MAPLE PORK CHOPS

I like making thss recipe in the fall. The kitchen has the aroma of maple syrup. This is good with egg noodles or some baked sweet potato.

1 tablespoon vegetable oil
6 pork chops
1/4 cup onion, chopped
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon chili powder
1/8 teaspoon pepper
1/4 cup maple syrup
1/4 cup water
1 tablespoon flour

Steps:

  • Preheat oven to 400 degrees.
  • In large skillet, brown pork chops. Place pork chops in 9x13 inch pan.
  • In medium saucepan on low heat, combine onion, vinegar, Worcestershire sauce, salt, chili powder, pepper, maple syrup and water. Simmer 4 to 5 minutes.
  • Pour mixture over pork chops.
  • Bake covered for 45 minutes basting occasionally. Then uncover for 15 minutes more.
  • Remove pork chop, then thicken gravy with flour.

4 pork chops (I use lean, boneless pork chops)
2 tablespoons vegetable oil
1/3 cup maple syrup (use real maple syrup only)
2 cloves garlic, crushed
2 limes (optional)
1/2 teaspoon dried thyme
salt and pepper

Steps:

  • Combine oil, maple syrup, garlic, thyme, and juice and grated peel from limes; add pork chops.
  • Marinate pork chops for 1 hour or more in fridge.
  • Drain pork chops, reserving marinade.
  • In a large skillet, brown pork chops on both sides.
  • Reduce heat; cover and continue cooking 5 minutes.
  • Add marinade and cook 2-3 minutes longer.
  • Add salt and pepper to taste.

1 cup apple, chopped
1 cup dried apricot, chopped
1/2 cup cranberries
1 medium onion, chopped
2 stalks celery, 1/2 inch pieces
1/2 cup apple juice
1/2 cup brown sugar
1/4 cup wine
salt and pepper
1 1/2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Combine all ingredients; cover and cook 7 to 9 hours on low.
  • About 30 minutes before serving, pour liquid into a separate container to skim off excess fat.
  • Stir in cornstarch mixture and return broth to crockpot.
  • Continue cooking on low until smooth and thickened.
