Number Of Ingredients 14

1/4 cup sugar, plus 2-3 heaping Tbsp for dusting
2/3 cup whole milk
One 1/4-ounce package active dry yeast
3 1/2 Tbsp unsalted butter
2 1/2 cups all-purpose flour, plus extra for dusting
Pinch of sea salt
2 egg yolks
2-3 heaping Tbsp malt powder, such as Ovaltine, for dusting
Vegetable oil, for deep-frying
For the filling
1 cup heavy cream
2-4 Tbsp runny honey, to taste
9 ounces dark chocolate, chopped
4 Tbsp unsalted cold butter, cubed

Steps:

  • 1. Heat the sugar and milk in a pan for about 5 minutes until the milk is warm-105-115°F-and the sugar has dissolved. Place the yeast into a bowl, pour in half the warm milk, then mix and set aside. Place the remaining milk back on the heat and add the butter. Heat gently for about 3 minutes (be careful not to let the milk boil).
  • 2. Sift the flour and salt into a large bowl and make a well in the center. Add the egg yolks, yeasted milk, and the hot milk. Mix together, drawing in the surrounding flour to make a dough.
  • 3. Tip the dough onto a floured work surface and knead with floured hands for a few minutes until the dough is smooth and elastic. Dust with a little extra flour if the mix is too sticky. Place in a clean bowl dusted with flour. Cover with plastic wrap to keep the dough from forming a skin on top and leave to rise in a warm place for 1-11/2 hours until doubled in size.
  • 4. When the dough has risen, knock it back by giving it a thump and knead lightly on a floured work surface. Roll out the dough with a floured rolling pin to a thickness of about 3/4 inch and shape it into a 9 x 6-inch rectangle. Using a sharp knife, cut the dough into 12 rectangular pillows, then place on a baking sheet lined with parchment paper and leave to rise again for 30-40 minutes until doubled in size. (This will make the doughnuts light and fluffy once cooked.)
  • 5. Meanwhile, make the filling. Put the cream in a pan and mix in the honey to taste. Put the chocolate and butter into a heatproof bowl. When the cream is almost boiling, pour it over the chocolate mixture and stir until well mixed, smooth, and glossy.
  • 6. Combine the remaining sugar with the malt powder in a bowl and set aside. Put the oil in a deep-fat fryer and heat to 340°F, or fill a large saucepan one third full with vegetable oil and heat over medium-high heat until a cube of bread dropped in it sizzles and turns golden brown in 30 seconds. Fry the doughnuts, in batches, for 3-4 minutes until evenly golden brown and cooked through, turning them in the oil once or twice. (You will need to moderate the heat between batches according to whether the doughnuts brown too quickly or too slowly.) Using a slotted spoon, remove the doughnuts from the hot oil and roll in the malt sugar to coat.
  • 7. To fill the doughnuts, spoon the warm chocolate filling into a piping bag fitted with a small plain nozzle. Make sure you pipe the chocolate filling while it's still warm. If it cools down too much, it will set and be difficult to work with. Insert the nozzle into the doughnut and gently squeeze in the filling. Serve right away.

1/3 cup warm water
1/4 cup sugar
3/4 cup all-purpose flour
1/2 cup cake flour
1/4 cup cocoa powder
3/4 teaspoon baking soda
1/4 cup hot water
3 ounces semisweet chocolate, melted
1/4 cup powdered sugar
1/2 teaspoon salt
6 ounce baking potato, like russets, cooked, peeled and riced
Chocolate glaze, recipe follows
Canola oil, for frying
4 ounces semisweet chocolate, chopped
1/2 cup cream

Steps:

  • In a bowl, combine yeast, warm water and sugar to dissolve. Add 1/4 cup of the all-purpose flour and 1/4 cup of the cake flour. Stir and set in a warm place for 30 minutes to foam up. Combine cocoa powder and baking soda and add hot water to dissolve. Add the melted chocolate to the cocoa powder mixture then stir in the powdered sugar, salt, and potato. Add this to the foamed yeast along with another 1/4-cup of all-purpose flour and the remaining 1/4-cup of cake flour and mix on low to combine with a paddle.
  • Mix on high speed for 30 seconds to combine. Add the remaining 1/4-cup of all-purpose flour and mix on high speed. Flour the work surface heavily and knead the dough gently (it may be sticky). Turn into a greased bowl and proof until doubled in bulk, about 1 1/2 hours. Turn dough out onto a floured surface and punch down then proof for another 30 minutes.
  • Flour work surface heavily and pat out dough to about 1/2-inch thick. Cut out doughnuts and holes, flouring the cutter each time, and set on a floured sheet pan. Heat oil to 375 degrees and drop in doughnuts and holes. Cook doughnuts for 45 to 60 seconds and the holes for 30 seconds, flipping once. Drain on a paper towel-lined sheet pan.
  • Place the chopped chocolate in a bowl. Boil the cream and pour it over the chocolate and let sit, whisking to combine. Keep warm. Dip doughnuts in chocolate glaze when cooled.

Steps:

  • Warm Glossy Chocolate Sauce:
  • In the top half of a double boiler, combine the 2 chocolates over simmering water. Stir constantly until melted, then whisk in the corn syrup and water. Whisk until smooth and shiny.
  • Combine all the ingredients in a blender and blend until smooth.

Number Of Ingredients 6

1 vanilla pod
500ml full-fat milk
6 egg yolks
125g golden caster sugar , plus an extra 2 tbsp
80g plain flour
200ml double cream

Steps:

  • Slit the vanilla pod open lengthways and scrape out the seeds. Put both pod and seeds into a heavy-based saucepan with the milk and bring slowly to the boil, to infuse the vanilla.
  • Meanwhile put the egg yolks and the 125g sugar in a bowl and mix together for a few secs, then add in the flour and mix again.
  • Pour the just-boiling milk over the yolk mixture, whisking constantly to prevent curdling, then return the mixture to the saucepan. Cook over a medium heat, whisking constantly, for about 10 mins until very thick
  • Pass through a fine sieve, discarding the vanilla, and place a sheet of cling film on the surface of the custard to prevent a skin forming. Leave to cool, then chill in the fridge.
  • Whip the cream and the 2 tbsp sugar together until thick but not overwhipped, fold into the chilled custard. You can now scoop the the custard into a piping bag and use it as the filling in Justin's doughnut recipe.
  • Try different flavours...Brown sugar: Replace the caster sugar with half soft dark brown sugar and half light brown sugar. You can add chopped stem ginger to the finished custard, or some hazelnut praline. Finish with half the quantity of cream.Chocolate: Whisk 150g dark (70%) chocolate into the milk. Finish with half the cream.Coffee: Add 4 tbsp of freshly ground strong coffee to the milk.Malt & vanilla: Mix 2 tbsp of powdered malt into the sugar, and 2 tbsp of liquid malt into the milk.Saffron: Add a good pinch of saffron to the milk. Finish with half the quantity of cream.Violet custard: Add 3 tsp of violet extract and 3 tbsp of violet liqueur to the finished custard. Sprinkle sugared violets and crushed Parma Violet sweets over the top of the filled doughnuts.

Steps:

  • Cooking Oil 3tbsp. 50 ml.
  • Lard or oil for deep frying.
  • Put oil, sugar, eggs, milk and vanilla in mixing bowl. Mix together well.
  • Add flour, baking powder, salt and cocoa. Stir to blend. Heat lard or oil to 375f
  • On floured surface roll dough 1/4 inch (5/8) thick. cut with doughtnut cutter. Drop carefullly into hot fat(lard)or oil a few at a time so as not to crowd. When light brown turn to cook other side. Cook center "holes" too. Drain standing on edge on paper towles of tray. Glaze for speical effects.( I will post Glaze Later).

Last December, my Dad was insistent that we make these doughnuts while I was home visiting for the Christmas season. I was so glad that we did because not only are they delicious but they are part of my family's heritage. These doughnuts are made with potatoes, and my Mom's family the Griffins were potato farmers in Mapleton, Maine. These doughnuts bring me back to my roots :)

3 cups sugar
1/2 cup butter
4 eggs
6 cups flour
4 tablespoons baking powder
2 teaspoons salt
2 teaspoons nutmeg
1 cup milk
2 cups mashed potatoes
4 eggs
1 cup cocoa

Steps:

  • Stir sugar, butter, and mashed potatoes into eggs. Whip until creamy.
  • Sift together dry ingredients (a few times).
  • Add dry ingredients alternately with milk into egg mixture and mix well.
  • Chill 2 hours.
  • Roll dough out 1/2 inch thick onto a lightly floured board.
  • Cut dough with doughnut cutter and fry into hot oil (365 degrees) for approximately 3 minutes.
  • Drain on paper towel and toss doughnuts in a paper bag with sugar.

  • In a medium bowl, whisk together the egg, sour cream, milk, canola oil, and vanilla until well combined. Pour the dry ingredients over the wet ingredients, stirring just until combined. Pour the batter into a large disposable piping bag and snip off the tip with scissors. Pipe the batter into the donut cavities about ⅔ full. Bake for 8 to 10 minutes. Cool in the pan on a wire rack for 10 minutes, then turn the pan over to remove the baked donuts. Respray the pan with nonstick cooking spray and repeat with the remaining batter.
  • Combine butter, milk, corn syrup, and vanilla in medium saucepan and warm over medium heat until butter is melted. Decrease the heat to low, add the chocolate, and whisk until melted. Turn off heat, add the powdered sugar, and whisk until smooth. Place the mixture over a bowl of warm water and dip the doughnuts immediately. Allow glaze to set for 30 minutes before garnishing with chopped candies.
