1 tub (8 oz.) PHILADELPHIA Pineapple Cream Cheese Spread
1/4 cup milk
2 tsp. sugar
1 cup chopped fresh pineapple

Steps:

  • Blend cream cheese spread, milk and sugar in blender 1 min. (Do not overblend.)
  • Add to pineapple in serving bowl; mix well.

1/2 cup unsalted butter, (softened)
1/2 cup granulated sugar
1/4 teaspoon kosher salt
4 eggs, (large)
20 ounces crushed pineapple ( in its own juice)
5 slices soft bread*

Steps:

  • Preheat the oven to 350 degrees F and lightly mist a 1.5-quart baking dish with non-stick spray.
  • Place the butter, sugar, and salt in a large bowl and cream together with an electric mixer until very pale and fluffy (about 5 minutes on high speed).
  • Whip in the eggs, one at a time, allowing each one to fully incorporate before adding the next.
  • Scrape the bottom and sides of the bowl with a silicone spatula, and fold in the pineapple and it's juice.
  • Tear the bread into 1-inch pieces and fold it into the pineapple mixture.
  • Transfer the mixture to the prepared baking dish and bake for 1 hour, or until bubbly and beginning to turn golden.
  • Serve warm.

A quick an easy salad dressing. This is wonderful over grilled pork or a green salad with fresh citrus; as well as grilled chicken and seafood. The pineapple juice is just from a can of sliced pineapple (unsweetened), and I will use the pineapple as a garnish, often grilling it. Fresh ginger and the honey dijon mustard really makes a difference in this dressing.

1/2 cup mayonnaise
1/2 cup pineapple juice, unsweetened
2 tablespoons honey dijon mustard (if you don't have honey dijon mustard, use 2 tablespoons dijon and 1/2 tablespoon honey)
2 teaspoons fresh ginger, grated
1/4 cup orange juice
1/4 cup pineapple juice

Steps:

  • Option -- You can use a mix of orange juice and pineapple rather than all pineapple if you think pineapple is too sweet. I happen to love it with the mustard and ginger. But you can mix the two if you prefer.
  • Dressing -- Just add all the ingredients and whisk well to combine. Chill at least 30 minutes.
  • Serve -- ENJOY! Serve over your favorite greens, pork, chicken, or seafood.

10 slices white sandwich bread, cut into 1 1/2-inch cubes (about 6 cups)
1 stick (8 tablespoons) unsalted butter, softened at room temperature
3/4 cup granulated sugar
1/4 cup packed dark brown sugar
5 large eggs
1 teaspoon vanilla extract
One 20-ounce can crushed pineapple, juice reserved
Kosher salt

Steps:

  • Preheat the oven to 350 degrees F. Spray an 11-by-7-inch baking dish with cooking spray.
  • Arrange the bread cubes in an even layer on a sheet pan. Bake until the bread is just beginning to dry but not browned, about 5 minutes. Set aside.
  • Beat the butter and sugars in a large bowl with an electric mixer on medium speed until fluffy, about 2 minutes. Add the eggs and mix on low speed until well incorporated.   • Whip egg white to very soft peak.
  • Combine all ingredients except the egg white and cream in the top of a double boiler and cook until thickened.
  • Fold in egg white and cool.
  • Just before serving, fold in whipped cream.

I got this recipe from my grandmother. She goofed up a recipe for baked pineapple and actually came up with a better dish, or we think so. Easy to make. You can assemble the day before and bake when ready.

1 (20 ounce) can crushed pineapple, drained
1 egg
1 cup sugar
1/2 cup butter, melted
6 -10 slices white bread

Steps:

  • In a bowl, combine drained pineapple, egg, sugar, butter.
  • Begin adding bread pieces and stir. Bread should absorb liquid. Continue adding bread until bread will no longer absorb liquid. This can be anywhere from 6-10 slices.
  • Put in a 9x9" baking dish.
  • Bake 350 for 30-45 minutes. Top should begin to brown when it is done.
  • I almost always double the recipe, use a 9 x 13 pan, and bake for 1 hour.

When I lost this recipe, I searched everywhere for one just like it. None of them had the dressing, which, IMO, makes this fruit salad. The dressing is very similar to what's used in Taffy Apple Salads, so I used that for awhile. I finally found my mom's recipe in a basket full of old recipes and want to post it here. I could eat all of this in one sitting. I don't care for the coconut, so I don't add it. I also guessed on the number of servings. Prep time includes time spent whisking dressing.

1 cup pineapple tidbits, drained (save juice for dressing from approx 20 ounce can)
