HOW TO MAKE HOMEMADE FRUIT AND BERRY CORDIALS - BERRY
Cordials are nostalgic and remind us of simpler times. A fast paced life is no reason to forego the finer things - like how to make homemade fruit and berry cordials! In this post, you will find three recipes which will show you how to make cordials with fruit, berries, or citrus!

Steps:
- Add all ingredient to a large sauce pan and stir to combine. Bring to a boil over high heat.
- Once the mixture comes to a boil, continue to boil and stir for 5 minutes. Stir continuously and do not leave the mixture unattended.
- Next, turn off the heat, but leave the sauce pan on the burner. Allow the mixture to steep and cool for 1 hour.
- After the hour has passed, pour the mixture through cheesecloth to drain and to remove all of the berry seeds and/or pulp.
- Transfer to a sterile bottle or jar. Keep refrigerated.
- To use, pour approximately 1/4 cup of the syrup into a large drinking glass. Add ice and pour in 1 1/2 cups of cold water. Stir and enjoy.

- Make sure all the ingredients are well chilled before you start. Ideally chill a flute glass too. Pour all of the ingredients into your glass, taking your time when you add the sparkling water so it doesn't overflow, then stir gently.
- Drop in a few passion fruit seeds to garnish and a lime leaf, if you like.

Steps:
- Pour passionfruit pulp into a bowl with the citric acid & stir to combine.
- Put water 7 sugar into a saucepan & simmer over a low heat until suagr dissolves, bring to the boil & simmer for 5 minutes.
- Remove syrup from heat & allow to cool slightly, pour it over the passionfruit pulp & stir until combined. Pour into sterilised bottles & refrigerate.
- NB/If you don't want seeds in your cordial, strain the pulp but bear in mind you'll likely need to increase the amount of passionfruits used to make up 1 cup pulp.

- For passionfruit cordial, process pulp in a food processor to separate juice from seeds, then strain through a sieve to yield 250ml liquid (discard seeds). Transfer to a large saucepan over medium-high heat, add sugar, lime juice and 150ml water, stir until sugar dissolves. Bring to the boil, reduce heat to medium and simmer until syrupy (6-8 minutes). Remove from heat, add vinegar, skim scum from surface, transfer to a sterile bottle, refrigerate until cool. Makes about 500ml. Passionfruit cordial will keep refrigerated for a month.
- To serve, pour passionfruit cordial to taste into tall glasses filled with ice, squeeze over lime wedges to taste, add mint, top up with mineral water, stir to combine and serve.
