- In a large bowl, combine soy sauce, garlic, green onions, ginger, sugar and pepper. Add the vinegar, oil and Worcestershire sauce. Mix well.
- Marinate meat in this mixture for several hours before grilling outdoors.

Steps:
- For the salsa: Peel the mango and cut into 1/4 inch diced pieces.
- Put mango pieces in a small bowl with the remaining salsa ingredients; stir to combine.
- Cover bowl with saran wrap and refrigerate until ready to serve.
- For the marinade: In a small bowl, whisk together the soy sauce, sweet sake, vegetable oil, light brown sugar, fresh ginger, and minced garlic; set aside.
- Place the mahi mahi fillets in a large zip-lock plastic bag.
- Pour marinade into bag; press the air out of the bag and seal tightly.
- Turn/shake the bag to coat fillets with marinade.
- Refrigerate for 20-30 minutes.
- Take fillets out of bag and throw away marinade.
- Brush or spray both sides of fillets with vegetable oil.
- Grill over high heat until fish is opaque throughout, 8 to 10 minutes, turning once halfway through grilling time.
- Serve warm with salsa.

- Cut chicken thighs into bite size pieces.
- Saute garlic and chicken on medium (med-high depending on your stove) in olive oil until chicken is golden and cooked through.
- Add teriyaki and ginger, heat about 5 minutes.
- Add mango, heat until just warm-about 2 minutes.
- Enjoy over rice or as is.

- Get your rice cooking, if you’re serving this with rice. I always just start that in the rice cooker right away so it’s ready in time!
- In a food processor or blender, puree the soaked dates and their water, soy sauce, rice vinegar, garlic, and ginger. Continue to blend or process until very, very smooth. Set aside.
- Thinly slice the onion. Cut the chicken breasts into bite-sized pieces. Combine the flour, salt, pepper, and chili powder in a shallow dish and dredge each piece of chicken in the flour mixture to get a light coating.
- Heat the oil over medium high heat in a large pan. Add the onions and stir fry for a few minutes. Add the chicken and stir fry for a few minutes until browned. Add the sauce and the broth (turn heat down to avoid splatter) – adding more broth if needed to thin out the sauce. Cover and simmer for 10 minutes. Add the mango chunks, stir, and cover and simmer for another 5-10 minutes.

- Preheat a grill to medium heat. If using wooden skewers, soak the skewers for at least 30 minutes while preparing the recipe.
- For the skewers: Cut the mango into large cubes (larger than a dice) so that threads onto the skewers. Chop the red pepper, orange pepper, zucchini, and red onion into large pieces (you can cut the onion in wedges and use a few layers when threading). Thread the veggies and mangos onto skewers. Tip: We threaded our mangos 2 chunks at a time so there is proportionally more mango than veggies per skewer.
- Place the skewers on a tray and brush them with the glaze on one side. Place the skewers on the grill, glazed side down, then brush the tops with the remaining glaze. Grill 6 to 10 minutes per side until tender and lightly charred.
