Sweet potatoes get an impressive treatment with this decorative preparation. The hasselback slicing technique is easily achievable (just follow our tips!), and it allows the flavors of bacon, butter, maple syrup and fresh thyme to infuse the sweet potato. 4 medium sweet potatoes (orange-fleshed), about 2 lb total
2 tablespoons butter, melted
1/4 teaspoon salt
2 tablespoons real maple syrup
1/3 cup cooked crumbled bacon
1 teaspoon chopped fresh thyme leaves

Steps:

  • Heat oven to 400°F. Spray 13x9-inch baking dish with cooking spray.
  • Poke each sweet potato several times with fork. Place on microwavable plate. Microwave uncovered on High 5 minutes. Cool 5 minutes.
  • Using serrated knife, cut sweet potatoes crosswise into 1/8-inch slices, leaving bottom 1/4 to 1/2 inch intact. Place sweet potatoes in baking dish. Brush potatoes with 1 tablespoon of the melted butter. Sprinkle with salt.
  • Bake 50 to 65 minutes or until completely tender. Brush with remaining tablespoon melted butter. Brush sweet potatoes with maple syrup. Top with bacon and thyme.

4 medium sweet potatoes of similar shape
4 strips bacon
3 scallions, chopped, 2 tablespoons reserved for garnish
2 tablespoons maple syrup
4 ounces smoked Cheddar, shredded (about 1 1/4 cups)
Kosher salt and freshly ground black pepper
Sour cream, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the sweet potatoes on a foil-lined baking pan. Bake until a paring knife inserted in the center pierces easily, about 1 hour. Cool slightly.
  • Meanwhile, cook the bacon in a medium skillet over medium heat until crisp and brown, about 7 minutes. Transfer to a paper-towel lined plate to drain. Reserve 1 tablespoon of the bacon fat. Crumble bacon.
  • Halve the sweet potatoes lengthwise. Carefully scoop most of the flesh out into a bowl, leaving enough flesh in the skin so that it holds its shape. Add the bacon, bacon fat, scallions, maple syrup and 1 cup of the cheese to the sweet potato flesh. Stir together and season with salt and pepper to taste. Refill the sweet potato shells and sprinkle with the remaining cheese.
  • Place the sweet potatoes back in the oven until heated through and the cheese is melted, about 15 minutes. Top with the reserved scallions and dollops of sour cream.

4 slices thick-cut bacon
2 teaspoons maple syrup
1 teaspoon paprika
Kosher salt
4 medium sweet potatoes (about 2 pounds)
Chopped fresh chives, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • To a large cast-iron pan, add the bacon in an even layer. Turn the heat to medium and cook until crispy, around 4 minutes per side. Drain on paper towels and set aside. When cool enough to handle, break into pieces.
  • To the bacon fat in the pan, add the maple syrup, paprika and 2 teaspoons salt. Set aside.
  • One at a time, place a potato between the handles of 2 wooden spoons or 2 chopsticks. Slice each potato into 1/8-inch-thick slices; the spoon handles will prevent the knife from cutting all the way through. Place the potatoes in the pan and baste with the bacon fat/maple syrup mixture all over, including the bottoms and in between the slices. Roast until the potatoes are soft, basting halfway through, about 1 hour. Remove from the oven and add bacon between the slices. Place on a serving platter and garnish with the chives and salt to taste.

2 pounds sweet potatoes (about 4 medium potatoes), scrubbed and dried
2 tablespoons olive oil
2 teaspoons kosher salt
2 tablespoons plus 1 teaspoon maple syrup
8 ounces thick-cut bacon
Flaky salt, to serve

Steps:

  • Heat the oven to 425 degrees, and line a baking sheet with parchment paper. Cut each sweet potato in half lengthwise, then slice each half into 3 or 4 wedges, 1- to 1 1/2-inches thick.
  • In a large bowl, toss the sweet potatoes with the oil and salt. Spread onto the baking sheet in a single layer, leaving a little space between the pieces. (Use two baking sheets if you need to).
  • Bake for 20 minutes, then drizzle with the maple syrup, toss, and return to the oven for another 15 to 20 minutes, until the wedges are deeply brown on both sides.
  • Once you've tossed the potatoes, place the bacon on an unlined sheet pan. Bake for 13 to 15 minutes, until crisp and cooked through. Place on a paper towel to drain (pour fat from the sheet pan into a jar and store in your refrigerator to use later, or discard), then chop into 1/2-inch pieces and toss with sweet potato wedges and the remaining teaspoon maple syrup. 4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

6 Tbsp. KRAFT Classic Balsamic Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
1 clove garlic, minced
1/2 tsp. dried thyme leaves
8 slices OSCAR MAYER Bacon, cooked, crumbled
2 Tbsp. finely chopped pecans
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 425ºF.
  • Cut thin lengthwise slice off bottom of each potato; discard. Place 2 wooden spoons on opposite long sides of 1 potato on cutting board. Cut potato crosswise into 1/8-inch-thick slices, stopping when knife hits spoons. Repeat with remaining potatoes.
  • Wrap sweet potatoes in damp paper towels. Microwave on HIGH 6 to 7 min. or until almost tender.
  • Meanwhile, combine dressing, garlic and thyme. Place potatoes in foil-lined 13x9-inch pan; brush evenly with 3 Tbsp. dressing mixture, getting in between slices. Bake 15 min. or until potatoes are tender. Remove from oven. Heat broiler.

This was in an email from Trader Joe's for the holidays. (Best little store ever!) I made it today for Thanksgiving and it's delicious! Putting on here to share and for safe keeping. One note: My sweet potatoes took quite a bit longer to roast and be tender so just check them and cook until they are done. I might have used too small a pan because I had to stir them and keep cooking past the time.

4 sweet potatoes, peeled and diced
1/4 cup olive oil
1/4 teaspoon salt
4 ounces bacon, large diced
1 medium yellow onion, chopped
2 gala apples, diced
1/4 cup maple syrup

Steps:

  • Toss potatoes with oil and salt. Roast at 400' about 20 minutes or until tender.
  • Cook bacon over medium heat in a large pot. Add onions once fat starts to render. Cook until bacon is crisp and onions are translucent.
  • Add apples to pot and cook 2 more minutes (I cooked longer to caramelize the apples a bit).
  • Add potatoes and cook approximately 5 minutes, or until soft (Again, I cooked longer to get a bit of caramelizing on the potatoes).
  • Toss with maple syrup and serve.
  • Note: I roasted the potatoes the night before and just put them in the fridge so I wouldn't tie up the oven for Thanksgiving dinner.
