MAPLE ROASTED YAMS WITH PECANS
A very simple recipe for roasted yams with maple and pecans that is easy to make and takes 5 minutes of hands on time before going into the oven to bake.

Steps:
- Pre-heat oven to 425 F
- Slice yams into ¼ inch thin rounds.
- Toss with olive oil so all sides are coated.
- Lay them out on a parchment or foil lined sheet pan, mostly in one layer. A little overlap is fine, but do not crowd too much.
- Sprinkle with generous pinch salt and cracked pepper.
- Roast 20 minutes in the oven. Scatter with pecans and drizzle with a little maple. Gently mix and then return to the oven for 10 more minutes, or until edges begin to caramelize and yams are tender. Place on a platter or baking dish, cover loosely with foil and keep warm until serving.
ROASTED SWEET POTATOES WITH PECANS AND SPICED MAPLE SAUCE

Steps:
- Heat oven to 450 degrees F and arrange rack in the middle.
- While oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside.
- Place sweet potatoes on a baking sheet, drizzle with oil. Season well with salt and freshly ground black pepper, and toss to coat. Roast until golden brown and tender when pierced with a knife, about 40 to 45 minutes.
- Meanwhile, melt butter in a small saucepan over medium heat. When it foams, stir in maple syrup and cayenne and let cook briefly, about 1 minute. Serve sweet potatoes with a drizzle of maple butter and a scattering of pecans.

- Preheat oven to 400°F Butter 13x9x2-inch baking dish. Bring large pot of water to boil; add yams. Cook about 4 minutes or until water returns to simmer; drain. Rinse under cold water.
- Arrange yams in prepared dish. Season with salt. Pour syrup over yams. Dot with 3 tablespoons butter. Cover and bake about 25 minutes or until yams are almost tender.
- Mix flour and brown sugar in medium bowl. Add remaining ½ cup butter. Cut in until mixture resembles coarse meal. Add pecans; mix.

- Place yams into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and mash; measure out 3 cups of mashed yams.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart ovenproof casserole dish.
- Combine mashed yams, brown sugar, eggs, milk, and melted butter in a bowl. Transfer to the prepared casserole dish.
- Combine pecans, brown sugar, flour, and melted butter in a bowl and mix well. Sprinkle topping over yams.
- Cover and bake in the preheated oven until heated through, about 1 hour.

- Set oven to 400 degrees F.
- Butter a 13 x 9-inch baking dish.
- In a large pot bring water with about 1 tablespoon salt to a full boil.
- Add in sweet potatoes and bring back to a boil; simmer/blanch for about 5 minutes (no more than 5 minutes at a boil); drain and rinse under COLD water; pat dry slightly with paper towels.
- Arrange the potatoes in the buttered dish, overlapping slighty.
- Sprinkle with about 1/2 - 1 teaspoon salt.
- Pour the maple syrup over potatoes in the dish.
- Dot with about 6 tablespoons butter.
- Cover with foil, and bake until the potatoes are ALMOST tender (about 25-30 minutes).
- In a small bowl or cup mix the flour and brown sugar together.
- Add in 7 tablespoons butter; rub together with fingers until mixture resembles coarse crumbs; mix in pecans.
- Remove the dish from oven and sprinkle the pecan mixture over over the potatoes.
- Return to oven (uncovered) to bake for another 20 minutes.

MAPLE YAMS AND PECANS
It's been my experience that you either hate or you love coriander. I love it, and find that it gives this dish a special taste. I can't get yams, so I use sweet potatoes.
