CLASSIC MEATLOAF RECIPE

This Classic Meatloaf recipe was my dad's claim to fame, at least in our house! It's tender and juicy and has a uniquely delicious flavor. The brown sugar and ketchup glaze just puts this meatloaf over the top!

2 pounds ground beef (85/15)
1/2 cup minced onion
2 eggs
1/2 cup ketchup
1 tablespoon Worcestershire
1 cup crushed crackers (quick cook oats or breadcrumbs)
2 teaspoons Porterhouse seasoning
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard

Steps:

  • Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
  • Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
  • Shape into a loaf and place into a loaf pan.
  • In a small bowl combine 1/2 cup ketchup, brown sugar and mustard. Brush about 1/3 of the mixture over the top of the meatloaf.
  • Bake in the preheated oven for 45 minutes, then pour remaining sauce over the meatloaf. Return to the oven and bake for an additional 15-25 minutes or until meatloaf is completely cooked through. Meat should register between 155 and 160 degrees F.
  • Let stand for 5-10 minutes before slicing and serving. Garnish with parsley if desired.

½ cup barbecue sauce
¾ cup crushed crackers
1 cup crushed potato chips
¾ teaspoon liquid smoke flavoring
¾ teaspoon ground black pepper

½ teaspoon garlic powder
1 pinch cayenne pepper
6 slices bacon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, liquid smoke, ground black pepper, salt, garlic powder and cayenne pepper and mix well.
  • On a lightly greased cookie sheet, shape the mixture into a loaf. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.
  • Bake at 375 degrees F (190 degrees C) for 1 1/2 hours.

4 ½ pounds ground beef
1 ½ cups Italian bread crumbs
2 (4.5 ounce) packages noodle soup mix (such as Lipton® Soup Secrets®)
1 (8 ounce) can tomato sauce (such as Hunt's®), divided
4 eggs
1 yellow onion, chopped
½ cup ketchup
½ (4 ounce) packet saltine crackers, crumbled
2 tablespoons Worcestershire sauce, divided
1 tablespoon barbeque sauce
2 teaspoons steak sauce (such as A1®)
2 teaspoons salt
2 teaspoons ground black pepper, divided
1 ½ teaspoons garlic powder, divided
1 teaspoon onion powder, divided
½ teaspoon cayenne pepper

Steps:

  • Place a large cast iron skillet in the oven. Preheat oven to 375 degrees F (190 degrees C).
  • Combine ground beef, Italian bread crumbs, noodle soup mix, 1/2 the tomato sauce, eggs, onion, ketchup, cracker crumbs, 1 tablespoon Worcestershire sauce, barbeque sauce, steak sauce, salt, 1 1/2 teaspoons black pepper, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder in a large bowl; mix well.
  • Mix remaining tomato sauce, 1 tablespoon Worcestershire sauce, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and cayenne pepper in a small bowl until topping is smooth.
  • Remove skillet from the oven. Place ground beef mixture in skillet, smoothing the top. Spread topping over beef.
  • Bake in the preheated oven until beef is mostly cooked through, about 1 hour 30 minutes. Remove from oven and drain off grease. Return to the oven and continue cooking until meatloaf juices run clear and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 1 hour more.
  • Remove meatloaf from oven and allow to cool for 15 minutes before serving.

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

This is a big, hearty meatloaf the stays juicy and doesn't dry out while cooking. I found the recipe in a cookbook and added some of my own little favorites

1 1/2 lbs ground beef
2 tablespoons extra virgin olive oil
1/2 onion, diced
1/2 green bell pepper, diced
2 garlic cloves, minced
1 cup potato chips, crushed
1 cup monterey jack pepper cheese, grated
3/4 cup Ritz cracker, crushed
1/4 cup barbecue sauce
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon kosher salt
1 tablespoon Tabasco sauce
1 egg
1 teaspoon thyme
1 teaspoon basil
1 teaspoon liquid smoke
6 slices bacon

Steps:

  • Preheat oven to 350 degrees.
  • In a medium skillet, saute the onion, bell pepper and garlic until translucent. Drain.
  • Combine the onion, bell pepper and garlic with all other ingredients except for the bacon in a large bowl. Mix well.
  • In a medium casserole dish, form the mix into a loaf about 8-10" long and 4-6" wide.
  • Cut bacon slices in half and place over loaf forming a covering over the entire loaf.
  • Cover the dish with aluminum foil and bake for 1hr 30 minutes. Serve hot!

Meatloaf that's deeply meaty, moist but not overly juicy, and tender yet firm enough to hold its shape when you spear a bite.

1/2 cup (118ml) homemade or store-bought low-sodium chicken stock
1/4 cup (59ml) buttermilk
1/2 ounce (2 packets; about 1 1/2 tablespoons; 14g) unflavored gelatin
2 slices high-quality white sandwich bread, crusts removed and torn into rough pieces
4 ounces (113g) button or cremini mushrooms, cleaned
3 anchovy filets
1/2 teaspoon Marmite
2 teaspoons (10ml) soy sauce
1 teaspoon (2g) paprika
2 medium cloves garlic, roughly chopped (about 2 teaspoons, 10g)
1 small onion, roughly chopped (about 3/4 cup; 39g)
1 small carrot, peeled and roughly (about 1/2 cup; 75g)
1 stalk celery, roughly chopped (about 1/2 cup; 50g)
2 tablespoons (30g) unsalted butter
12 ounces (340g) freshly ground pork (see note)
1 1/4 pounds (567g) freshly ground beef (see note)
2 large eggs (112g)
4 ounces (114g) cheddar, provolone, Monterey Jack, or Muenster cheese, finely grated (about 1 cup)
1/4 cup (15g) finely minced fresh parsley
Kosher salt and freshly ground black pepper
For the Glaze:
3/4 cup (177ml) ketchup
1/4 cup (43g) packed light brown sugar
1/2 cup (118ml) cider vinegar
1/2 teaspoon freshly ground black pepper

Steps:

  • Combine the chicken stock and buttermilk in a liquid measuring cup and sprinkle the gelatin evenly over the top. Set aside.
  • Place the bread and mushrooms in a food processor and pulse until finely chopped. Transfer to a large bowl and set aside.
  • Add the anchovies, Marmite, soy sauce, paprika, and garlic to the processor bowl and pulse until reduced to a fine paste, scraping down the sides of the bowl as necessary. Add the onion, carrot, and celery and pulse until finely chopped but not pureed.
  • Heat the butter in a 10-inch nonstick skillet over medium-high heat until foaming. Add the chopped vegetable mixture and cook, stirring and tossing frequently, until it is softened and most of the liquid has evaporated, about 5 minutes; the mixture should start to darken a bit. Stir in the buttermilk mixture, bring to a simmer, and cook until reduced by half, about 10 minutes. Transfer to the bowl with the mushrooms and bread, stir thoroughly to combine, and let stand until cool enough to handle, about 10 minutes.
  • Add the ground meat to the bowl, along with the eggs, cheese, parsley, 1 tablespoon kosher salt (or half that volume in table salt), and 1 teaspoon pepper. With clean hands, mix gently until everything is thoroughly combined and homogeneous; it will be fairly loose. Pull off a teaspoon-sized portion of the mixture, place it on a microwave-safe plate, and microwave it on high power until cooked through, about 15 seconds. Taste the cooked piece for seasoning and add more salt and/or pepper as desired.
  • Transfer the mixture to a 9- by 5-inch loaf pan, being sure that no air bubbles get trapped underneath. (You may have some extra mix, depending on the capacity of your pan; this can be cooked in a ramekin or free-form next to the loaf.) Tear off a sheet of heavy-duty aluminum foil large enough to line a rimmed baking sheet and use it to tightly cover the meatloaf, crimping it around the edges of the pan. Refrigerate the meatloaf while the oven preheats. (The meatloaf can be refrigerated for up to 2 days.)
  • Adjust an oven rack to the lower-middle position and preheat the oven to 350°F. When the oven is hot, remove the meatloaf from the refrigerator and, without removing the foil cover, carefully invert it onto the rimmed baking sheet. Loosen the foil and spread it out, leaving the pan on top of the meatloaf (see note). Fold up the edges of the foil to trap the liquid that escapes from the meatloaf while baking. Bake until just beginning to set (the top should feel firm to the touch), about 30 minutes.
  • Use a thin metal spatula to lift an edge of the inverted loaf pan, jiggling it until it slides off the meatloaf easily, and use oven mitts or a folded kitchen towel to remove the pan, leaving the meatloaf on the center of the foil. Return to the oven and bake until the center of the meatloaf registers 140°F on an instant-read thermometer, about 40 minutes longer. There will be quite a bit of exuded juices; this is OK. Remove from the oven and let rest for 15 minutes. Increase the oven temperature to 500°F.
  • Meanwhile, Make the Glaze: Combine the ketchup, brown sugar, vinegar, and pepper in a small saucepan and cook over medium-high heat, whisking occasionally, until the sugar is melted and the mixture is homogeneous, about 2 minutes. Remove from the heat.
  • Use a brush to apply some glaze to the meatloaf in a thin, even layer, then return it to the oven and bake for 3 minutes. Glaze again and bake for 3 minutes longer. Glaze one more time and bake until the glaze is beginning to bubble and is a deep burnished brown, about 4 minutes longer. Remove from the oven and allow to rest for 15 minutes. Slice and serve with any extra glaze and mustard or ketchup as desired.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped

1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs

1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.
