This vibrant lemongrass ginger sauce recipe uses ginger, lemongrass and just a touch of celery leaves to add freshness to seafood or chicken.

3 tablespoons olive oil
3 shallots (finely chopped)
1 inch lemongrass (finely chopped)
3 garlic cloves (chopped)
1 cup white wine
2 inches of fresh ginger (grated or finely chopped)
Juice of 1/2 lemon
2 tablespoons celery leaves (finely chopped)
Salt (to taste)

Steps:

  • In a large pan, heat the olive oil over medium-high heat until hot, about 2 to 3 minutes. Add the shallots and lemongrass and cook for 2 minutes, stirring often. Add the garlic and cook for another minute, stirring well.
  • Add the wine, the grated or finely chopped ginger and a little salt, then turn the heat up to high. Boil off the wine by half, about 5 minutes. Turn off the heat, add the lemon juice, one tablespoon of celery leaves, and taste for salt-add some if you need it.
  • Pour the sauce into a food processor and blitz it until it becomes a thick puree; it should look a bit like a light green mayo, as everything will emulsify.

This simple soup can be eaten hot or cold, in winter, or in summer. Many are aware of the healing benefits of carrots, mainly the antioxidant-rich carotenoids that are known to pack anticancer powers. We love them because they're a simple and delicious food. Combine them with a hefty dose of gelatin-rich bone broth, a touch of lemongrass and ginger, and you're left with a bowl of soup that beats any sugar-laden cold-pressed juice on the market.

Yield 4-6 servings

Number Of Ingredients 7

2 tablespoons ghee or olive oil
1 1/2 cups diced onion
1 1/2 pounds thinly sliced carrots
2 tablespoons peeled and minced fresh ginger
One 2-inch-long piece lemongrass, pounded
4 cups Chicken Bone Broth
Sea salt

Steps:

  • In a large saucepan over medium heat, heat the ghee or olive oil. Add the onion and sweat until translucent, about 8 minutes, stirring occasionally.
  • Add the carrots, ginger, and lemongrass and stir to coat the vegetables with the ghee or oil. Reduce the heat to medium-low and cook for 10 minutes.
  • Add the broth and increase the heat to medium. Bring the soup to a simmer and cook until the carrots are tender, about 15 minutes.
  • Transfer the mixture to a blender and blend until smooth, blending in batches if necessary. Season with sea salt to taste and serve immediately.
  • Do Ahead:
  • You can refrigerate the soup for up to 1 week, or freeze it for up to 6 months.

Number Of Ingredients 10

1/2 cup rice vinegar
2 tablespoons sugar
1/4 cup water
1/4 cup Asian fish sauce (nam pla)
1/4 cup fresh lime juice
2 tablespoons finely minced lemongrass bulb
1 makrut lime leaf, shredded fine (optional; sold in Asian markets)
2 teaspoons minced fresh coriander leaves
1 teaspoon minced scallion
2 tiny Thai red "bird" chilies, or other fresh red chilies, sliced (or to taste)

Steps:

  • Combine the vinegar, sugar, water, fish sauce and lime juice in a small, nonreactive saucepan. Bring just to a boil; then, add the lemongrass and the lime leaf and simmer for 30 seconds.
  • Remove from heat, and place the saucepan in a bowl of ice and water to chill it until it is room temperature, about 10 minutes.
  • Stir in the cilantro, scallions and chilies to taste.

  • Make the chicken marinade by adding super finely sliced lemongrass, ginger, and garlic to a shallow bowl. I remove the outer layer of the lemongrass and cut off the dry ends then use a microplane to grate. For the ginger I peel it and use the microplane as well. And for the garlic I use a garlic press. Then add sea salt, avocado oil, and honey to the bowl as well and mix until well combined.
  • Add the chicken to the marinade and use your hands to ensure the chicken is well coated. Then let marinate on the counter for 15 minutes of up to 2 hours in the fridge.
  • In the meantime prepare your side dishes. I like serving this over rice and with broccoli on the side.
  • Preheat a large pan over medium-low heat and once very hot add your chicken thighs in two batches to sear 3-4 minutes on one side, then flip and sear another 3-4 minutes on the other. Set aside.
