SALMON, SPINACH MANDARIN ORANGE SALAD



Salmon, Spinach Mandarin Orange Salad image

Salmon, spinach, berries, and mandarin orange combine to make this spectacular salad the star of the show.

2 cups baby spinach leaves
8 ounces cooked salmon
2 mandarin oranges (peeled and divided into segments)
1/2 cup fresh blackberries
1/4 cup sliced scallions
1/4 cup pumpkin seeds
juice of one lime
1 tbsp sesame oil
1 tbsp liquid honey

Steps:

  • Divide spinach between two plates
  • Arrange salmon, orange segments and blackberries, scallions, and pumpkin seeds over the spinach on each plate
  • Whisk together lime juice, sesame oil, and honey, and drizzle over each salad.

A light and wonderful departure from the normal "heavy" salmon dishes! Easy to make and is out of this world! Enjoy!

2 lbs sockeye salmon
2 bunches green onions
4 mandarin oranges
1/4 cup low sodium soy sauce
1/3 cup honey
1 teaspoon minced garlic
1 teaspoon ginger paste

Steps:

  • Preheat oven to 375°F.
  • Cube the salmon (skin on) into 2-3 inch pieces and place in a ziplock bag.
  • Take the green onions and trim and cross cut into 2 inch pieces and make a single layer in the bottom of a 9-inch square Pyrex baking dish.
  • Juice the mandarin oranges and combine with all the other ingredients to make a marinade for the salmon.
  • Marinate the salmon for 15-20 minutes.
  • Remove the salmon from the marinade and place, skin-side up over the onions. pour the marinade evenly over salmon.
  • Place in preheated oven and bake uncovered for 30 minutes or until salmon is cooked through and flakes easily with a fork.
  • Serve over rice, spooning onions and juice over all!
  • Enjoy!

Teriyaki Roasted Salmon with Oranges, Fingerling Potatoes and Haricots Verts image

Cooking spray
2 pounds salmon fillets, 6 fillets or 2 whole sides
Salt and freshly ground black pepper
1/2 cup reduced-sodium soy sauce
2 tablespoons molasses
1 tablespoon brown sugar
3 cloves garlic, minced
1 (11-ounce) can mandarin oranges, drained
1 pound fingerling potatoes or Yukon gold potatoes, cut into thin strips
2 cups haricots verts or string beans

Steps:

  • Preheat oven to 400 degrees F.
  • Coat a large roasting pan and large baking sheet with cooking spray.
  • Season salmon with salt and pepper and place in prepared roasting pan. In a small bowl, whisk together soy sauce, molasses, brown sugar, and garlic. Pour mixture over salmon in pan. Arrange oranges over salmon, set aside.
  • Arrange potatoes and haricots verts on baking sheet and spray with cooking spray. Season with salt and freshly ground black pepper.
  • Roast salmon and vegetables for 20 to 25 minutes, until fish is fork-tender and potatoes are golden brown and tender. Remove from oven.
  • Serve about 2/3 of the salmon, about 16 ounces or 4 fillets with all of the vegetables. Reserve remaining salmon about 8 ounces or 2 fillets for the linguine, if desired

This is my variation of a recipe from Martha Stewarts Everyday Food. This recipe really covers up any fishy flavor and it is super quick and easy. Hoisin sauce can be found in the oriental section of your grocery story... usually by the soy sauce. This recipe works for 2-4 salmon pieces. Enjoy!

2 -4 pieces salmon
coarse salt
ground pepper
1 (11 ounce) can mandarin oranges, drained (save juice for glaze)
1 1/2 tablespoons mandarin orange juice
2 tablespoons hoisin sauce
2 teaspoons honey (less if you don't like it so sweet)

Steps:

  • Mix together glaze.
  • Rinse salmon and pat dry. Season both sides with salt and pepper. Place salmon in a baking dish and pour glaze over top.
  • Place drained oranges on top.
  • Broil salmon 4" from heat source for 10-13min.

  • Open and drain mandarin oranges reserving the liquid. Place salmon in a shallow glass dish. Prick flesh with a fork. Mix one teaspoon each of salt and pepper with the mandarin juice. Drizzle on the salmon. Set aside for 15 minutes.
  • MAKING SAUCE: Heat the gas grill to 400 to 450. Coat a skillet with cooking spray and put 1 ½ cups of the mandarin oranges (with juice) in. Place skillet on medium hot grill blaze and sauté 5 minutes. Put 6 green onions on the hot grill, turn and cook until they are charred. Remove, let the onions cool then chop onions into pieces. Put oranges & onions into a food processor and blend. Put mixture in a saucepan and heat on a medium high blaze on grill.
  • Add to this saucepan the remaining mandarin juice, sweet and spicy sauce, marmalade, salt and pepper. Reduce heat to medium low. Stir occasionally and let this cook about 20-30 minutes to thicken. Remove from heat. Add mayonnaise and blend. Slice the remaining green onions/tops and add to sauce.
  • GRILLING SALMON: Coat grill with cooking spray. Heat to 400 to 450. Place salmon (skin side up first) on grill and cook on each side about 4-5 minutes.
