PINA COLADA SORBET

Steps:
- Puree all of the sorbet ingredients in a blender until smooth and refrigerate for 1 hour. Add the mixture to an ice cream machine and run until slushy. Freeze until solid. Serve with Coconut Whipped Cream, shredded coconut, cherries and cocktail umbrella in coconut shells.;
- Add the whipping cream to a chilled bowl and begin whipping with an electric mixer. Add the remaining ingredients and whip until soft peaks form. Serve on top of sorbet.

This is my sorbet version of a favorite drink - Pina Colada! It's creamy, cool, pineapple-coconutty and a wonderful summer dessert. Enjoy!

Steps:
- Make a syrup by bringing the sugar and water to a boil in a small saucepan over high heat, stir and boil until the liquid becomes clear, about 1 minute. Set aside to cool.
- Blend the drained pineapple in a blender or food processor until very smooth and frothy. In a large bowl, whisk together the syrup, pineapple puree, coconut milk, and lime juice. Refrigerate until chilled, about 3 hours.
- Freeze in the freezer canister of an ice cream maker according to the manufacturer's directions.

BANANA SORBET (RAW FOOD)
This very simple recipe was found on the internet with the stipulation "...super easy to make -- as long as you have a juicer." Well, all you really need is a good, ol' fashioned potato masher & you're on! This will melt quickly, so make just enough to eat right away, or you'll need to stash some away in the freezer! Obviously, if you use very ripe bananas you'll have a stronger banana flavor!

BANANA CITRUS SORBET
A friend who loved to entertain gave me the recipe for this lovely sorbet. Serving it as a refreshing special course adds a bit of elegance to my favorite meal. If you don't have an ice cream freezer, put the mixture into ice cube trays and stir occasionally while freezing. Mix in a blender when ready to serve.

- Place lemon juice and bananas in blender; cover and process until smooth. Add sugar; cover and process until blended. Transfer to a large bowl; stir in water and orange juice. , Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer to a freezer container, allowing headspace for expansion. Freeze 2-4 hours before serving. Repeat with remaining sorbet mixture. May be frozen up to 1 month.

AMAZING BANANA SORBET
This recipe is great for hot summer afternoons, or when you're just craving a cold snack! It is easy to make and uses only 3 simple ingredients. For one cup of mashed bananas, you will need about 3 bananas.

- In a small saucepan, stir together sugar and water. Bring to a boil, then remove from heat and allow to cool.
- When the sugar syrup is cool, stir in bananas. Pour into a freezer - safe baking dish. Freeze for 3 to 4 hours, until set at the edges.
- Remove from the freezer and transfer to a mixing bowl. Use an electric mixer to beat until smooth. Return to the freezer until gently set, at least 2 hours.

Steps:
- Mash bananas until smooth, stir in lemon juice.
- In a small saucepan, bring water and sugar to a boil over high heat; reduce heat to medium and simmer for 2 minutes, until slightly thickened. Let cool to room temperature. (to speed up cooling of syrup place in fridge for 40 - 45 minutes.).
- Stir cooled syrop into banana puree.
- Freeze in ice cream maker according to manufacturers directions.
- OR.
- Place in a shallow pan covered with plastic wrap for at least 4 hours.
