MAPLE AND APPLE CIDER OATMEAL BREAD
This oatmeal quick bread has three sources of apple--apple cider, applesauce, and diced apple--with just a hint of maple flavoring. It's a one-bowl recipe that comes together fairly quickly and tastes great when served warm. Can also be served at room temperature.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 1/2 x 4 1/2-inch loaf pan and line the bottom with parchment paper.
- Whisk apple cider, maple syrup, yogurt, applesauce, eggs, vegetable oil, vanilla extract, and maple extract together in a bowl until thoroughly combined. Mix in flour, oats, cinnamon, baking powder, baking soda, cardamom, salt, and nutmeg until incorporated. Fold in apples and walnuts. Pour batter into the prepared pan and tap the pan on the counter a few times to remove any air bubbles.
- Bake in the preheated oven until a toothpick inserted into the center of the bread comes out clean, 55 to 60 minutes. Allow bread to cool in the pan for 30 minutes. Gently run a knife around the edge of the pan to loosen and turn loaf out onto a wire rack to cool.

This quick bread takes only a handful of ingredients to make. Just make sure you use sparkling apple cider, as regular apple cider will not work.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Spray a loaf pan with nonstick spray.
- Combine self-rising flour, sparkling cider, oat flour, sugar, cinnamon, and baking powder in a large bowl; mix well. Pour batter into the prepared loaf pan. Mix sugar and cinnamon in a small bowl and sprinkle over the top.
- Reduce the oven temperature to 375 degrees F (190 degrees C). Bake the loaf in the preheated oven for 35 minutes.
- Remove the loaf and pour melted butter on top. Continue baking for 20 minutes. Cool before slicing.

- Place milk, water and sugar in saucepan.
- Chop apple into small, thin chunks. Add it and the dried fruit to the milk mixture.
- Heat the mixture on medium until boiling or near boiling.
- Add oats and cinnamon and cook for 3-5 minutes stirring occasionally. If desired, also add honey, brown sugar or maple syrup.
- When oatmeal is cooked, add vanilla.

MAPLE TART WITH OATMEAL COOKIE CRUST
Maple syrup and oatmeal are usually relegated to the breakfast table, but here they create a crowd-pleasing tart. Creamy maple pudding would be lovely on its own, but truly shines nestled into a cookielike oatmeal crust. Top it with a dollop of whipped cream laced with cinnamon and nutmeg.

- Heat oven to 350 degrees. In bowl of a food processor, combine oats, flour, brown sugar and salt, and pulse until oats are coarsely chopped. Add butter and pulse until evenly moistened.
- Transfer mixture into a 9-inch fluted tart pan with a removable bottom. Press crumbs evenly into bottom and up sides of the pan. Set pan on a rimmed baking sheet and bake until crust is fragrant, set and edges are golden brown, 18 to 20 minutes. Set on a rack to cool completely.
- In a medium saucepan, bring maple syrup to a simmer over medium heat. Cook maple syrup until it has reduced to 1/2 cup/120 milliliters, about 8 minutes. Set aside.
- Set a fine mesh sieve over a medium bowl. In a separate medium bowl or a 4-cup glass measuring cup, whisk together milk, cream and egg yolks. Add cornstarch to a medium saucepan. Gradually whisk in milk mixture until smooth. Add maple syrup and whisk to combine. Cook mixture over medium heat, whisking constantly, until it has thickened and just come up to a low boil, about 6 to 7 minutes. Continue to cook, stirring constantly, for another minute. Pour custard through sieve, using whisk to scrape it through. Discard any solids. Whisk in butter until fully combined with no solid bits remaining. Transfer mixture to prepared crust. Let cool slightly, then cover with plastic wrap and chill until firm, at least 4 hours.
- Beat heavy cream and confectioners' sugar until stiff peaks form. Gently fold in cinnamon and nutmeg until evenly distributed.
- Before slicing, remove pan rim from tart by carefully setting tart on top of a 28-ounce can (or something roughly the same size) and transfer tart to a serving platter. To serve, top slices with whipped cream.

OVERNIGHT APPLE-CINNAMON OATMEAL

- Coat the inside of a 4-5 quart slow cooker with cooking spray.
- Combine all the ingredients in the slow cooker and stir. I find it helpful to mix the brown sugar with the cinnamon; the cinnamon gets better incorporated and doesn't separate from the mix as much.
- Cook for 7-8 hours on low.
- Stir thoroughly before serving with a rubber spatula or wooden spoon.
- Serve immediately.
- Refrigerate leftovers; reheat with a splash of milk.
- *This recipe is easily cut in half for smaller slow-cookers. A time of 4 hours is optimal.
APPLE CIDER SPICED OATMEAL
This oatmeal is hearty, sweet, and healthy because it receives its sweetness from apple cider instead of added sugar. I love putting cranberries or fresh fruit in it and sometimes a bit of maple syrup.
