SWEET AND SOUR HAM

Sweet and Sour Ham image

I CAME UP with this recipe several summers ago. I had a ham in the refrigerator and was trying to avoid heating up the kitchen by preparing it in the oven. The stovetop was the solution. Ever since, this recipe has been my standby for when I have leftover ham. Served over rice, it's delicious! -Diane Widmer Blue Island, Illinois

Provided by Tiomarrano

Categories     One Dish Meal

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 14

3 cups cooked ham
1 large onion, diced
1 medium green bell pepper, rough cut
1 cup pineapple chunk (in unsweetened natural juice)
2 teaspoons dry mustard
1/2 cup brown sugar
1 cup white sugar
1/3 cup vinegar (or to taste)
1 cup retained pineapple juice, from canned pineapple in natural juice
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
3 tablespoons cornstarch
2 tablespoons margarine
1 cup almonds (slivered and browned in butter or 1 cup cashews)

Steps:

  • Note: If you are going to use the slivered almond topping instead of the cashews (one of two optional toppings for this dish) then do this step first. Roast slivered almonds in a little butter in a hot skillet until browned. Remove from skillet and set aside.
  • Note: If you use pineapple that is in light syrup, then reduce the amount of white sugar by 1/2 cup. The recipe is for unsweetened pineapple in its natural juice. But some pineapple comes in light syrup. Just reduce the sugar amount in the recipe to compensate for the syrup.
  • Premeasure all the parts of the sweet sour sauce (the pineapple juice, the white sugar, the vinegar, brown sugar, dry mustard, Worcestershire sauce and soy sauce, and mix together in a large measuring cup or suitable bowl or dish Do not cook yet. Set aside mixture.
  • (At this point you can make the rice and set it to cooking over a back burner, as rice takes about 30 minutes or more to get done).
  • To assemble recipe: In a large skillet with margarine, sauté the ham, the onion and green pepper for about 3 to 5 minutes, until veggies are only part way cooked and still a little crunchy.
  • Add the pineapple chunks to the sautéeing ham, onion and bell pepper mixture and reheat, stirring pineapple in until mixed uniformly.
  • When the ham/veggie/pineapple mixture gets up to heated stage again, let it all sauté for about a minute or two.
  • Now add these previously combined sauce ingredients (both kinds of sugar, the vinegar, soy sauce, Worcestershire sauce and pineapple juice) to the sautéeing ham and veggie mixture.
  • Bring the resulting ham/veggie/pineapple mixture and sauce back up to the boiling point, covering the skillet and letting it all heat back up until it begins a gentle boil on medium high heat. Keep checking and stirring occasionally to prevent sticking.
  • In the meantime, while ham/pineapple mixture is heating up, mix the cornstarch into approx 1/2 cup very COLD water. Stir cornstarch until it thoroughly dissolves.
  • Now, when the sweet and sour ham and liquid sauce just reach boiling point, stir in the dissolved corn starch, all around, right into boiling sauce, stirring to spread the corn starch throughout the sauce using the flat side of a spatula in circular motions along the bottom of the pan in order to evenly it into every corner of the sauce.
  • Once the sauce thickens, lower heat to simmer while continuing to stir until the sauce is uniformly thickened.
  • After you reduce heat to simmer, cover the finished sweet/sour ham and leave on low simmer or warm setting until ready to serve. Check occasionally and stir to prevent sticking while waiting to serve.
  • In the meantime fluff finished rice.
  • Serve hot Hawaiian-style sweet/sour ham over the hot rice. Garnish each serving individually at table with as desired with either the toasted buttered almond slivers or with roasted cashews from a can of cashews.

ALOHA! SWEET & SOUR BURGERS

Aloha! Sweet & Sour Burgers image

My recipe for a great Hawaiian-style sweet-and-sour teriyaki burger, prepared with my Recipe #504527.

Provided by The Spice Guru

Categories     Pineapple

Time 50m

Yield 6 burgers, 6 serving(s)

Number Of Ingredients 26

1 lb 75% lean ground beef
12 ounces Spam, grated
6 tablespoons cold water
1/4 cup grated sweet yellow onion
1 1/2 tablespoons cornstarch
fine sea salt
fresh ground white pepper
1/2 cup pineapple juice
3 tablespoons dry sake
3 tablespoons teriyaki sauce
2 1/2 tablespoons brown sugar
2 1/2 tablespoons ketchup
4 teaspoons cornstarch
2 teaspoons lemon juice
1 teaspoon sriracha sauce
1/8 teaspoon garlic powder
1/8 teaspoon ground ginger
1/8 teaspoon minced onion flakes
6 slices havarti cheese
6 slices cooked crisp bacon (optional)
6 slices fresh pineapple, cored, trimmed, and sliced 1/2-inch thick
6 slices sweet red onions, sliced 1/4-inch thick
6 leaves fresh green leaf lettuce
1 (4 ounce) can diced green chilies, drained
6 king's original sweet hawaiian rolls
salted butter (lightly spread over bun halves)

Steps:

  • NOTES: IF YOU CANNOT FIND DRY SAKE, SUBSTITUTE IT WITH DRY SHERRY. YOU CAN SUBSTITUTE FRESH GARLIC AND GINGER WITH 1/8 TEASPOON EACH GARLIC POWDER AND GROUND GINGER. FOR A MILDER SAUCE, REDUCE THE AMOUNT OF SRIRACHA. DICED ROASTED RED PEPPER MAY BE USED IN PLACE OF DICED ROASTED GREEN CHILES. HAVARTI CHEESE MAY BE REPLACED WITH MONTEREY JACK OR PEPPER JACK CHEESE. USE ONLY KING'S HAWAIIAN BRAND ORIGINAL SWEET HAMBURGER BUNS.
  • PREPARE MEAT: Place 1 lb ground beef into a medium mixing bowl. Grate one loaf of SPAM over the ground beef. Mix 6 tablespoons cold water with 1 1/2 tablespoons cornstarch then pour over mixture. Grate 1/4 cup sweet onions into bowl. Wearing kitchen gloves, combine the meat mixture, squeezing it through the fingers until well combined.
  • PREPARE PATTIES: Shape meat mixture into 6 equal patties, about 1-inch larger in width than King's Hawaiian Hamburger Buns. Place patties on a platter. Sprinkle each patty on each side with fine sea salt and freshly ground white pepper. Refrigerate patties until ready to grill.
  • PREPARE SAUCE: Whisk all of the sauce ingredients in a small mixing bowl. Transfer sauce mixture into a non-stick skillet over medium-high heat. Bring to a boil, stirring constantly until completely thickened. Reduce heat to lowest setting and cover, stirring occasionally to refresh consistency.
  • PREPARE BUNS: Lightly and evenly butter each separated flat surface of King's Original Hawaiian Sweet Hamburger Buns. Attach buttered cut sides together and return to the original bag until needed, to keep fresh.
  • PREPARE FIXINGS: Cook the bacon if using, until crisp (2 slices per burger). Slice the vegetables and pineapple to specifications. Immerse the onion slices in the sauce. Cover and let heat. Turn once. Remove when onions have softened slightly.
  • PREPARE GRILL: Preheat your grill to medium-high heat. Arrange patties on one side of the grill. Place pineapple slices on the other side of the grill. Turn each when dark grill-marks appear. Remove patties and pineapple when done to your satisfaction.
  • TOAST BUNS: Place buttered buns sliced-side down on grill, just until medium-toasted.
  • ASSEMBLE BURGERS: Turn the grilled pineapple rings in the heated sauce, until well-coated, then remove. Spoon or brush the prepared sauce evenly across each cut top bun portion. Turn the grilled patties in the sauce pan to coat. Place the cheese slices over patties. Cover saucepan until cheese is melted. Transfer patties onto the bottom bun halves. Stir the drained green chiles well into the sauce mixture. Continue assembling burgers with the bacon (optional), then pineapple, sliced onion, and lettuce. Spoon the sauce over the grilled side of each top bun. Place top buns over each assembled burger.
  • SERVE IMMEDIATELY with Hawaiian potato chips, Maui onion rings or fries, and enjoy!
