MAPLE AND PECAN GLAZED PORK TENDERLOIN
This tenderloin is so easy to make. I love the sweet and savoriness of the meat. It is super juicy and tender. Enjoy!

Steps:
- 1. Preheat the oven to 350 degrees. Get out all the ingredients needed.
- 2. Sprinkle the pork loin with salt. Heat the butter and oil in a large ovenproof skillet over medium heat. Add the tenderloin and cook for 3 minutes per side or until brown.
- 3. Place the pork loin in the oven Bake for about 30 minutes. While Pork in baking Bring the pecans, maple syrup and coarse mustard to a boil in a saucepan, stirring frequently. Reduce heat and simmer for about 3 minutes or until thickened. Remove from the heat and stir in the vanilla. Carefully remove the meat from the oven and spread the maple, nut mixture on top of the the loin.
- 4. Return the pan to the oven and cook for an additional 20-30 minutes or until 160 degrees is reached on the thermometer.
- 5. Remove the tenderloin to a serving platter and cover loosely with foil. Let stand for 10 minutes to let all the juice reach all the portions of the meat. Slice the pork and serve with sauce remaining in the skillet and juices on the serving platter.

- Trim off the skin of the ham and about 1/4 in. of fat. Score the surface of the ham, making diamond shapes 1/4 in. deep. Place the ham, fat side up, on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2 hours., Meanwhile, in a small saucepan, bring syrup to a boil. Reduce heat; simmer, uncovered, until reduced to 3/4 cup. Remove from the heat. Stir in the pecans, mustard, orange zest and allspice., Baste ham with some of the glaze; bake 30-60 minutes longer or until a thermometer reads 140°, basting occasionally with remaining glaze. Let stand for 15 minutes before slicing.

- Line a baking sheet with parchment paper and set aside.
- In a pre-heated skillet (medium heat) Stir together maple syrup, vanilla and sea salt. Fold in pecans coating all the pieces with the syrup.
- Continue to cook until the syrup caramelizes (constantly stir so it doesn't burn). This will take approximately 5 minutes.
- Place on prepared baking sheet and let cool. Store in an airtight container.

- Preheat the oven to 325 degrees F.
- For the crust: Here's a super-easy no-fuss way to make this crust. Break the graham crackers into a food processor with the sugar. Pulse until the crumbs resemble fine meal. Pour the crumbs into a 9-inch springform pan. Pour the melted butter over the mixture, bring together with your fingers and press into the bottom of the pan.
- Cook's Note: Feel free to experiment with other graham crackers or cookies. Swap cinnamon or chocolate graham crackers for the original graham crackers for a tasty twist.
- For the cheesecake: In a stand mixer with the paddle attachment, beat the cream cheese on high speed until fluffy. Reduce the speed and, with the mixer running, add the eggs. Increase the speed to incorporate the eggs. Add in the pumpkin puree, sweetened condensed milk and maple syrup. Next, add in the cinnamon, nutmeg and salt. Beat the mixture for awhile; this will make the cheesecake light and fluffy. Pour the pumpkin mixture into the prepared crust. Tap the pan lightly on the work surface to remove any air pockets.
- Bake until the center appears nearly set, but jiggles a little when shaken, 1 hour and 15 minutes. Cool for 1 hour. Cover and chill at least 4 hours, or overnight.
- For the glaze: In a medium saucepan, combine the cream and maple syrup and bring to a boil. Boil until slightly thickened, 25 minutes, stirring occasionally. Stir in the pecan pieces. Cover and chill. Stir together before serving.
- To serve: Spoon the maple pecan glaze over the cheesecake.

Steps:
- Boil juice and bourbon in small saucepan until reduced to scant 1/3 cup, about 6 minutes.
- Combine sugar, pecans, molasses, and mustard in bowl.
- Add bourbon mixture; stir to form thick paste. (Can be made 2 days ahead.)
- Cover; chill.
- Bring to room temperature before using.
- Position rack in bottom third of oven and preheat to 325°F
- Line large roasting pan with heavy-duty foil, leaving overhang on all sides.
- Trim off skin and all but 1/4 inch fat from ham.
- Place ham, fat side up, in prepared pan.
- Roast ham until thermometer inserted into thickest part registers 130°F to 135°F, about 10 minutes per pound or 2 hours 40 minutes for 16-pound ham.
- Remove ham from oven; increase oven temperature to 425°F
- Lightly score fat on ham in diamond pattern.
- Rub glaze thickly over top and sides of ham.
- Return ham to oven and roast until glaze is deep brown and bubbling, about 25 minutes.
- Let ham stand at least 20 minutes and up to 45 minutes.
- Serve with chutney and spoon bread.
