BBQ Chili Cheese Lasagna image

Hearty lasagna made new again with BBQ Chili and Cheddar Cheese -- put those leftovers to good use!

3 lbs grounds beef
1 onion
2 cans red kidney beans
1 can black beans
2 28 oz cans diced tomatoes
1 can tomato paste
1/2 cup brown sugar
1 cup ketchup
1 cup barbecue sauce
1 tbsp Worcestershire sauce
3 tbsp chili powder
1 tsp cumin
2 tsp minced garlic
2 pinches crushed red pepper flake
salt (to taste)
12 lasagna noodles
1 cup 1% cottage cheese
1/2 tsp minced garlic
1 1/2 cups shredded cheese

Steps:

  • For the chiliBrown your ground beef with your onions in a pan.
  • Add the beef, onions and all your seasonings to the slow cooker and let it cook on low for at least 6-8 hours or on high for 3-4. *NOTE: If you follow the recipe measurements, you will have about double the amount you need for the lasagna. I do this because I like to get two separate meals out of one. Feel free to halve the recipe, or stick the rest in the freezer for a busy day.
  • For the lasagna:Cook your noodles in boiling, salted water until just al dente (they will continue to cook in the oven). Cool them down in cold water so they're easy to handle.
  • Puree your cottage cheese with the ½ tsp minced garlic.
  • Assembly:Preheat the oven to 350 degrees F.
  • Lay down a thin layer of sauce in the bottom of a 9x13 pan to keep the noodles from sticking. Lay down 3 noodles. Top with a thin layer of cottage cheese and a layer of chili. Sprinkle with a bit of cheese. Repeat 4 times. Top with remaining cheese.
  • Cover with tin foil sprayed with non-stick spray. Bake for 1 hour at 350 degrees. Remove tin foil and broil 1-2 minutes until golden brown.

1-1/2 pounds ground beef
1 medium onion, chopped
1 medium green pepper, chopped
2 to 3 jalapeno peppers, seeded and chopped

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup frozen corn
1 can (8 ounces) tomato sauce
3 tablespoons tomato paste
1 can (2-1/4 ounces) sliced ripe olives, drained
4 cups shredded cheddar cheese

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook the beef, onion, peppers and chili powder. Add garlic; cook 1 minute longer. Drain. Add the soup, corn, tomato sauce, tomato paste and olives; simmer until heated through., Drain noodles. Spread 1/2 cup meat sauce in a greased 13x9-in. baking dish. Layer with four noodles, half of the remaining sauce and a third of the cheese. Repeat layers once. Top with remaining noodles and cheese. , Cover and bake at 350° for 30 minutes. Uncover; bake 15 minutes longer or until cheese is melted. Let stand for 15 minutes before cutting.

Developed with the busy mom in mind, this recipe uses oven-ready noodles, canned chili beans for extra flavor, along with peppers and tomatoes to sneak in extra veggies without the kids realizing it. A great way to use leftover chili!

1 medium onion, diced
1 large bell pepper, diced
2 cloves garlic, minced
1 pound ground turkey (✅)
2 packets chili seasoning (✅)
1 1/2 cups sour cream (or Greek yogurt)
2 (15) ounce mild chili beans (✅)
15 ounce fire-roasted canned diced tomatoes, drained (✅)
8 ounces oven-ready gluten-free lasagna noodles (or boiled gluten-free lasagna noodles)
2 cups shredded sharp cheddar cheese (✅)

Steps:

  • Preheat the oven. Preheat the oven to 350°F.
  • ⭐️Saute onion and peppers then cook the ground turkey. Add a drizzle of olive oil to the skillet over medium-high heat. Add the onions and peppers and cook until softened, about 3-4 minutes. Add the garlic and the ground turkey. Cook until the turkey is no longer pink.
  • Season the sour cream. While the turkey is cooking, place the sour cream into a medium-sized bowl. Stir in one packet of chili seasoning. Set aside.
  • ⭐️Add the chili beans, tomatoes, and seasoning. To the ground turkey, add the chili beans, tomatoes, and the remaining packet of chili seasoning.
  • ⭐️Assemble Add 1/3 of the meat mixture to the bottom of the baking pan. Add a layer of lasagna noodles (I used 5 per layer). Next add 1/2 of the sour cream mixture. Top with another layer of meat, noodles, and sour cream. Top the sour cream with the remaining meat then add the cheese. Cover with tin foil.
  • ⭐️Bake. Bake for 20 minutes. Uncover and bake an additional 10 minutes or until the cheese is melted and starting to brown. Let sit for 5-10 minutes, then serve.

1 (30 ounce) jar marinara sauce
¾ cup water
1 teaspoon salt
12 lasagna noodles
1 (16 ounce) package cottage cheese

Steps:

  • Cook the ground beef in a large saucepan over medium-high heat until browned and no longer pink, about 5 minutes; drain fat. Stir in the marinara sauce, water, and salt. Bring to a boil. Remove sauce from heat.

1 onion, chopped
1 lb lean ground beef or 1 lb ground chuck
1 tablespoon chili powder
1 teaspoon ground cumin
1 (340 ml) can red kidney beans, drained and rinsed
1 cup sour cream
2 tablespoons all-purpose flour
1 (213 ml) can tomato sauce
1/2 cup salsa
3 large floured tortillas
1 cup cheddar cheese, shredded
1/2 cup sliced green olives
1/2 cup crushed tortilla chips
1/4 cup sliced pickled jalapeno pepper, chopped

Steps:

  • In a large skillet over medium heat, cook garlic, onion, ground beef, chili powder and cumin for 10 minutes until beef is browned and completely cooked.
  • Drain if necessary.
  • Stir in beans; set aside.
  • Combine sour cream and flour until smooth; set aside. Combine tomato sauce and salsa; set aside.
  • Place 1 1/2 tortillas in the bottom of lightly oiled 8 cup rectangular baking dish, overlapping slightly.

2 cups marinara sauce
1 can (15 ounces) pizza sauce
2 large eggs, lightly beaten

1/2 cup grated Parmesan cheese
1 tablespoon dried parsley flakes
1/2 teaspoon pepper
12 no-cook lasagna noodles
4 cups shredded part-skim mozzarella cheese
