These healthy fruit and yogurt parfaits are incredibly easy to make and are the perfect make-ahead grab-n-go breakfast.

3/4 cup yogurt ((plant-based, plain yogurt, or Greek yogurt))
1/2 cup mixed berries ((blueberries, strawberries, raspberries))
1 teaspoon maple syrup
1 tablespoon granola
1/2 tablespoon coconut flakes ((optional))

Steps:

  • Wash the berries, and if some are too big, chop them into smaller pieces.
  • Add 2-3 tablespoons of yogurt to a mason jar.
  • Add half of the chopped fruit.
  • Add the remaining yogurt.
  • Top with the rest of the mixed berries, granola (see notes), maple syrup, and coconut flakes.
  • Seal the lids and store them in the refrigerator for up to 3-4 days.
  • When you are ready to eat the yogurt parfaits, simply remove them from the fridge, mix, and enjoy.

32 oz plain or vanilla yogurt (Greek yogurt works great)
1 1/2 c. strawberries
1 1/2 c. raspberries
1 1/2 c. blueberries
4-5 c. granola (Our recipe for Vanilla Granola is my favorite)

Steps:

  • Layer 1/4 - 1/3 c. of mixed berries in the bottom of each cup.
  • Next spoon about 1/4 - 1/3 c. of yogurt on top of the berries.
  • Continue layering until the cup is as full as you would like (with yogurt being the top layer).
  • Fill a snack-sized ziploc bag with granola and seal (one for each cup).
  • Cover each cup tightly with plastic wrap and seal with rubber band.
  • Place (or tie on) a granola bag on each cup along with a plastic spoon (see picture above).
  • Place in refrigerator for up to 5 days.

1/4 cup pure maple syrup
1 teaspoon vanilla
2 1/2 cups mixed berries ((i.e. raspberries, blueberries, blackberries, etc.))
1/2 cup raw pumpkin seeds (shelled)
1/4 cup chopped walnuts
1/4 cup chia seeds
1/4 cup flax seed meal
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

Steps:

  • In a medium bowl, whisk together yogurt, maple syrup, and vanilla. Pour into a liquid measuring cup and set aside.
  • In another bowl, mix together seeds, nuts, and spices.
  • To assemble parfaits, set out five glasses or mason jars and pour in 1/4 cup or so of the yogurt mixture into each glass.
  • Top the yogurt layer with a couple tablespoons of the nut and seed mixture.
  • Sprinkle a couple of tablespoons of berries on top of the nut mixture then begin again with yogurt.
  • Repeat the layers until all ingredients have been used.
  • Seal mason jars or cover glasses with plastic wrap until you're ready to serve.

1/3 cup strawberries
1/4 cup blueberries

Steps:

  • Cut off tops of strawberries & slice strawberries into large chunks.
  • Get out either 2 bowls or 2 glasses to create your parfaits in.
  • First add 1/2 of your yogurt between each bowl.
  • Next add in 1/2 of your strawberries & then top with 1/2 of your granola.
  • Repeat the process with your greek yogurt. Next add in blueberries & top with granola.
  • If making for the next morning, make sure you seal parfait well & store in fridge. If you are eating right away, serve & ENJOY!
