like the cookie to hold its shape.
  • Sift your dry ingredients together. (Flour and salt). Add all of the flour mixture to the bowl. Place a large tea towel or two small tea towels between the edge of the bowl and the electric mixer so that the flour won't escape. Mix on low speed for 30 seconds. Remove the tea towels and observe the dough mixing; when it clumps around the paddle attachment and pulls away from the sides of the bowl it's ready. If you notice your dough is still sticky, add 1/4 cup of flour at a time until, when pinched between two fingers, the dough is soft but not sticky to the touch. (The varying amount of flour depends on the humidity in your environment etc.).
