3 cups fresh gooseberries
2 cups white sugar
3 tablespoons quick-cooking tapioca
½ teaspoon salt
1 recipe pastry for a 9 inch double crust pie
2 tablespoons milk
1 ½ tablespoons white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a baking sheet on a lower oven rack.
  • Stem and rinse berries.
  • Crush 1/2 cup berries in the bottom of a saucepan. Combine sugar, tapioca, and salt; mix with crushed berries. Cook and stir until mixture boils. Cook for 2 more minutes. Remove from heat, and add in remaining whole berries.
  • Pour fruit filling into pastry. Adjust top crust; cut slits to allow steam to escape. Brush top crust with milk and sugar.
  • Bake in preheated oven on baking sheet until crust is golden brown and filling is bubbly, about 35 minutes.

I grew up eating this as a child...My mom made the best Sour Cream Gooseberry Pie ever...We have always loved this pie...It has a flavor all it's own...

2 refrigerated pie crusts (top and bottom)
PIE FILLING
1 1/4 c fresh gooseberries
1 c brown sugar packed
2 1/2 Tbsp flour
1 tsp lemon juice
1 c sour cream
2 large eggs beaten
1 Tbsp cream sherry
2 tsp nutmeg (divided)
1 Tbsp raw sugar

Steps:

  • 1. Preheat the oven to 350*. In a medium bowl, gently stir together the gooseberries ,brown sugar, flour. Let stand for 15 minutes. Press one of the pie crusts into a 9 inch pie plate.
  • 2. In a medium bowl, stir together the lemon juice, and the sour cream, eggs and sherry. Add the gooseberry and sugar, nutmeg (divided) mixture, and stir to coat evenly. Spoon into the pie crust, and place the second crust over the top. Crimp the edges to seal, and cut some decorative slits in the top to vent steam. Sprinkle top with raw sugar, and nutmeg (divided)
  • 3. Bake for 55 minutes in the preheated oven. Cool to room temperature, then refrigerate until serving.

1 cup raisins
2/3 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
1/8 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 cup sour cream
1/2 cup 2% milk
3 large egg yolks, room temperature
1/2 cup chopped nuts, optional
1 pie shell (9 inches), baked
MERINGUE:
3 large egg whites, room temperature
1/4 teaspoon salt
6 tablespoons sugar

Steps:

  • In a small saucepan, place raisins and enough water to cover; bring to a boil. Remove from the heat; set aside. , In a large saucepan, combine the sugar, cornstarch, salt, cloves and cinnamon. Stir in sour cream and milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir for 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat., Drain raisins, reserving 1/2 cup liquid. Gently stir liquid into filling. Add raisins, and nuts if desired. Pour into pie shell. , For meringue, in a small bowl, beat egg whites and salt on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edge to crust. , Bake at 350° for 15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving. Refrigerate leftovers.

Martha grows gooseberries, which inspired this pie, in her garden in Bedford, New York. Although their season is short (early summer), gooseberries are worth seeking out for their unique flavor. They can be very tart, so increase the sugar if you prefer your pie on the sweet side.

Yield makes one double-crust 9-inch deep-dish pie

Number Of Ingredients 19

All-purpose flour, for dusting
Tender Pie Dough (recipe follows)
6 cups fresh gooseberries, stemmed
1 1/2 cups granulated sugar
2 tablespoons instant tapioca
1 teaspoon ground cinnamon
Juice of 1/2 lemon (about 1 tablespoon)
1/4 teaspoon salt
1 1/2 tablespoons unsalted butter, cut into small pieces
1 large egg yolk
1 tablespoon heavy cream
Sanding sugar (or granulated sugar), for sprinkling
2 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon sugar
1 stick (1/2 cup) unsalted butter, cold, cut into small pieces
1/2 cup (4 ounces) vegetable shortening, cold, cut into small pieces
1/2 cup ice water, plus more if needed
(makes two 8-inch single-crust pies or 10-inch double-crust pie)

Steps:

  • On a piece of parchment generously dusted with flour, roll out one disk of dough to a 12-inch round. With a dry pastry brush, sweep off excess flour; fit dough into a 9-inch glass pie plate, pressing it into the edges. Trim dough to a 1/2-inch overhang all around. Roll out remaining disk of dough in the same manner; transfer (on parchment) to a baking sheet. Chill pie shell and dough until firm, about 30 minutes.
  • In a large bowl, toss together the gooseberries, granulated sugar, tapioca, cinnamon, lemon juice, and salt. Spoon into pie shell, mounding slightly in the center. Dot with butter. Lightly brush rim of pie shell with water. Center the remaining rolled dough on top of the fruit; gently press over the berries. Gently press the top and bottom pieces of dough together to seal. Using kitchen scissors, trim top piece of dough to a 1-inch overhang all around. Tuck dough under, and crimp edge as desired.
  • Using a 1-inch round cookie cutter, make cuts in the top crust to allow steam to escape (do not remove rounds of dough). In a small bowl, whisk together egg yolk and cream; brush egg wash over entire surface of pie, being careful not to let it pool. Sprinkle pie generously with sanding sugar. Freeze or refrigerate pie until firm, about 30 minutes. Meanwhile, preheat the oven to 400°F, with the rack in the lower third.
  • Place pie on a parchment-lined baking sheet. Bake until the crust begins to turn golden, about 20 minutes. Reduce oven temperature to 350°F. Continue baking, rotating sheet halfway through, until crust is deep golden brown and the juices are bubbling and have thickened, 40 to 50 minutes more. Transfer the pie to a wire rack to cool completely. The pie is best eaten the same day it is baked, but it can be kept at room temperature, loosely covered with plastic wrap, for up to 2 days.
  • Place the flour, salt, and sugar in the bowl of a food processor fitted with the metal blade. Add the butter and shortening, and process just until the mixture resembles coarse crumbs, about 10 seconds. (To mix by hand, combine the dry ingredients in a large bowl; use a pastry blender to cut in the butter and shortening.)
  • With the machine running, pour ice water through the feed tube in a steady stream until the dough just holds together without being too wet or sticky; do not process more than 30 seconds. Test the dough by squeezing a small amount together: If it is crumbly, add a bit more water.
  • Turn out the dough onto a work surface. Divide in half. Place each half on a sheet of plastic wrap; flatten into disks. Wrap in plastic, and refrigerate at least 1 hour or up to 2 days. Dough can be frozen, wrapped in plastic, up to 3 weeks; thaw in refrigerator.

1 cup sugar
4 teaspoons cornstarch
1/4 teaspoon salt
1 3/4 cups nonfat sour cream
3 egg yolks
1 teaspoon grated orange rind
1 tablespoon orange juice
1 1/2 cups sweetened dried cranberries
3 egg whites
1/2 teaspoon cream of tartar
1/4 cup sugar
1/2 teaspoon vanilla

Steps:

  • Heat oven to 450 deg F.
  • Prepare and bake pie crust as directed on package for one-crust baked shell using 9 inch pie pan.
  • Cool 30 minutes or until completely cooled.
  • Reduce oven temperature to 400 deg F.
  • During last 10 minutes of cooling time, in medium saucepan, combine 1 cup sugar, cornstarch and salt; mix well/ Stir in all remaining filling ingredients (sour cream to cranberries).
  • Bring to a boil, stirring constantly.
  • Cook over medium heat for 1 to 2 minutes or until thickened, stirring constantly.
  • Remove from heat; cool 5 minutes.
  • Meanwhile, in large bowl; beat egg whites and cream of tartar until foamy.
  • Gradually beat in 1/4 cup sugar until stiff peaks form.
  • Beat in vanilla.
  • Pour hot filling into cooled baked shell.
  • Spoon meringue over filling sealing to edge of crust to prevent shrinking or weeping.
  • Bake at 400 deg F for 8 to 10 minutes or until light golden brown.
  • Cool on wire rack for at least 45 minutes or until slightly cooled.
  • Serve immediately, or refrigerate until serving time.
  • Store in refrigerator.

1 c brown sugar
1 c butter, room temperature
1 3/4 c quick oatmeal
1 tsp baking soda
1 3/4 c all-purpose flour
3 egg yolks, well beaten
1 1/2 c sour cream
1 c sugar
2 1/2 tsp corn starch
1 tsp vanilla extract

Steps:

  • 1. Soak raisins in some hot water until soft. Then drain water off of raisins and cool. Set aside.
  • 2. Cream butter and sugar well. Add the oatmeal, soda, and flour. Mix well and pat 1/2 of the mixture in a 9"x13" pan. Bake at 350 degrees for 7 minutes.
  • 3. In a large saucepan, cook the egg yolks, sour cream, sugar, and corn starch. Cook until thick, stirring constantly. Add raisins and vanilla.
  • 4. Pour cooked mixture over the crust. Sprinkle remaining crumbs over top of mixture. Bake for 30 more minutes.
