MAPLE CURED SALMON
Salmon is probably my favourite fish & I'm always looking for new ways to prepare it. This recipe came from the Maple Restaurant in Halifax Nova Scotia & was created by Michael Smith (Chef At Large on the Food Network). Note overnight marinating is required!

Steps:
- Whisk syrup and salt in small bowl until well combined.
- Place salmon in a container just big enough to hold them in a single layer.
- Pour syrup mixture over top, cover tightly and refrigerate overnight.
- Remove salmon from the brine and place on a roasting rack.
- Let it drain briefly; bake in a preheated 400F oven for 5- 7 minutes (depending on the thickness of the fish).
- To judge doneness, squeeze the fish or prod with a thin-bladed knife.
- The flesh should just begin to flake and will be moist and juicy inside.
- Meanwhile, place Chardonnay, mustard and cream into a small pot and bring to a boil; reduce heat and simmer for 8- 10 minutes to allow liquid to reduce and sauce to thicken.
- Reserve& keep hot while the salmon cooks.
- Just before serving, add the chives and swirl to combine.

- Coat the salmon in maple syrup before scattering the mustard and salt on all sides. Press the dried ingredients into the fish to coat. Mix together the lemon juice and zest, shallots, bay leaves, and dill to make a cure. Place the salmon in a snug container, pour over the cure, seal tightly, and refrigerate for 24 hours.
- Thoroughly rinse the fish under running water, discard any liquid, and clean the container and return the fish to it.
- To serve, cut into thin slices. As your knife nears the skin (which will be thick from curing), turn it away from you to remove the skin.

- Make the cure: Place the maple sugar, salt, pepper, and lemon zest in a mixing bowl and mix well, breaking up any lumps in the sugar with your fingers.
- Run your fingers over the salmon and pull out any pin bones that you find with needle-nose pliers or kitchen tweezers. Spread 1/3 of the rub on a rimmed baking sheet or baking dish in the shape of and a little larger than the salmon fillet.
- Unwrap the fish and rinse all the cure off under cold running water. Blot the salmon dry with paper towels. Let dry, uncovered, on a wire rack set on a rimmed baking sheet in the refrigerator for up to 2 hours, or until the surface of the salmon feels slightly tacky.
- Set up your smoker following the manufacturer’s instructions and preheat to 250 degrees. Brush and oil the cooking grate.
- Place the fish skin side down in the smoker. Smoke the fish until just cooked through, about 40 minutes. To test for doneness, press it with your finger—the flesh will break into clean flakes.
- Remove the fish from the smoker and let the fish cool to room temperature, then refrigerate, wrapped in plastic wrap, until serving. Serve with any or all of the suggested accompaniements.

- Portion salmon into 8 equal pieces (2 per person). Crush the maple sugar and mix in with the salt. Coat the salmon fillets with the mixture and let cure for up to 4 hours. Remove salmon fillets from the cure, discarding the excess salt and sugar. - In a large bowl, mix together salt and sugar to make your cure. Spread roughly a quarter of the mixture evenly into a large casserole dish. Lay the salmon, skin-side down, onto the cure.Sprinkle a small amount of the cure onto the flesh of the salmon, and gently massage it in with your hands. Garnish generously with half of the chopped dill and all the lemon zest.
- Evenly sprinkle the aquavit or vodka over the salmon, then cover with the remaining cure, making sure you can’t see the fish anymore.
- Find a nice flat place in your fridge and slide the casserole dish in. Refrigerate for two to three days, depending on how firm and salty you want your fish. Flip the salmon once daily, making sure it’s always covered in the cure.
- Once the fish has firmed up to a texture you like, rinse the cure off with water, then dry the salmon with paper towel. Garnish with the remaining chopped dill, then cover and let dry in the fridge for another 12 hours.

- Place salmon in 13 x 9-in. (3-L) ceramic or glass baking dish; trimming fillet to fit flat in dish (leave trimmings in dish).
- In bowl, mix together salt, sugar, 1 cup (250 mL) dill sprigs and pepper. Pat about half the mixture onto the salmon. Flip over the fillet; pat the rest of the salt mixture on top. Don’t worry of some salt mixture spills onto the dish.
- Cover baking dish with plastic wrap, allow enough slack in the wrap so it lays against the salmon (not taut across rim of dish). Place another baking dish of the same size onto the plastic wrap to weigh down the salmon. Fill the top baking dish with fruits or canned goods for added weight. The added pressure helps the curing process.
- Refrigerate 48 hr., until salmon feels firm to the touch. The cure mixture will turn into a brine. After curing, discard brine. Under cold water, rinse off pepper and dill sticking to the salmon. (Note: To prevent fillet from breaking or tearing, do not hold the fillet with hands during rinsing. Instead, place the fillet on a rack while rinsing under running water.) Pat salmon dry.
