Blitz up mangoes with yogurt, cardamom, lime and honey and you have the most delicious lassi drink - a bit like a smoothie and great for breakfast

Steps:
- Put all the ingredients apart from the lime juice in a food processor and blitz. Add the lime juice along with a pinch of salt, to taste, if the cardamom isn't strong enough then add a little more, then pour into glasses with some ice cubes and serve.

MANGO LASSI WITH COCONUT WATER
This is my variation on a classic. The coconut water is what elevates this above a basic mango lassi.

Steps:
- Slice and peel mango and toss in a blender.
- Add in coconut water (I use a single serving drink box of Zico but if I'm feeling more adventurous I will open a Thai young coconut and pour that water - one young coconut has about 300 ml in it).
- Add the yogurt (I use Fage 2%) and the coconut cream (Coconut cream is sold in cans in the grocery store for use in pina coladas).
- Blend until smooth (in my blender 20 seconds).
- Serve in a tall glass or in the empty coconut with a straw.

- Put all the ingredients into a blender and blend for 2 minutes, then pour into individual glasses, and serve. Feel free to try salt and cardamom seeds. The lassi can be kept refrigerated for up to 24 hours.
COCONUT MANGO LASSI
A creamy yogurt-based drink enjoyed throughout India, this hydrating mango lassi is infused with coconut cream and coconut water for added satisfaction.

Steps:
- In a blender, add 1 1/2 cups of the coconut water, mango, yogurt, cream of coconut and lime juice and puree until smooth. Transfer to large pitcher and stir in the remaining 1 cup of coconut water. Refrigerate until ready to serve. Pour into glasses and garnish with mango slices, if desired. Cook's Note: For a sweeter lassi, add 1 to 2 tablespoons of sugar, to taste.
MANGO LASSI
We like to cook Indian food at our home for special occasions. My 14-year-old loves to make Mango Lassi's for our guests to drink as they arrive. We purchase 1 lb 14 oz cans of Mango pulp from a local Middle Eastern grocer. I put the can in the refrigerator prior to making these so all the ingredients are cold. The owner of the grocery store told me that children in India like to dip bread in the Mango pulp to enjoy as a treat. Expand on that and try dipping sugar or ginger cookies. Unsure yield.
