1/4 cup sour cream
1/4 cup mayonnaise or salad dressing
2 tablespoons Dijon mustard
1 loaf French bread (1 lb), cut in half horizontally
1 lb thinly sliced cooked roast beef
1 jar (7 or 7.25 oz) roasted red bell peppers, drained, sliced
3 leaves romaine lettuce, torn in half lengthwise

Steps:

  • In small bowl, mix sour cream, mayonnaise and mustard until blended.
  • Spread half of sour cream mixture on cut side of bottom half of bread; spread remaining mixture on cut side of top half of bread. On bottom half of bread, layer roasted peppers, roast beef and lettuce. Cover with remaining half of bread. Wrap tightly with plastic wrap; refrigerate 1 to 2 hours. When ready to serve, cut sandwich into 8 pieces.

Here's how we use this recipe to its full potential: Pick up the boneless beef chuck roast when it's on sale or when there's a busy week ahead. It's a versatile meal starter and can save money that might otherwise be spent on emergency pizza delivery or unsatisfying drive-through meals. When you've got a few extra minutes to spend in the kitchen, sear the beef and toss it in the slow cooker. Once the meat is done, it's simple enough to shred it and parcel it up into packages that are the right size for all kinds of family meals.

2 tablespoons vegetable oil
1 1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
1 boneless beef chuck roast (2 1/2 to 3 1/2 lb)

Steps:

  • Spray 5-quart slow cooker with cooking spray. In large bowl, mix oil, salt, pepper and garlic powder. Add roast; turn to coat.
  • Heat 12-inch skillet over medium-high heat until hot. Add beef roast; cook 6 to 8 minutes, turning once, until browned on both sides.
  • Transfer to slow cooker; pour 1/4 cup water over roast. Cover and cook on Low heat setting 7 to 8 hours or until beef is tender and easy to shred.
  • Transfer beef to cutting board; cool slightly. Shred beef, discarding any pieces of fat. Toss beef with 1/2 cup of the cooking liquid. Discard remaining liquid.
  • To Freeze: Divide beef into 2 portions (about 2 cups each). Place each portion in freezer container or resealable freezer plastic bag. Label with date. Cover and refrigerate until completely cooled, at least 1 hour. Transfer to freezer; freeze up to 3 months. Thaw in refrigerator overnight or until completely thawed. Use in recipes calling for cooked shredded beef.
  • To Make in Oven: Heat oven to 325°F. In large bowl, mix oil, salt, pepper and garlic powder. Add roast; turn to coat. Heat 12-inch ovenproof skillet over medium-high heat until hot. Add beef roast; cook 6 to 8 minutes, turning once, until browned on both sides. Pour 1 cup water over roast. Cover and roast 2 1/2 to 3 1/2 hours, or until meat thermometer inserted in center of roast reads 190°F and beef is tender enough to shred easily. Remove from oven; let rest until cool enough to handle, about 30 minutes. Shred meat with 2 forks, discarding fat and cartilage as you go. Toss shredded beef in 1/2 cup of the pan liquid to coat. Discard remaining pan liquid. Freeze and thaw as directed above.

The best cut of roast beef for sandwiches isn't necessarily the same as what you'd want hot from the oven. A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller. 2 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1 large beefsteak tomato, cut into 6 slices
3/4 pound prosciutto cotto (Italian cooked ham)
One 10- by 5-inch loaf of ciabatta
8 ounces fresh mozzarella, drained and sliced
1 cup basil chiffonade

Steps:

  • Add the olive oil, vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper to a mixing bowl and whisk to combine. Then add the tomato and coat in the dressing. Set aside.
  • Slice the loaf of bread in half through the center and open it like a book, cut side up. Remove some of the crumb from the bread and use for something else.
  • Spoon 3 tablespoons of the tomato dressing over the bottom half of bread. Place the ham on top of the bottom half of bread in an even layer. Top the ham with the mozzarella and season with a pinch of salt and pepper. Layer the tomatoes on top of the mozzarella. Top the tomatoes with the basil. Drizzle the remaining tomato dressing on the top half of the bread. Place the top on and wrap the sandwich tightly with plastic wrap.
  • Refrigerate the sandwich for 3 to 4 hours. Unwrap and cut into 6 pieces when ready to serve.

2 -3 lbs beef tenderloin
1/2 cup butter
1 teaspoon garlic powder
1 teaspoon dry mustard
1/2 lb butter
1 1/2 teaspoons dried parsley
1/2 teaspoon garlic powder
1 teaspoon thyme
1 teaspoon celery salt

Steps:

  • Bake tenderloin in 200 degree oven for 2 hours, turning & basting with basting mixture every 20 minutes. Will cook to medium rare - 145 degrees.
  • While roasting, slice small silver dollar rolls and spread bun spread mixture on them.
  • When meat is done, let rest at least a half an hour. I've let it sit overnight. Using an electric knife, slice meat into thin slices, piling several slices onto each bun. Put buns on a jelly roll pan lined with parchment paper. Cover with foil and put in fridge until ready to cook. Put a damp towel over buns. Remove foil before you do this and then bake in 350 degree oven for 10-15 minutes.
  • Serve to a party or any kind of gathering and step back for the stampede!
  • If there are any left, freeze individually for quick snacks or small meals. FANTASTIC!
  • Perfect for Sunday afternoons watching football, Friday nights when the teenagers invade my house looking for something besides doritos (they know that I will feed them well!), or weeknights when we are crazy driving from one activity to another and need something substantial -- not hamburger helper or easy mac.
