MUSHROOM BISQUE

1 quart chicken broth
1 pound assorted fresh mushrooms, chopped
1 small onion, finely chopped
6 tablespoons butter
6 tablespoons all-purpose flour
8 tablespoons half-and-half
1 bay leaf
1 teaspoon salt
White pepper
Hot sauce

Steps:

  • In a 2-quart pot, bring chicken broth to a boil. Add mushrooms and onions and bring back to a simmer. Reduce heat to a slow simmer and cover for at least 1 hour.
  • Roux:
  • In a separate large pot, melt the butter, then add the flour. Whisk until evenly incorporated. Continue to whisk while slowly adding half-and-half to the roux. Add bay leaf and stir constantly until the sauce is thickened and smooth. Remove the bay leaf and discard.
  • Add the mushroom broth to the roux and stir until evenly incorporated. Season with salt, pepper and hot sauce, to taste. Serve immediately.

1 cup all-purpose flour
1/4 cup oat bran flour (not absolutely necessary, but increases health qualities)
1/2 cup dry buttermilk (I use Safco...can be bought in most groceries, baking aisle)
1 teaspoon salt
3 tablespoons baking powder
1 tablespoon baking soda
1/2 cup sugar (or can substitute Splenda)
1 tablespoon butter-flavored sprinkles (I used Butterbuds from spice aisle in grocery)
1/3 cup vegetable oil

Steps:

  • Mix dry ingredients in food processor or electric mixer.
  • Slowly pour in the oil as the machine is running.
  • Scrape the sides of the bowl with a rubber spatula.
  • Mix thoroughly again.
  • Store in airtight container in the frig or freezer.

10 cups unbleached flour (may use up to 3 cups whole wheat pastry flour)
1 1/2 cups cake flour (may substitute 1 cup 2 tablespoons flour PLUS 6 tablespoons cornstarch)
1/2 cup yeast
1 cup oat flour (whiz regular oatmeal)
1 2/3 cups dried dry buttermilk
2 tablespoons salt
2 tablespoons sugar
2 tablespoons baking soda
6 tablespoons baking powder
2 cups shortening (or unsalted butter or margarine plus 3/4 cup unsalted butter or margarine)

Steps:

  • This can be made in 3 batches in a large food processor.
  • Whiz regular oatmeal, measure 1 cup, whiz in the nutritional yeast. Mix thoroughly with cake flour or substitute, then carefully mix in salt, baking soda, baking powder, and sugar. Blend this with the buttermilk powder until it is uniform- a sifter is handy here if you aren't using a food processor.
  • In the food processor or a large bowl, cut together 1/3 of the flour mix, 1/3 each of the shortening and butter until it resembles coarse cornmeal. Set aside and repeat until all is used, then mix the three batches together before you divide it for storage or use. Store in tightly closed covered container or zippered plastic bags with the air pressed out.
  • Even with the added flours, this makes a golden white biscuit unless whole wheat flour is added.
  • To use, spoon into cup, don't sift and don't pack. Store remainder in refrigerator or freezer.
  • Reduced fat variation: you can reduce the shortening in this mix by 1/4, results will be a bit less tender, but still tasty. With reduced fat baking recipes, smaller sizes muffins, biscuits and pancakes will give better results. Fat may be reduced in most baking recipes by one-third. Fat makes baked goods tender and crisp, so lowering the amount of fat will change the texture as well as the flavor. With pie crusts, the fat may be decreased to one part fat to four parts flour. Some have had success also with replacing some of the fat in quick bread recipes with the same amount of applesauce. I have found it does work but the texture is tougher than the original recipe.

Steps:

  • First mix all of the dry ingredients together and make sure it is mixed well. Then add your shortening and you can add this to your food processor if you would like or use a pastry blender (or how ever you would like to do it) cut in the shortening til it's the consistency of cornmeal.
  • Put into an air tight container or a ziploc bag and put in your pantry. This will stay good for 1 year. Use your recipes on the back of your old bisquick box and enjoy the savings!!!

2 1/3 c powdered milk
1 Tbsp salt
1/3 c baking powder
2 c shortening

Steps:

  • 1. In a large pan, stir the dry milk, baking powder, sugar and salt into the flour; mix thoroughly.
  • 2. Cut the shortening into the dry ingredients until the MIX is the consistency of corn meal.
  • 3. Place the mix in a covered glass or plastic container and keep in a cool, dry place.
  • 4. In warm weather the MIX should be refrigerated and used with a month.
  • 5. To measure, pile the MIX lightly into a cup and level off with a spatula or the back of a knife.

  • Package up and store at room temperature.
  • Waffle recipe for 3 people----2 1/2 cups quick mix, 2 eggs beaten, 1 tablespoon sugar, and 1 1/2 cups milk or water. Blend well. Let stand for 5-10 minutes. I love to take this recipe when we go camping b/c it can be made with water instead of milk and some of our camping places are very remote. Milk is better but sometimes --. When making banana waffle bread pudding add 1/2 teaspoon cinnamon to dry for each 6 waffles.
  • I have not tried this yet, but saw idea at Yoplait and we always have yogurt around--Fruit Yogurt Pancakes--2 cups quick mix, 1/2 cup milk, 1 tablespoon sugar, 6 ounces of any fruit yogurt.
  • Biscuits for 2 people-- Melt in microwave 2 T. unsalted butter in 4 cup microwave safe bowl, add 3/4 cup of quick mix, 2 1/2 T. milk, 2 tablespoons shredded cheddar (optional) and, 1/8 t. garlic powder. Bake on cookie sheet (not greased) at 450 degrees for 6 to 8 minutes.
  • Apple Spice Waffles: 2 cups mix, 2 t. sugar, 2 t. cinnamon, 1 t. nutmeg, 2 eggs, 1 1/2°C milk, 6 T. butter melted, 1°C chopped peeled apple but wait until other ingredients are together. 2 bowls one for dry ingredients, other bowl for liquid. Stir dry into wet, add apple. Makes about 10. Freeze leftovers.
  • Ham Cheddar Biscuits-20 biscuits- 2 1/4 QM, 3/4°C Milk, 3/4°C Cheddar shredded, 1/2°C Ham, chopped. Mix QM and milk. Stir in cheese and ham. Drop by tablespoons onto GREASED baking sheet. Bake 450 for 8 minutes. Or try recipe#372502.
  • Dumplings for soup--- recipe#269611.
  • Two Individual cobblers--heat filling, mix together 1/2 cup quick mix, 2 tablespoons sugar, 2 tablespoons milk, and 1 tablespoon vegetable oil. Put hot filling into two greased 8 oz. containers, drop cobbler mixture onto filling, bake at 400 for 18 to 22 minutes, or is golden brown.
