I learned how to make this salad while visiting England with a friend. When I made it for a family reunion, everyone asked for the recipe.

2 cups cooked rice
2 cups chopped green onions
1 can (15 ounces) mandarin oranges, drained
1 cup salted peanuts
1 cup mayonnaise
Salt and pepper to taste
Leaf lettuce

Steps:

  • In a bowl, combine the rice, onions, oranges, peanuts, mayonnaise, salt and pepper; mix well. Cover and refrigerate for at least 1 hour. Serve in a lettuce-lined bowl if desired.

1 cup frozen shelled edamame
2 oranges
1/3 cup creamy peanut butter
2 tablespoons plus 1 teaspoon low-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon Sriracha
Freshly ground pepper
1/2 large head iceberg lettuce, chopped
2 cups watercress, trimmed
1 cup crunchy chow mein noodles
2 1/2 cups shredded rotisserie chicken (about 12 ounces)
1 cup shredded carrots (about 2 carrots)

Steps:

  • Bring a small saucepan of salted water to a boil. Add the edamame and cook until tender and bright green, about 3 minutes. Drain and rinse under cold water; set aside.
  • Cut the top and bottom off each orange, then cut off the peel and white pith. Holding an orange over a small bowl to catch the juice, cut along the membranes to remove the orange segments, letting them fall into the bowl. Squeeze any juice from the membranes into the bowl. Repeat with the other orange.
  • Whisk the peanut butter, 1/4 cup water, 2 tablespoons of the orange juice, the soy sauce, vinegar, Sriracha and 1/8 teaspoon salt in a small bowl. Toss the lettuce, watercress and half of the chow mein noodles in a large bowl. Divide among plates and drizzle with half the dressing. Top with the chicken, edamame, carrots, orange segments and remaining noodles. Season with salt and pepper and drizzle with the remaining dressing.

Number Of Ingredients 12

2 oranges
1/4 cup (or more) fresh lime juice
2 tablespoons vegetable oil
1 tablespoon fish sauce (such as nam pla or nuoc nam; optional)
2 cups black rice (preferably Lotus Foods Forbidden Rice)
Kosher salt
2 just-ripe mangoes, peeled, pitted, cut into 1/2" dice
1 cup fresh cilantro leaves
1 cup finely chopped red onion (about 1/2 large onion)
1/2 cup unsalted, dry-roasted peanuts
6 scallions, thinly sliced
2 jalapeños, seeded, minced

Steps:

  • Remove peel and white pith from oranges. Working over a medium bowl to catch juices and using a small sharp knife, cut between membranes to release orange segments into bowl. Squeeze membranes over bowl to release any juices. Strain juices through a fine-mesh sieve into a small bowl; reserve orange segments.
  • Add 1/4 cup lime juice, oil, and fish sauce (if using) to bowl with orange juice; whisk to blend. Set dressing aside.
  • Bring rice and 2 3/4 cups water to a boil in a large saucepan. Season lightly with salt. Cover, reduce heat to low, and simmer until all liquid is absorbed and rice is tender, about 25 minutes. Remove pan from heat and let stand, covered, for 15 minutes. Spread out rice on a rimmed baking sheet, drizzle with dressing, and season lightly with salt; let cool.
  • Place mangoes and remaining ingredients in a large bowl. Add rice and toss gently to combine. Season lightly with salt and more lime juice, if desired.

RICE NOODLE SALAD

You can use Southeast Asian rice sticks or Chinese cellophane noodles (made from bean starch) for this Thai salad. It makes a satisfying lunch, or serve it as a starter or side dish (it will serve up to 6 as a side).

1/4 cup fresh lime juice
2 tablespoons Thai fish sauce or 1 tablespoon soy sauce
1 teaspoon sugar
2 to 3 teaspoons finely minced ginger (to taste)
1/2 teaspoon red pepper flakes, or a pinch of cayenne
2 tablespoons Chinese sesame oil
2 tablespoons canola oil
3 ounces dried rice noodles (rice sticks) or cellophane noodles
1/2 small Napa cabbage or 1 romaine heart
3 scallions, cleaned and thinly sliced on the diagonal (optional)
1 cup coarsely chopped cilantro
1 medium carrot, grated or cut in fine julienne
Lettuce leaves for the bowl or platter

Steps:

  • Mix together the dressing ingredients. Taste and adjust seasonings. Place the rice or cellophane noodles in a bowl and cover with warm water. Soak for 20 minutes, and drain.
  • Bring a large pot of water to a boil and add the noodles. Cook about 1 minute, or until tender. Drain well and coarsely chop using scissors. Toss with all but 2 tablespoons of the dressing.
  • If using Napa cabbage, cut the halved cabbage in half again, cut out the core, then slice crosswise into thin strips. If using romaine, cut in half, then slice crosswise into thin strips. Toss with the noodles, along with the scallions, cilantro, and carrot.
  • Line a platter or bowl with lettuce leaves and pile on the salad. Spoon on the remaining dressing, and serve.

The best thing about this salad is how it comes together in no time at all. Asian rice noodles generally cook more quickly than wheat noodles and with the addition of the precut coleslaw mix the prep time is very minimal.

1 (8-ounce) box Asian brown rice (whole-grain) noodles
1/4 cup soy sauce (preferably reduced-sodium)
1 tablespoon rice vinegar
2 teaspoons fresh lime juice (from 1/2 lime)
2 teaspoons honey
2 teaspoons toasted sesame oil
1 teaspoon minced fresh ginger
1 garlic clove, minced
3/4 cup fresh cilantro leaves, chopped
3/4 cup chopped salted, dry-roasted peanuts or cashews
2 1/2 cups coleslaw mix (shredded green and red cabbage plus carrots, found in the produce aisle)
Red pepper flakes (optional)

Steps:

  • Cook the noodles according to the package directions. Drain and set aside in a large bowl to cool (a few minutes in the freezer can help!). Cut the noodles up a bit with kitchen shears or a knife to make them easier to toss.
  • In a small bowl, whisk together the soy sauce, vinegar, lime juice, honey, sesame oil, ginger, and garlic.
  • Add the sauce, cilantro, peanuts, and slaw mix to the bowl with the noodles and toss until well combined. If desired, sprinkle in red pepper flakes to taste. Serve at room temperature or refrigerate for later.

With a little advance preparation, this spicy salad can be made in 30 minutes. You can cook the two kinds of rices together if you soak the red rice for an hour first; the antioxidant-rich pigment from the red rice will bleed into the white rice, turning it an attractive pale rusty color, which is nice. The marinade and the rice will keep for about 3 days in the refrigerator. The baked tofu will also keep, in the marinade, for a couple of days.

1/2 cup red rice, soaked for 1 hour and drained
1 cup basmati or jasmine rice, rinsed
2 1/2 cups water
Salt to taste (I use about 3/4 teaspoon)
1/2 cup chopped cilantro
1/2 cup lightly toasted unsalted peanuts, chopped (about 2 ounces)
1 cup English peas, steamed for 5 minutes if using fresh, thawed if frozen
1 bunch green onions or, chopped, or 1/4 cup chopped chives
1 to 2 serrano chiles or bird chiles, minced
Romaine or leaf lettuce for the platter or plates
1 avocado, sliced, avocado for garnish (1 avocado)
Black sesame seeds for garnish
1/2 tablespoon minced ginger
2 tablespoons soy sauce, preferably tamari
1 14-ounce block of organic extra-firm tofu (find one that is not too dry)
1 garlic clove, minced
1/2 tablespoon minced shallot
1/2 teaspoon cumin seeds, lightly toasted and ground
1/8 teaspoon of cayenne
1 tablespoon honey or agave nectar
2 tablespoons plus 2 teaspoons fresh lime juice
3 tablespoons toasted peanut oil
3 tablespoons grapeseed grape seed oil or canola oil (use 6 tablespoons if toasted peanut oil is not available)
Chopped cilantro (whatever is left of the bunch you use for the salad) or cilantro sprigs

Steps:

  • Combine the two kinds of two rices in a medium saucepan. Add water and salt to taste and bring to a boil. Reduce heat, cover and simmer 15 to 20 minutes, until rice is tender and all of the liquid in the pan has been absorbed. Remove from heat. Remove lid, place a clean dishtowel across the pan (not touching the rice) and return lid to the pan. Let sit undisturbed for 15 minutes or longer. Remove lid and towel, transfer to a bowl and allow to cool. Add cilantro, peanuts, peas, scallions or chives and chiles and toss together.
  • While rice is cooking, preheat oven to 375 degreesºF. Line a sheet pan with parchment. Pat tofu dry with paper towels and cut laterally into 4 equal squares, then cut squares into strips.
  • In a large, wide bowl whisk together soy sauce, ginger, garlic, shallot, cumin, cayenne, honey or agave nectar, 2 teaspoons of the lime juice, 3 tablespoons of the grape seed or canola oil, and cilantro to taste. Pat each square of tofu dry with paper towels, then dip into marinade, making sure to coat both sides. Transfer to baking sheet. Do not drain the marinade.
  • Bake tofu for 10 to 15 minutes, until the edges are just beginning to color and marinade sets on the surface. Remove from heat.
  • Add remaining lime juice to the marinade and whisk in remaining oil. Add to rice mixture and toss.
  • Line a platter or wide bowl, or individual plates with lettuce leaves and top with rice mixture. Lay tofu strips on top, garnish with avocado slices, black sesame seeds if desired, and cilantro, and serve.

3 ounces dry roasted peanuts

1/2 cup green bell pepper, chopped
1/4 cup dried sweetened cranberries
2 tablespoons cider vinegar
2 tablespoons honey

Steps:

  • In small saucepan, bring water to boil over high heat.
  • Stir in rice, & return to boil.
  • Reduce heat to low, cover & simmer 25 minutes or until rice is tender & liquid is absorbed.
  • With fork, fluff rice & spread out on greased baking sheet.
  • Cool to room temperature, about 30-40 minutes.
  • Meanwhile, place large skillet over medium-high heat.
  • Add peanuts & stirring frequently, toast 3-4 minutes, or until fragrant & beginning to lightly brown.
  • Place in medium bowl.
  • Add water chestnuts, snow peas, onion, bell pepper & cranberries, then add cooled rice.
  • In small bowl, combine vinegar, honey, soy sauce & pepper flakes.
  • Add to rice mixture, then toss to coat.

½ jalapeno pepper, seeded and minced

1 cucumber, halved lengthwise and chopped
