SALSA VERDE RECIPE: THE ULTIMATE MEXICAN GREEN SALSA

Salsa Verde Recipe: The Ultimate Mexican Green Salsa image

The best salsa verde recipe made with tomatillos and serrano peppers. Serve it up as a table sauce, hot sauce, or as a salsa with tortilla chips. This is the ultimate green salsa.

Provided by Mike Hultquist

Categories     Main Course     Salsa     Side Dish

Time 30m

Number Of Ingredients 8

1 pound tomatillos
2 serrano peppers ((or use jalapeno peppers for a milder salsa verde))
3 garlic cloves (chopped)
1 small red onion (chopped)
1/2 cup chopped fresh cilantro
2 tablespoons white wine vinegar
1 tablespoon lime juice ((about 1 small lime))
Salt to taste ((I use a teaspoon of sea salt))

Steps:

  • Peel, rinse and dry the tomatillos. Slice them in half and set them onto a large lined baking sheet.
  • Slice 1 serrano pepper in half and set it on the baking sheet with the tomatillos, skin sides up.
  • Roast the tomatillos and serrano pepper at 425 degrees F. for 15 minutes, or until the tomatillos begin to char slightly. The skins will darken.
  • Remove and transfer to a food processor or blender.
  • Add the remaining ingredients and process until smooth. Adjust for salt and serve. Or, refrigerate in a sealed container to let the flavors mingle. Great with tortilla chips!

SALSA VERDE: GREEN TOMATILLO SALSA

Salsa Verde: Green Tomatillo Salsa image

Provided by Food Network

Categories     condiment

Time 25m

Yield about 1 cup

Number Of Ingredients 5

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

AJI VERDE (SPICY PERUVIAN GREEN SAUCE)

Aji Verde (Spicy Peruvian Green Sauce) image

Learn how to make the best aji verde sauce! Aji verde is spicy Peruvian green sauce, made with cilantro, jalapeños, and a little mayonnaise and Parmesan. It is utterly irresistible drizzled onto tacos and more! Recipe yields about 1 1/4 cups.

Provided by Cookie and Kate

Categories     Sauce

Time 10m

Number Of Ingredients 7

1/2 cup mayonnaise
2 cups lightly packed fresh cilantro, mostly leaves but small stems are ok (from 1 big bunch of cilantro or 1 1/2 medium)
2 medium jalapeños, seeds and membranes removed but reserved, roughly chopped
2 cloves garlic, roughly chopped
1/3 cup (1 ounce) grated Cotija or Parmesan cheese
1 tablespoon lime juice
1/4 teaspoon fine sea salt

Steps:

  • In a food processor or blender, combine all of the ingredients. Blend until the cilantro has broken into very tiny pieces and the sauce is green and mostly smooth (no matter how long you blend it, it will still have some texture to it).
  • Taste, and adjust if necessary. This sauce is intentionally bold and spicy and I usually think it's just right as written. However, if the flavor is too overwhelming, blend in 1 tablespoon of olive oil while running the food processor. If it's not spicy enough, add some of the reserved jalapeño seeds and blend again. If it doesn't have enough zip, add another tablespoon of lime juice and/or a pinch of salt.
  • Aji verde keeps well in the refrigerator, covered, for about 1 week.

SALSA VERDE (MEXICAN GREEN TOMATO SAUCE)

Salsa Verde (Mexican Green Tomato Sauce) image

From Diana Kennedy's "From My Mexican Kitchen: Techniques and Ingredients." This is the best green salsa I've ever made. It can be used as a straight salsa or as a sauce to cook meat in.

Provided by Goody2shz

Categories     Vegetable

Time 20m

Yield 2 cups, 8 serving(s)

Number Of Ingredients 7

1 lb tomatillo, husks removed and rinsed
3 serrano chilies, finely chopped
1/2 cup cilantro, roughly chopped and loosely packed
2 tablespoons cilantro, roughly chopped for garnish
1 garlic clove, roughly chopped
2 tablespoons white onions, roughly chopped
sea salt

Steps:

  • Put the tomatillos whole in a small saucepan, barely cover with water, and bring to a simmer. lower the heat and continue cooking until soft but not falling apart, about 5 minutes depending on size. Drain, reserving the cooking water.
  • Using a molcajete: Mash and grind together the chiles, 1/2 cup cilantro, the garlic, onion, and salt. Add the tomatillos a few at a time, crushing and grinding well after each addition and adding a little of the cooking liquid until you have a textured sauce of medium consistency. You will probably need about 1/2 cup or even more of the cooking liquid.
  • Using a blender: Put 1/3 cup of the cooking water into the blender jar. Add the chiles, 1/2 cup cilantro, the garlic, and the onion and grind to a paste. Add the tomatillos a little at a time, blending with about 1/3 cup more of the cooking liquid until you have a textured sauce of medium consistency. Add salt to taste.
  • To serve: Sprinkle the top with the extra cilantro.

MARISCADA EN SALSA VERDE (SEAFOOD STEW IN GREEN SAUCE)

Mariscada En Salsa Verde (Seafood Stew in Green Sauce) image

This seafood stew gets it's green sauce from tomatillos and fresh parsley. I've adjusted the traditional cooking method a bit to, hopefully, bring out the flavors of the seafood with less of a "fishy" taste. This is a Spanish version, rather than Mexican or Latin American so it uses fresh parsley. If you prefer, you can substitute fresh cilantro for some or all of the parsley.

Provided by threeovens

Categories     < 4 Hours

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 19

1/2 lb tomatillo
1 medium onion, chopped
6 garlic cloves, chopped
2 tablespoons olive oil
13 1/2 ounces unsweetened coconut milk (or whatever your can size is)
2 cups chicken stock or 2 cups water and 2 tsp chicken bouillon
1 cup dry white wine (like Pinot Grigio, one you would drink)
1/2 cup fresh parsley, chopped (about 1/2 a bunch)
salt & freshly ground black pepper
1/2 teaspoon hot pepper sauce
1 tablespoon butter
1/4 lb large shrimp, peeled and deveined
1/4 lb sea scallops
2 lobster tails
12 littleneck clams
12 mussels
1/4 lb squid, bodies washed well and cut into rings (calamari)
fresh parsley, optional for garnish
heavy cream, optional for garnish

Steps:

  • Cook tomatillos in boiling water for about 3 minutes (they will change color), cool off in cold water for a couple of minutes, then chop in a food processor.
  • Add onions and garlic to food processor and coarsely puree.
  • Heat oil in a large saucepan and saute puree until onions are tender, about 5 minutes (I know this is hard to tell, but use your nose; the puree will smell strongly of onions, but once done, the aroma will be lessened).
  • Stir in coconut milk, chicken stock, wine, and parsley; season with salt and pepper and hot sauce.
  • Cover, and cook, stirring occasionally, 20 minutes.
  • Meanwhile, heat 1 tablespoon butter in a skillet over medium high heat; add shrimp and saute until slightly seared, but not necessarily cooked through (will finish in the sauce), about 1 minute per side; set aside.
  • Saute scallops until seared, about 2 minutes per side (will also finish in sauce); set aside.
  • Wipe out skillet and add about 1/4 cup water and and lobster tails; cover and let steam about 3 minutes; snip in half, lengthwise, with kitchen shears, and set aside.
  • Add clams to skillet, cover and cook clams, shaking occasionally, until one opens, then add mussels.
  • Re-cover and cook, while shaking pan occasionally, until all shells open.
  • Add seafood, including squid (calamari) to salsa verde and heat through, about 10 minutes.
  • Serve with optional garnishes.
  • ------------------------------------------OR---------------------------------------------.
  • Once, salsa verde is finished simmering, pour it into an oven-safe covered casserole (a pretty one for serving).
  • Add seafood, stir, cover, and bake at 325 degrees F until bubbly, about 30 minutes.
  • Bring to the table in the casserole dish; pass optional garnishes.

  • Argentina: Chimichurri. Sit down at most restaurants in the US and they'll put ketchup on the table. Sit down at most restaurants in Argentina and they'll put a jar of chimichurri on the table.
  • Morocco: Chermoula. This North African pureed green sauce is traditionally deployed as a marinade for all kinds of seafood, but it can be used for so much more—from marinating chicken or steak or eggplants to drizzling over roasted vegetables.
  • Italy: Salsa Verde. It may look a lot like chimichurri, but the flavor of Italian salsa verde is surprisingly different, with chopped capers and sometimes anchovy fillets giving this version an irresistible salty-funky tang.
  • Mexico: Salsa Verde. In Mexico salsa verde means something completely different than it does in Italy, but it still involves a lot of fresh herbs and garlic.
  • Italy: Pesto. Yes, technically you could call pesto a "salsa verde," since the term just means "green sauce." Pesto's easily the most luscious of the green sauces, since it boasts not only olive oil but cheese (usually Parmesan, sometimes Pecorino) and nuts (often pine nuts, but sometimes with walnuts or other nuts, too).
  • Thailand: Chile-Herb Dipping Sauce. An entire book could be written about the broad range of Thai chile-herb sauces, but this version is a great place to start.
  • Yemen: Zhoug. This spicy thick green sauce is Yemenite in origin, but it can be found all over Syria, Israel, and other parts of the Middle East, where it's spooned over shakshuka for breakfast and drizzled into falafel sandwiches the rest of the day.
  • India: Green Chutney. Cilantro and mint headline together in this earthy Indian green condiment, while ginger and jalapeño give it a a gently burning heat.
  • Texas: Creamy Jalapeño Sauce. Austin's favorite taco sauce is affectionately known as That Green Sauce, and no, it's not made with avocados or dairy. The secret to the creaminess of this addictive cilantro, jalapeño, lime, and garlic sauce is to use a blender to slowly emulsify vegetable oil into the puree.
  • California: Green Goddess Dressing. Some people might disagree with me on this one, but I don't think you can go on a world-tour of green sauces without mentioning this California babe of a sauce.

  • On medium heat, warm up a 2qt pot with the olive oil and let it get nice and hot (but not smoking hot!). Add the onion, garlic, and chiles. Saute for about 3-4 minutes or until they are soft and begin to caramelize and change color. Add the salts and chopped cilantro. Mix everything really well until the cilantro wilts and starts to break apart (about 2 minutes).
  • Add the water and stir everything well. Bring to a low boil. Simmer on medium-low for 5 minutes, then turn off the heat and let it cool for at least 10 minutes.
  • Transfer to a blender or use a hand blender to blend everything. After blending, at this point you can add a little more water if you feel it’s too thick. Add the lemon juice, stir, and taste test. Once it feels and tastes right to you, blend it again once more just for five seconds or so to make it a little smoother. I keep mine in a condiment bottle, so I like to make sure there are no chunks bigger than the hole on the cap.

  • Pico de Gallo. Pico de gallo is also known as salsa fresco and is a popular variety of salsa used in Mexican cuisine. Although each sauce has a unique flavor profile, they share similar ingredients like cilantro, white onions, lime juice, and jalapeño or serrano peppers.
  • Mexican sour cream dip. If you’re looking to replace salsa verde for dipping, then a Mexican sour cream dip is a delicious replacement. Take sour cream and combine it with chili, red salsa, garlic powder, dried parsley, onion powder, and Mexican shredded cheese.
  • Salsa Ranchera. Salsa Ranchero is a warm and smokey sauce that ranges from mild to medium in heat. It is similar to salsa, using cooked tomato as its base, but it doesn’t have the same tomato intensity.
  • Red salsa. A flavor-packed red salsa is super-easy to make and it makes a great salsa verde substitute. To make this sauce, process fresh tomatoes, garlic, onion, lime juice, chili, cilantro, and salt in a food processor until chunky.
  • Chipotle hot sauce. If you love hot food then skip the salsa verde and replace it with chipotle hot sauce. You can make a batch at home using onion, Mexican oregano, cumin, chipotle peppers, garlic, and vinegar.
  • Homemade salsa verde. This is a quick and easy salsa verde recipe that you can blend at home. Tomatillo sauce has delicious tangy, savory flavor; you’ll find it isn’t as sweet as fresh sauces made with tomatoes like regular salsa.
