2 cups torn red leaf lettuce
1 can (15 ounces) mandarin oranges, drained
1/2 cup dried cranberries
1/2 cup chopped walnuts, toasted
DRESSING:
3 tablespoons walnut oil
2 tablespoons plus 1 teaspoon white wine vinegar
2 tablespoons canola oil
1 tablespoon minced fresh tarragon
1-1/2 teaspoons chopped shallot
1 small garlic clove, minced
3/4 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large salad bowl, combine the first five ingredients. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat.

½ cup sliced almonds
3 tablespoons white sugar
⅓ cup vegetable oil
3 tablespoons apple cider vinegar
hot sauce
2 ½ tablespoons white sugar
1 teaspoon salt
1 dash ground black pepper
1 (12 ounce) bag spring mix lettuce
1 (11 ounce) can mandarin oranges, drained
1 cup sliced fresh strawberries
1 cup chopped celery
½ cup chopped red onion
2 teaspoons chopped fresh parsley

Steps:

  • Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
  • Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Sprinkle the toasted almonds over the salad to serve.

1 bunch romaine lettuce, ripped into bite size pieces
1 cup celery, chopped
2 green onions with tops, chopped
1 (11 ounce) can mandarin oranges, drained
1/4 cup almonds
2 tablespoons sugar
1/4 cup salad oil
2 tablespoons apple cider vinegar
2 tablespoons sugar
1/2-1 teaspoon salt
3 dashes Tabasco sauce
fresh ground black pepper, to taste

Steps:

  • To Caramelize Almonds: Put almonds in a small skillet or saucepan. Sprinkle with sugar. Heat, stirring constantly, until light brown. Put almonds on waxed paper to cool.
  • For Dressing: Whisk all ingredients together until well mixed.
  • For Salad: Mix all salad ingredients, caramelized almonds and dressing.

This is one of my favorite salads to make for a gathering. It can be assembled early and just add the almonds and vinegrette at the last minute and toss. I got the recipie from my sister. It is one of her most recommended recipies. I can even get my carnivourous son to eat this because it's a little sweet :) Honestly, the number of servings is just a guess. Sorry.

1/2 teaspoon salt
1 dash black pepper, to taste
2 tablespoons sugar
2 tablespoons cider vinegar
1/4 cup oil
Tabasco sauce, to taste
1/4 cup slivered almonds
1 tablespoon sugar, plus
1 teaspoon sugar
1/4 head iceberg lettuce, broken
1/4 head romaine lettuce, broken
1 cup chopped celery
2 green onions, chopped
1 (11 ounce) can mandarin oranges

Steps:

  • For vinegrette:.
  • Combine salt, pepper, 2T.
  • sugar, vinegar, oil, and tobasco.
  • Shake or whisk to combine.
  • For candies almonds:.
  • Combine 1 T.
  • plus 1 teaspoons sugar in a small non-stick pan.
  • Stir over low hear until carmalized and brown.
  • Remove from pan onto waxed paper and separate as much as possible.
  • Allow to cool completely.
  • For Salad:.
  • Combine remaining ingredients.
  • Toss in vinegrette, then almonds.
  • Serve immediately.

SWEET AND CRUNCHY GARDEN SALAD



Sweet and Crunchy Garden Salad image

1 cup sliced or slivered almonds
1/2 cup sugar
1 head iceberg lettuce, rinsed
1 head romaine lettuce, rinsed
1 cup vegetable oil
1/4 cup red wine vinegar
1 tablespoon chopped fresh parsley
1 teaspoon salt
Dash of black pepper
Dash of cayenne
3 green onion (scallion) tops, thinly sliced
One 22-ounce can mandarin oranges, drained and chilled

Steps:

  • Mix the almonds with 1/4 cup of the sugar in a medium saucepan. Cook over medium heat, stirring as the sugar melts and the almonds brown. Carefully spread the almonds on an ungreased baking sheet to cool, using a metal spatula; the nuts will be very hot. When completely cooled, break the candied almonds into tiny pieces.
  • Tear the iceberg and romaine lettuce into pieces and transfer them to a salad bowl. Cover and refrigerate if not serving immediately.
  • Combine the oil, vinegar, remaining 1/4 cup sugar, and the parsley, salt, pepper and cayenne in a bowl, and mix well. Chill covered, in the refrigerator, until ready to serve.
  • Combine the lettuce, sliced green onions, candied almonds and orange segments in a large salad bowl. Just before serving, toss the salad with enough dressing to coat the greens.

I like to make this the day before and refrigerate, individually, in ziploc bags. When we are ready to eat mix together. (Add chow mein noodles last if desired. I don't use them at all)

1 head iceberg lettuce
3 tablespoons green onions (some tops)
2 tablespoons sesame seeds, toasted
1 (3 ounce) package almonds, toasted
1 (8 ounce) can mandarin oranges (drained)
5 ounces chow mein noodles (optional)
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup vinegar
3/4 cup salad oil

Steps:

  • Wash, dry and tear lettuce. I like to prepare my lettuce hours earlier and refrigerate in a ziploc bag, so that it will be crisp.
  • Wash and chop onions.
  • Toast sesame seeds and almonds in small skillet. I don't toast them together.
  • Drain mandrian oranges.
  • Prepare dressing.
  • Mix everything right before serving.
  • Add chow mein noodles last minute.

1 head romaine lettuce - rinsed, dried and chopped
2 (11 ounce) cans mandarin oranges, drained
6 green onions, thinly sliced
2 tablespoons white sugar
½ cup sliced almonds
¼ cup red wine vinegar
½ cup olive oil
1 tablespoon white sugar
⅛ teaspoon crushed red pepper flakes
ground black pepper to taste

Steps:

  • In a large bowl, combine the romaine lettuce, oranges and green onions.
  • Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
  • Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
  • Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

1/2 cup vegetable oil
1/4 cup cider vinegar
1/4 cup sugar
2 tablespoons finely chopped fresh parsley
1 teaspoon salt
1/4 teaspoon hot pepper sauce
1 cup sliced almonds
1/3 cup sugar
1 head iceberg lettuce
1 head romaine lettuce
2 cups chopped celery
2 (11 ounce) cans mandarin oranges, drained
1 cup thinly sliced red onion

Steps:

  • Shake first 6 dressing ingredients in a jar and refrigerate.
  • Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize and almonds are very lightly toasted.
  • Scrape into metal bowl and cool to room temperature.

This salad blends all the flavors together well, it is a great side to just about anything. Easy to put together and chill while you cook other things.
