One word for this cake..its DELICIOUSSSSSS! Enjoy! My photos

Categories     Fruit Desserts

Time 1h5m

Number Of Ingredients 10

2 - 1/2 c flour
2 - 1/4 tsp baking powder
3/4 c butter, room temperature
2 - 1/2 c sugar, divided
4 eggs
11 oz can mandarin oranges, undrained
FROSTING
2 c whipping cream
1 box 3.4 ounce (4-serving size) box instant vanilla pudding ( i use french vanilla )
1 8-ounce can crushed pineapple, undrained

Steps:

  • 1. Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans.
  • 2. In a small bowl, whisk flour and baking powder. Set aside.
  • 3. Cream butter and 2 cups of sugar. Add eggs one at a time until all combined.
  • 4. Add entire can of mandarin oranges. Beat into batter, slightly crushing up oranges.
  • 5. Slowly add flour mixture until well mixed. Divide batter between 2 pans. Bake for 30 - 35 minutes, or until pick comes out clean.
  • 6. While cakes are baking, make the frosting. Whip cream with remaining 1/2 cup of sugar and pudding mix until stiff peaks form. Hand stir-in pineapple and juice. ( I had a few mandarin oranges left and threw them in along with the pineapple for color). Refrigerate till ready to use.
  • 7. When cakes are baked; cool in pans for 2 minutes. Remove from pans and completely cool on wire rack.
  • 8. I place 3 sheets of waxed paper on serving platter, to have a mess free plate after frosting. Just pull the sheets out from under the cake when frosting is finished.
  • 9. Place first cooled cake, bottom side up. Frost the top, add the second layer frost the top and sides. I sprinkled some toasted coconut on the top. Completely optional. Should refrigerate 1 hour prior to serving. My kids wouldn't wait till the cake had a chance to set up...so as to why filling looks a little soft..lol
  • 10. Enjoy!

NO COOK PINEAPPLE ORANGE ANGEL FOOD CAKE

No Cook Pineapple Orange Angel Food Cake image

Here's one of those "no cook quickie cakes" to put together when you are busy with other things. It's cool, low fat, fairly low sugar, yet has such a good flavor. I've seen similar recipes in magazines but they use pineapple and strawberries. My mother in law makes this with mandarin oranges and everyone loves it. I made a chocolate cake and this one when we had a crowd to feed, including 12 kids. This cake was gone and there was still half a chocolate cake left. Cooking time is really chilling time.

Provided by Monique in LA

Categories     Dessert

Time 2h2m

Yield 8-10 serving(s)

Number Of Ingredients 6

1 prepared angel food cake, ring (I buy the no sugar added one)
1 (20 ounce) can crushed pineapple, with liquid
1 (1 ounce) box instant vanilla pudding (sugar free, fat free)
2 (5 1/2 ounce) cans mandarin oranges, drained well
1 (8 ounce) container Cool Whip Lite, thawed
1 (5 1/2 ounce) can drained mandarin oranges (to garnish) (optional)

Steps:

  • Cut angel food cake into 2 or 3 layers.
  • Stir the crushed pineapple and vanilla pudding until blended.
  • Add madarin oranges, mixing well with pudding mixture. The orange sections will resemble the crushed pineapple when finished.
  • Fold in cool whip.
  • Frost layers of cake generously with this mixture and use remaining to "frost" the outside of the cake.
  • You can arrange more mandarin orange sections along the top of the cake if desired. Gives it some color.
  • Let chill for a couple of hours, if you can wait that long.
  • Last time I wanted to let it "chill" it was gone before the chill time was finished.

MANDARIN ORANGE CAKE

Mandarin Orange Cake image

This was a favorite cake growing up. The middle gets sunken, all good from the topping sinking into it. You may wnat to double the topping so you can pour extra over the edge pieces of the cake, they don't seem to get as much of the topping sinking in as it all flows to the middle of the cake.

MANDARIN ORANGE CAKE WITH PINEAPPLE FROSTING

Mandarin Orange Cake with Pineapple Frosting image

My aunt made this for Easter, and everyone loved it...no leftovers:(It is very simple and makes a nice presentation. I am not a big fan of mandarin oranges, but this cake is divine. I chop up the oranges just because I don't like big hunks of oranges, but you can leave them whole if you wish. A must try!! Baking time is approximate.

  • Heat oven to 350°. Prepare a 9x13 baking dish by spraying with cooking spray. Set aside.*If wanted, you can make this recipe in 3 (8" or 9") round cake pans for a layered cake. I prefer it in the 9x13 baking dish so that's what I do. The cake is so moist that sometimes it's hard to get the layers to stay together and form. The frosting is also a looser frosting (aka - not stiff like a buttercream frosting) so it's easier to frost the 9x13 cake.
  • In a large bowl with a handheld mixer, or bowl of a stand mixer, combine the cake mix (do not prepare just add the dry cake mix), mandarin oranges (juice and all), oil, sour cream, and eggs. Beat together for 1-2 minutes until completely combined and oranges are broken up.
  • Pour into the prepared pan. Bake for 25-30 minutes or until sides start to pull away from the pan and a toothpick inserted into the middle of the cake comes out with moist crumbs only.
