MAPLE SPICED CRANBERRY SAUCE

Homemade cranberry sauce cranked up a notch, with pure maple syrup and brown sugar, lemon zest, and a litany of warming, elevating spices.

Number Of Ingredients 10

12 ounces about 3 cups fresh cranberries, picked over, shriveled cranberries discarded
1/2 cup water
1/3 cup pure maple syrup + more to taste
2 tablespoons dark brown sugar
Zest from 1 medium lemon (save a little zest for the garnish if desired)
1 3-inch cinnamon stick
4 green cardamom pods
1/4 teaspoon freshly ground nutmeg
1/8 teaspoon ground ginger
Pinch ground cloves

Steps:

  • Set a medium saucepan over medium heat. Add water, 1/3 cup pure maple syrup, and remaining ingredients. Stir to combine. Bring to a low bowl and cook, stirring occasionally, until most of the berries have burst and a sauce has formed, about 12 minutes. Taste and add additional pure maple syrup if desired (some cranberries are tarter than others, so you may need more than the recipe calls for). Remove from heat.
  • Remove cinnamon sticks and cardamom pods. The pods should be easy to spot because they swell and lighten up when cooking.
  • Store in an airtight container in the refrigerator until ready to serve, for up to 10 days. Or place in the freezer for up to 3 months.

This delicious Maple Cranberry Sauce recipe is quick and easy to make in about 10 minutes. See notes above for possible variations and ingredients that you can also add in.

1 (12-ounce) bag fresh or frozen cranberries, rinsed and picked over
1/3 cup maple syrup, or more to taste
1/3 cup water
juice and zest of one fresh orange (about 1/4 cup juice)

Steps:

  • Combine all ingredients in a medium saucepan and stir to combine.
  • Heat over medium-high heat until the mixture reaches a simmer. Reduce heat and simmer for 8-10 minutes, or until the sauce has thickened and reached your desired consistency. (Keep in mind that it will also thicken a bit more as it cools.)
  • Taste and add extra maple syrup, if needed.
  • You can either serve this cranberry sauce warm or let it cool in the refrigerator until chilled and then serve it cold.

1 tablespoon brown sugar
1 dash lemon juice
1 tablespoon brandy

Steps:

  • Combine water and maple syrup in a saucepan; bring to a boil. Add cranberries to syrup mixture and cook at a boil until berries pop, 10 to 15 minutes. Stir brown sugar and lemon juice into cranberries until brown sugar is completely dissolved. Mix in brandy.

This recipe comes from The New Basics Cookbook by Julee Rosso & Sheila Lukins. I never liked cranberry sauce until I tried this one! I've lived outside Canada since 1997 so it is sometimes a challenge to find the cranberries (so then we do without cranberry sauce for Thanksgiving) and other times it is difficult to find the raspberry-cranberry juice but another juice is easily substituted.

12 ounces fresh cranberries, well rinsed
1 cup maple syrup
1 cup cranberry-raspberry juice
1 orange, zest of (from one orange)
1 cup walnut halves

Steps:

  • Note - I usually use frozen cranberries and they work just fine in this recipe.
  • Combine all ingredients except the walnuts in a heavy saucepan and bring to a boil. Cook over medium heat for about 10 minutes until the cranberries pop open.
  • Skim off the foam and stir in the walnuts. Allow to cool. Keep covered in the refrigerator for up to 4 days.

1/2 cup honey
2 -3 tablespoons firmly packed brown sugar (or to taste)
2 cinnamon sticks (3-inch)
6 whole cloves
1/4 teaspoon freshly grated nutmeg (or to taste)
3/4 cup water (I use orange juice instead of water)

Steps:

  • Combine all ingredients in a saucepan and simmer, covered, stirring occasionally for 5 to 10 minutes, or until the cranberries have burst and the mixture has thickened. (I put the cloves in a tea diffuser for easier removal and usually cook the sauce a little longer than the time given.).
  • Transfer the sauce to a bowl and let cool.
  • The sauce may be made 2 days in advance and kept covered and chilled.
  • Serve at room temperature.

1 medium orange
12 ounces fresh cranberries or 12 ounces frozen cranberries
1/2 cup water
1/2 cup unsweetened applesauce
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 cup pure maple syrup

Steps:

  • Remove 2 teaspoons orange zest and squeeze 1/4 cup juice from orange.
  • In a medium saucepan combine orange juice, cranberries, water, applesauce, cinnamon, ginger, and nutmeg. Bring just to boiling and reduce heat.
  • Simmer 15 minutes or until most of the cranberries pop and mixture is slightly thick, stirring occasionally. Remove from heat. Stir in maple syrup and orange zest. Cover and chill at least 30 minutes.
  • Pour half of the sauce into a blender or food processor and cover and blend or process until smooth. Stir pureed sauce into the pureed sauce.
