MAPLE GLAZED APPLE CRISP COOKIES
A scratch-made cookie filled with fresh apple chunks and topped with brown sugar cinnamon streusel, drizzle with maple glaze. All the flavors of apple crisp in a chewy cookie!

Steps:
- In the bowl of a stand mixer (or you can use a handheld), cream together butter and sugar until light and fluffy. Add the eggs and vanilla and beat until smooth.
- Add the flour, salt, and baking soda and beat just until combined.
- Dry chopped apples on a paper towel to remove excess moisture. Add apples and mix until just combined.
- Cover with plastic wrap and refrigerate 1 hour (I find the juices from the apples makes the dough a bit stickier than normal - the chilling helps with this).

Tender apples kissed with maple syrup and covered in a rich, crunchy topping. Very easy, and tastes great!! My fiance loves when I make this dessert.

- Preheat oven to 375 degrees F (190 degrees C).
- Place apples in an 8x8 inch baking dish. Toss apples with syrup. In a separate bowl, mix together flour, oats, sugar, and salt. Cut in butter until mixture is crumbly. Sprinkle mixture evenly over apples.
- Bake in the preheated oven for 35 minutes, until topping is golden brown. Serve warm or at room temperature.

Fresh apples keep these cookies moist and chewy. If you prefer you can either omit the maple extract in the glaze and add vanilla or just omit it all together. Either way their still delicious.

- Preheat oven to 400'.
- Cream together butter with sugar.
- Add salt, cinnamon, nutmeg, cloves, coriander and egg. Blend well.
- Stir in flour with baking soda and milk until well blended. Stir in apples.
- Drop by small spoonfuls onto ungreased cookie sheets and bake at 400' for 10-12 minutes or until cookies are light brown and spread but not overly brown (Firm when cooled and touched)
- Remove from oven and cool on cookie sheets 1-2 minutes, then transfer to wire rack
- To make glaze: Stir together butter, powdered sugar, maple flavoring and milk to make a smooth glaze.
- Dot each cookie with about 1/2 teaspoons of glaze and spread to edges.
- Cool cookies and allow glaze to set before storing in an airtight container.

Spicy cookies that everyone loves. I've mailed them before and they mail beautifully. I've been making these for about 25 years, and never met anyone yet who didn't like them.

- Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
- Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
- Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
- Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
- To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

- Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides. , In a large bowl, beat brown sugar, melted butter, syrup and vanilla until blended. - Line a 9-in. pie pan with the bottom crust. Place half of the apples in the crust; set aside. , In a bowl, combine sugars, gingersnaps, cinnamon, nuts and butter; sprinkle half over apples in crust. Top with remaining apples and sugar mixture. Roll out remaining pastry to fit top of pie. Cut a few slits in the top and place over apples; seal. Cover loosely with foil and bake at 375° for 35 minutes. , Meanwhile, bring syrup to a gentle boil in a small saucepan. Remove pie from oven; remove foil and brush hot syrup over pie and into vents. Let's face it, apple crisp is great but you can't easily pack it for lunch or snack on it as easy as you may want. This was my inspiration for coming up with this cookie. If you like apple crisp you will equally like this cookie. I prefer a background nutmeg flavor, feel free to add more (or leave it out) for your taste.

- Preheat oven to 350°F.
- Cream butter with electric mixer; add sugar and cream together until fluffy.
- Add vanilla, egg, salt, cinnamon, nutmeg, baking soda and baking powder. Mix until well blended.
- Mix in 1/2 of the flour with electric mixer until well blended.
- Stir, by hand, remaining flour and oats. Depending on the humidity you may need a little less oats or a little more.
- Stir in the chopped apples. (I used 1 package of Del Monte dried apples that you can get in the supermarket in the same isle as the raisins, dried apricots).
- Drop by spoonfuls onto cookie sheet. I used a soup spoon but if you like smaller cookies, use a regular spoon.
- Bake for approximately 10 minutes. Rotate the pan if necessary after 7-8 minutes.
