GROUND BEEF WITH SPINACH AND CREAM
Ground Beef with spinach and cream makes a great weeknight meal delivering flavor when you're short on time. Serve with rice and you pretty much cover everything in the food pyramid all in a tasty dish.

Steps:
- Heat olive oil in a skillet over medium high heat, then cook the onion for 3 - 5 minutes until softened. Add garlic and cook until fragrant - about 30 seconds. Add the ground beef and cook, using a wooden spoon to break up the meat as you go. Cook until browned and the moisture from the beef is mostly evaporated. Season with salt and pepper then stir in hot sauce.
- Add the spinach in batches otherwise it will overflow. Add some spinach, stir until it starts to wilt and then add some more. Continue until all the spinach is added and wilted.
- Stir in cream and nutmeg. Nutmeg will give it that taste that people will notice but not know what it is, but in a good way. Simmer for a few minutes until slightly thickened.
- Serve with rice.
SPINACH AND GROUND BEEF CASSEROLE
This creamy, cheesy Spinach and Ground Beef Casserole is an old-fashioned, easy dinner that's ready for the oven in about 30 minutes!

- Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
- In a large skillet, cook beef, onion and garlic over medium heat until no longer pink; drain.
- Stir in the spinach, cream cheese, condensed soup, sour cream, milk, salt and 1 cup of the mozzarella cheese. Stir over low heat, just until combined.
- Transfer to the prepared baking dish. Cover with foil. Bake for 20 minutes. Remove the foil; sprinkle with the remaining 1 cup of mozzarella cheese and the French-fried onions. Bake for 10 more minutes, or until the cheese is melted and the casserole is hot and bubbly.

My family, which includes my parents and six brothers and sisters, all love this recipe. Sometimes I use ground turkey in place of the ground beef.

- In a large skillet, cook beef and onion over medium heat until the meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the mushrooms, salt, oregano and pepper. Add the spinach, soup and sour cream. Stir in half of the cheese., Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 15 minutes. Sprinkle with the remaining cheese; bake 5 minutes longer or until cheese is melted.

CREAMED BEEF WITH SPINACH
This is great when you want to make a quick dish that's really great tasting. There's a little prep, but not much, and the cooking is quick and easy.

Steps:
- chop the spinach, discarding the stems.
- Chop the onion. Mince the garlic.
- Crisp the bacon. Chop to create bacon bits.
- Wilt the spinach in two tablespoons of butter. Remove from heat and save.
- Sautee the onion and garlic until the onion starts to brown,.
- Add the ground beef, separating it into crumbles. Use salt & pepper to season the mix.
- Contunue stirring untl all the meat is browned and there is no pink showing.
- Fold in the saved spinach,.
- Add the condensed cream of mushroom soup, and a half cup of water. Stir until the mixture is well mixed.
- Mix in the bacon bits. Serve over egg noodles.

CREAMED SPINACH
Steps:
- In batches, saute the spinach in a large saute pan over high heat until wilted, 2 to 3 minutes. Transfer to a plate and set aside.
- In the same pan, heat the olive oil over medium heat. Add the onions and garlic; cook until translucent, 5 to 8 minutes. Add the butter and flour; cook for 2 minutes. Slowly whisk in the milk and bring to a boil (it will thicken as comes to a boil). Turn off the heat and stir in the Parmesan, nutmeg and sauteed spinach.
- Serve immediately or hold in a low oven.

- Heat 25g butter in a saucepan, then add 1 finely chopped small onion and cook for 5 mins until softened.
- Stir in 2 tbsp plain flour and cook for 2 mins, then slowly start to whisk in 200ml full-fat milk. When it has all been incorporated, gently cook for 5 mins until the sauce has thickened.
- Meanwhile, place two 200g bags spinach in a large colander. Pour over a kettle full of boiling water until the leaves have wilted (you may have to do this twice).
- Place the spinach in a clean dishcloth, squeeze out any excess liquid, then roughly chop.
- Stir into the sauce with 100ml single cream, gently heat, then finely grate over some fresh nutmeg and season well.

- In a medium saucepan, melt the butter. Add the shallot and garlic and cook over moderate heat, stirring occasionally, until softened, about 2 minutes.
