MAMA'S GOULASH
Recipe by Dee Hutchins-Reynozo ~ I remember my mama making this classic one-pot-wonder for us when we were kids. It makes me feel all warm and fuzzy inside just thinking about it!

Steps:
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add the ground beef. Break up the meat with a wooden spoon and brown until no longer pink. Drain excess fat.
- Add onions, celery, green pepper, and garlic. Cook until the veggies are tender about 3-5 minutes.
- Add beef broth, crushed tomatoes, diced tomatoes with juice, Worcestershire sauce and seasonings; stir well.
- Stir in macaroni until well combined. Cover with a lid and simmer for 18-20 minutes. Remove from heat. Top with shredded cheese and garnish with fresh chopped parsley.
MAMA'S GOULASH RECIPE
Deliciously seasoned tomato based macaroni and ground meat mixture that only takes minutes to make.

- In a large skillet, brown & crumble meat until no longer pink. Drain off excess fat. Add remaining ingredients except macaroni. Stir and bring to a boil. Lower heat and simmer for 15 minutes. Add macaroni and continue to simmer for an additional 20 minutes or until macaroni is tender. Serve.
MOM'S SIMPLE GOULASH
I actually think my mom got this from an aunt of mine...so simple and you can add anything! We added a couple of things to the original...

- Fry hamburger, pepper, and onion in large skillet.
- Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
- Add remaining ingredients and heat well.
- Add macaroni and heat through.
MOMS' HUNGARIAN GOULASH
My mom makes great goulash. Being Hungarian, on my mothers' side, I learned very early how to make goulash. It's a staple in my house during those cold winter months. I've made it with beef, pork, lamb even chicken. Great when you're on a budget. BUT, you have to use Hungarian paprika, it's a whole other flavor! Goulash should be thick and you should be able to taste the paprika! I've seen some recipes and well they aren't authentic.

- Which ever type of meat you use, cut into bite size pieces and set aside. Roughly chop your onions and peppers and in large pot add oil, onions, peppers and saute til soft add meat and just brown slightly. Add paprika, cayenne (if using). To this also add your flour and stir until combined. Don't add all 4 cups of water at once! Add enough water to just cover (you should still be able to see the meat - too much water and you'll make soup).
- Cover and bring to boil. Once this boils, lower heat to med low and let simmer for about 1 1/2 hours. It has to cook slowly to really absorb flavors and the meat must be very soft. Stir occasionally so that the bottom doesn't stick and burn and if you need to add LITTLE bit of water. It has to be thick once it's cooked through.
- Test your meat for doneness, if it's easily cut with a fork it's good. Season with salt and pepper. You can serve with cooked noodles, rice or mashed potatoes.
- We do the mashed potatoes. And if we have leftover mashed potatoes (I make a lot of mashed potatoes!) I always make my "Potato Fake Out".
MOM'S GOULASH
This is a wonderful and simple recipe from my German Mother. I usually make this soup a day before serving since it tastes better the day after making it.

Steps:
- Season beef with salt, pepper, and paprika.
- Brown seasoned beef and onion in oil until all sides are brown. Cover with water and simmer for 3 to 4 hours or until tender. Add water whenever level goes below the ingredients.
- An hour before serving, add potatoes and chili.

- In a large pot brown hamburger with onion.
- In a separate pot cook noodles.
- Drain excess fat from hamburger.
- Add mushrooms, celery, tomatoes, catchup, salt and pepper to hamburger.

MEMA'S HAMBURGER MACARONI CASSEROLE (GOULASH)
A family favorite! The casserole everyone grew up on! Comfort food! The secret to this dish is to layer noodles, sauce and cheese. The other is to not add water, because sauce should be thick.

- In large dutch oven brown ground beef and drain. Sautee onion. Add jar of spaghetti sauce. Stir in garlic powder, worcestershire sauce, ketchup, Italian seasoning, sugar, salt and black pepper.
- Simmer covered on very low heat for 30 minutes.
- Boil elbow macaroni noodles in salted water until done. Drain noodles.
- In a 9 x 9 casserole dish layer noodles, sauce and cheese. Repeat, ending with cheese on top. Bake in a 350 degree oven for 15 minutes until hot throughout and cheese is melted. Serve and enjoy!
MAMA'S DINNER IN A DASH
Called 'hot dish' or 'goulash' in my family this was basically a dish that we probably ate weekly when I was growing up. Most likely because it was fast, tasty, filling and well... cheap! lol Feel free to put in 'whatcha got' and leave out 'whatcha dont got'! If you like it spicy try adding some salsa with the tomatoes or add a dash or two of hot sauce on your plate. You can toss in some herbs and spices if you like or just have it as is. This is comfort food to me. Note: I like this better with the pasta cooked separately as it seems to come out more al dente. There is a lot to be said though for LESS dishes so sometimes I cook the pasta as listed below, all in the same pan! Hope you enjoy!

- Heat skillet then spray well with cooking spray or add a little oil. Toss in chopped onions and let them sweat til they start to turn clear. Add garlic and cook just until it gives off some good aroma.
- Add ground beef or turkey and brown well. Drain well. (Later when health was an issue we would brown the meat first, then drain and rinse with water and leave to drain in the strainer in the sink while we cooked the onion and garlic. Then returned the meat to the pan.).
- Add everything but cheese leaving the macaroni raw when adding- it cooks in the pan. Cook for 15 to 20 minutes or until macaroni is tender.Top with cheese if you have it and serve!
- Note: To make this stretch even more you can make a batch of biscuits or- gulp- open a can- and put them on top. Pop into the oven and bake accordingly.

MOM SYKES' HUNGARIAN GOULASH

- Melt butter in a large pot over medium heat. Add the stew meat, caraway seeds, onion and paprika. Cook and stir until the meat is browned, and the onions are translucent. Add the garlic and lemon zest, and cook for about a minute, then stir in the tomato paste and beef consomme, adding water if necessary to cover the meat. Cover, and simmer over medium-low heat for 1 1/2 hours.
- Just before the meat is done cooking, bring a large pot of salted water to a boil. Add egg noodles, and cook until tender, about 8 minutes. Drain and serve the goulash spooned over the egg noodles.

I make this a lot. Ours is a different variation and simpler. I put peas in mine; the boys leave them out, lol. My sister said I was not remembering that Mom used corn instead of peas. I checked and, yes, the heifer was right, grrr, lol, so you can put corn in too.

- Saute hamburger with chopped onion. Drain grease.
- Add Worcestershire sauce, salt and pepper.
- Cook macaroni in boiling water until tender; drain.
- Add cooked macaroni to hamburger.

One of my all-time favorite comfort food meals growing up was the beef goulash they served in my school cafeteria alongside a slice of buttered white bread and a carton of milk. Little did I know that it wasn't really goulash, but an Americanized version, invented to stretch a small amount of beef into enough food for a not-so-small family. This is one of those very simple dishes that does not taste simple--perfect for your weeknight dinner rotation.

- Heat oil in a pot over medium-high heat. Add onion and ground beef. Cook, breaking the meat into small pieces, until browned, about 5 minutes. Cook and stir until liquid is evaporated, 3 to 5 minutes more. Add garlic, salt, black pepper, cayenne, paprika, Italian seasoning, and bay leaves.
- Cook and stir until flavors come together, about 3 minutes. Pour in chicken broth, diced tomatoes, and marinara sauce. Rinse out the jar with 1 cup water and pour into the pot. Add soy sauce, stir, and bring soup to a simmer. Reduce heat to medium and simmer to let flavors intensify, about 30 minutes.
- Increase heat to medium-high and bring soup to a simmer. Add macaroni; simmer, stirring occasionally, until just barely tender, about 12 minutes. Check for doneness after 10 minutes.
- Remove goulash from heat. Discard bay leaves; stir in parsley and Cheddar cheese. Cover and let rest for 5 minutes. Taste and season as desired.

- In medium bowl, combine first 7 ingredients (beef, sausage, bread crumbs, egg, Pecorino Romano, pepper, and kosher salt). With hands, combine until mixed well.
- Preheat a couple of turns of olive oil in a large nonstick skillet over medium-high heat. Add meat mixture to skillet and brown meat, stirring occasionally. (about 5-6 min) You want it to be a little browned, not just cooked.
- When meat is cooked through, put meat in a bowl or plate and set aside. Reduce heat to medium and add the onions, celery, and green peppers to the skillet, stirring occasionally. (about 4-5 min)
- Meanwhile, fill large pot with water and add about 1 teaspoon of salt to water. Boil water and cook pasta according to package directions. When cooked, drain pasta.
