Maple Fudge with Maple Syrup image

This yummy sweet is one of my childhood favorites... it's the best homemade maple fudge. If you like walnuts, don't forget to add them.

2 cups maple syrup
1 cup heavy cream
¾ cup dark brown sugar
2 tablespoons butter
1 pinch salt
⅔ cup chopped walnuts
1 tablespoon vanilla extract

Steps:

  • Line an 8x8-inch baking pan with waxed paper. Butter the paper.
  • Bring maple syrup, heavy cream, and brown sugar to a boil in a saucepan over medium heat. Continue to boil, without stirring, until mixture starts to bubble and registers 240 degrees F (166 degrees C) on a candy thermometer.
  • Remove from heat. Add butter and salt but do not mix. Let sit until mixture reaches 105 degrees F (41 degrees C).
  • Add walnuts and vanilla; beat until mixture loses its gloss. Pour into the prepared pan and let cool to room temperature. Cut, wrap, and store in the refrigerator.

This is our best maple cream, with or without nuts. It's a decadent dessert that makes a great gift, for others or yourself. A sure bet!

500 ml (2 cups) maple syrup (prefertably dark syrup for its robust flavour)
45 ml (3 tablespoons) butter
250 ml (1 cup) 35% cream (preferably whipped)
125 ml (1/2 cup) walnuts, chopped

Steps:

  • In a large saucepan, bring maple syrup and butter to a boil. Boil for 5 minutes.
  • Add cream and continue cooking until the temperature reads 118°C (245°F) on a candy thermometer*.
  • Meanwhile, grease and line a square pan with parchment paper and set aside.
  • Remove maple syrup and cream mixture from heat and let rest for 5 minutes.
  • Using a whisk, beat for 5 minutes until thick.
  • Add walnuts and pour into baking pan.
  • Let cool before cutting into squares.

Unsalted butter (for pan)
4 cups pure maple syrup
2 cups heavy cream
1/2 teaspoon kosher salt
Special Equipment
A candy/deep-fry thermometer; a 9x5" or 8x4" loaf pan

Steps:

  • Preheat oven to 350°F. Toast pecans on a rimmed baking sheet, tossing once, until fragrant and slightly darkened, 10-15 minutes. Let cool, then coarsely chop.
  • Meanwhile, butter loaf pan. Attach candy thermometer to a large heavy-bottomed pot or Dutch oven set over medium heat. Cook maple syrup, cream, and salt, whisking constantly, and bring to a boil. Stop whisking and continue to boil until thermometer registers 238°F, about 40 minutes. Immediately remove from heat and let cool to 130°F, about 40 minutes.Transfer to a stand mixer fitted with the paddle attachment (or use an electric mixer or wooden spoon) and beat on medium speed until fudge is stiff and opaque, about 12 minutes. Fold in pecans. Scrape fudge into prepared pan; smooth surface. Chill until cool and firm, about 2 hours.

1 cup white sugar
1 cup brown sugar
1 cpu heavy whipping cream
1/3 cup butter
1/4 cup maple syrup
1 teaspoon salt
1 teaspoon vanilla

Steps:

  • Add the two sugars, butter and cream, maple syrup and salt into a sauce pan. Place over medium heat. Stir while bringing to a boil. Lower the heat and continue to stir slowly while the mixture cooks. After about 7 minutes, test by pouring a small amount into some cold water. You want it to form a soft ball. You might need to cook it for another minute or two. Remove from the heat, add a couple of teaspoons of vanilla and start stirring. It takes about 14 or 15 minutes for the fudge to cool and thicken. Pour into buttered dish. TIP: If you let the fudge sit for 10 minutes after removing from the heat and allow it to cool slightly this will reduce the stirring time. Option: Replace the cream and cup of white sugar with one can of Sweetened Condensed Milk and increase the maple syrup to 1 cup.

  • Cook and stir until it begins to boil --
  • Lower heat and stir and cook for 7 minutes.or until a small drop dropped in cold water.makes a small ball.
  • Remove from ehat and add 2 tsps vanilla extract.Stir for 14-15 minutes to cool and thicken.
  • Sometimes it willt ake 14-15 minutes to thicken and cool.
  • Pour into a buttered 9" square pan.

1 tablespoon maple extract
½ cup butter
¾ cup chopped walnuts

Steps:

  • Line a baking dish with plastic wrap.
  • Sift the confectioners' sugar into a large, microwave-safe bowl. Add the milk, maple extract, and butter to the bowl, but do not stir.
  • Heat in microwave on full power for 3 minutes.
  • Stir the walnuts into the fudge mixture until the fudge begins to thicken; pour into the lined baking dish. Smooth the top of the fudge with a spatula. Refrigerate until firm, about 15 minutes. Remove the fudge from the pan using the plastic wrap as a handle. Cut into small squares and store in an airtight container.
