Homemade granola is a nourishing breakfast. Use olive oil, which has many healthfulproperties, and pure maple syrup to bind rolled oats, raisins, and nuts before baking them.

3 cups rolled oats
1 cup dried unsweetened coconut chips
1 cup pecans or walnuts, quartered
1/2 cup pure maple syrup
1/2 cup extra-virgin olive oil
1/2 cup packed light-brown sugar
1/4 cup sesame seeds
1 teaspoon coarse salt
3/4 teaspoon freshly grated nutmeg
1/2 cup golden raisins

Steps:

  • Preheat oven to 300 degrees. Mix together oats, coconut, nuts, syrup, oil, sugar, sesame seeds, salt, and nutmeg. Spread granola in an even layer on a rimmed baking sheet. Bake, stirring every 10 minutes, for 40 minutes. Add raisins, and bake until granola is toasted, about 10 minutes more. Let cool completely.

  • Mix maple syrup and coconut oil together in a bowl; add oats, pecans, and almond flour and mix until evenly coated. Spread onto a baking sheet.
  • Bake in the preheated oven until lightly browned, about 40 minutes.

This is my favorite granola recipe adapted from the joy of baking website. It's not too sweet, and tastes great with a variety of nuts and dried fruit. Makes a great gift!

3 cups old fashioned oats
1/2 cup shredded coconut (sweetened or unsweetened)
1 cup nuts, chopped (I like a mixture of almonds, pecans, cashews, and sunflower seeds)
1/2-1 teaspoon cinnamon (I use 1 teaspoon)
1/4 teaspoon salt
2 tablespoons vegetable oil
3 tablespoons honey
3 tablespoons maple syrup
1 cup dried fruit (I like a mixture of cranberries, raisins, chopped apples and apricots)

Steps:

  • Preheat oven to 300 degrees.
  • Line a baking sheet with parchment paper.
  • Combine rolled oats, coconut, nuts, cinnamon, and salt.
  • In a separate bowl stir together oil, maple syrup and honey.
  • Pour liquid mixture over the dry ingredients and stir together.
  • Spread onto the prepared baking sheet and bake for approx 20-25 minutes (stirring occasionally).
  • The longer you bake it the crunchier the granola will be. It may still be sticky when it comes out of the oven, but it will become crisp and dry as it cools.
  • Place baking sheet on a wire cooling rack.
  • Once cooled, mix in the dried fruit and store in an airtight container or plastic bag in the refrigerator.
  • It will keep for several weeks.

During our learning process, we decided to tackle granola bars first, because when they are made with the right ingredients, they have a hearty helping of protein, will keep you filled and are easy to transport.

2 cups rolled oats
1/2 cup packed light brown sugar
3/4 cup dried cherries or cranberries
1/2 cup unsalted whole roasted almonds
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 cup smooth peanut butter or other nut butter
1/2 cup extra-virgin olive oil
1/2 cup maple syrup

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-by-8-inch baking dish with parchment paper, then lightly grease the paper with nonstick cooking spray. In a food processor, blend 1/3 cup of the oats until finely ground.
  • In a large mixing bowl, stir together the ground oats, remaining 1 2/3 cups oats, brown sugar, dried cherries, almonds, pumpkin seeds, sunflower seeds, cinnamon and salt. In a small bowl, whisk together the peanut butter, olive oil and maple syrup. Add the wet mixture to the dry mixture and stir until thoroughly combined.
  • Spread the mixture evenly in the prepared pan. Bake for about 30 minutes, or until the top starts to brown and the edges are golden. Let cool in pan completely, then remove and cut into 12 bars. Bars can stay in an airtight container for up to a week.
