Maureen Kirk, of Malvern, Pennsylvania, sent us a recipe for her family's favorite crispy, chewy treats. She says, "These simple cookies are delicious as is, or with mix-ins. They're so versatile, it's the only cookie I make!"

Number Of Ingredients 10

3 cups old-fashioned rolled oats
1 cup all-purpose flour (spooned and leveled)
1 teaspoon fine sea salt
1/4 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
1/4 cup pure maple syrup
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, stir together oats, flour, salt, and baking soda. In a large bowl, using an electric mixer, beat butter and sugars on high until pale and fluffy, 3 minutes. Beat in maple syrup, egg, vanilla, and 1/4 cup water, scraping down bowl as needed. With mixer on low, beat in oat mixture in 2 additions until just combined.
  • Drop dough in rounded teaspoons, 2 inches apart, onto parchment-lined baking sheets. Bake until edges are golden, about 11 minutes, rotating sheets halfway through. Let cookies cool on sheets until set, about 2 minutes, then transfer to wire racks and let cool completely. (Store cookies in an airtight container, up to 1 week.)

These maple oatmeal cookies are the best recipe we've found. And with a few swaps are healthy enough for breakfast!

Number Of Ingredients 10

3/4 cup butter, softened (1 1/2 sticks )
3/4 cup maple syrup
2 eggs
1 tsp vanilla extract
1 1/2 cups whole white wheat flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups rolled oats (not the quick cooking kind)
1 cup chopped nuts, raisins, or chocolate chips ( (optional))

Steps:

  • Preheat oven to 350 degrees.
  • In your stand mixer, whisk butter and maple syrup on medium speed until creamy. It might look a little weird for a second but it will come together. Add eggs and vanilla, and whisk until combined.
  • In a second bowl, combine whole white wheat flour, baking soda, cinnamon and salt; mix until uniform. Slowly pour into the butter mixture, mixing on low until combined.
  • Switch to the paddle attachment, or using a rubber spatula, add oats and additional add-ins (if using); fold into the dough until combined.
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 10-12 minutes or until light golden brown.
  • Cool for a minute on cookie sheets so they don't fall apart when you move them. Then move to wire rack to cool completely.
  • Store in an airtight container. Enjoy!

These maple oatmeal biscuits are soft, layered, Southern-style biscuits sweetened with maple syrup. Perfect for breakfast and brunch!

Number Of Ingredients 11

3 cups (390 gm) all-purpose flour
1/4 cup (50 gm) brown sugar, packed
2-1/2 teaspoons baking powder
1 teaspoon salt
1-1/2 teaspoons cinnamon
1 cup (90 gm) old fashioned oats
11 tablespoons (155 gm) butter, cold and diced into tablespoon-sized chunks
1 cup (240 mL) milk (whole or 2%)
1/3 cup (80 mL) maple syrup
2 tablespoons butter, melted
2 tablespoon maple syrup

Steps:

  • Preheat the oven to 415 degrees. Prepare a baking sheet with a sheet of parchment paper.
  • Combine the flour, brown sugar, baking powder, salt, and cinnamon in a large bowl. Stir in the oats. Use a pastry cutter or the back of a fork to cut the butter into the dry ingredients until it is reduced to pea-sized clumps.
  • In a separate bowl, combine the milk and maple syrup. Pour the mixture into the dry ingredients and butter and fold just until combined.
  • Turn the mixture out onto a floured surface. Gently pat together, but be careful not to overwork. Pat out to 1" thickness and then fold in thirds like a letter. Rotate the dough 90 degrees and then repeat this patting and folding process. Repeat once more for a total of 3 sets of folds. Pat the dough out to 1" thickness and use a floured biscuit cutter to cut out rounds of dough. Gently pat together the remnants and cut out more biscuits.
  • Combine the melted butter and remaining maple syrup together and brush over the tops of the biscuits. Bake in the preheated oven for about 12-15 minutes, or until the tops are golden brown.
