5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Steps:

  • Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
  • Remove from the oven and allow to stand 10 minutes before serving.

1/4 cup red bell pepper, finely chopped
1/4 cup green bell pepper, finely chopped
2 tablespoons fresh cilantro, finely chopped
2 tablespoons fresh lime juice, divided
1/2 teaspoon red pepper flakes
1/2 teaspoon lime zest
nonstick cooking spray, as needed
4 mahi mahi fillets (4-ounces each)
1 tablespoon olive oil
1/2 teaspoon white pepper, freshly ground

Steps:

  • To prepare Pineapple Salsa, combine pineapple, red and green peppers, cilantro, 1 tablespoon lime juice, red pepper flakes and lime peel in medium bowl.
  • (Pineapple Salsa may be prepared 1 to 2 days ahead and refrigerated.).
  • Preheat broiler.
  • Spray rack of broiler pan with cooking spray.
  • Rinse mahi-mahi and pat dry with paper towels.
  • Place mahi-mahi on rack.
  • Combine remaining 1 tablespoon lime juice and olive oil; brush on mahi-mahi.
  • Broil mahi-mahi, 4 inches from heat, 2 minutes.
  • Turn and brush second side with olive oil mixture; sprinkle with white pepper.
  • Continue to broil 2 minutes or until mahi-mahi flakes easily when tested with fork.
  • Serve with Pineapple Salsa.

Steps:

  • Place the bread crumbs, nuts, salt and pepper in a food processor; cover and pulse until nuts are finely chopped., In a shallow bowl, whisk egg and water. Place flour and nut mixture in separate shallow bowls. Coat fillets with flour, then dip in egg mixture and coat with nut mixture., In a large skillet, heat oil over medium heat; cook fillets for 3-4 minutes on each side or until golden brown., Meanwhile, in a small microwave-safe bowl, combine the brown sugar, soy sauce and ginger. 2 ounces macadamia nuts
4 ounces plain bread crumbs
6 (6 ounce) mahi mahi fillets
4 ounces butter
2 ounces shallots, diced
4 cups chicken stock
4 ounces pineapple, rough chopped
4 ounces papaya, rough chopped
4 ounces mango, rough chopped
1 tablespoon shredded coconut
2 habanero peppers, seeded
salt and pepper to taste
white sugar to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
  • Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
  • Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.
  • Bake mahi mahi in preheated oven about 10 minutes, until internal temperature reaches 140 degrees F. Remove fish, and lightly coat with sauce.

1 cup cold water
1 egg
1 teaspoon salt
2 teaspoons vegetable oil
1 cup flour
1/8 teaspoon yellow food coloring (optional)
6 boneless mahi mahi fillets
oil (for frying)
2 cups pineapple juice
1 cup sugar
2 1/2 tablespoons cornstarch
3/4 cup cider vinegar
1/2 cup ketchup
1/2 cup pineapple tidbits

Steps:

  • For sauce, combine pineapple juice, sugar and cornstarch in a small saucepan. Add vinegar, ketchup and pineapple tidbits. Cook and stir until mixture comes to a boil and is thickened. Keep warm while fish is cooking.
  • In a mixing bowl, combine water, egg, salt, and vegetable oil. Beat slowly to blend. Gradually add flour, beating to form a smooth batter. Add food coloring if desired.
  • Dip fish fillets into batter and fry in hot oil until golden brown (5 to 6 minutes).
  • Remove and drain on absorbent towels. Serve with pineapple sauce.

32 ounces mahi mahi fillets, cut diagonally a half-inch thick
1 teaspoon vegetable oil
salt and pepper
3 tablespoons honey
1/2 cup macadamia nuts, toasted and crushed
1 cup fresh pineapple, diced
1/2 cup pineapple juice
1 tablespoon minced ginger
2 tablespoons scallions, thinly sliced
1/4 cup lime juice
1 teaspoon chili pepper, minced (red or green)

Steps:

  • Rub fillets lightly with oil; sprinkle with salt and pepper.
  • Place fish on grill over a medium-hot fire; cook for 5 to 6 minutes per side.
  • While second side is cooking, coat the exposed side lightly with honey and sprinkle with crushed mac nuts.
  • Flip again; cook another minute or until crust is golden brown.
  • Check for doneness by cutting into a piece; it should be completely opaque all the way through.
  • Remove fish from grill, cut each in half, and serve.

1 medium orange, juiced
1 medium lime, juiced
1 teaspoon Hawaiian sea salt
ground black pepper to taste
1 (14 ounce) can pineapple chunks
4 (5 ounce) mahi mahi fillets
cooking spray
2 stalks green onions, thinly sliced
¼ cup ground macadamia nuts

Steps:

  • Combine orange juice, lime juice, sea salt, and pepper in a bowl. Add pineapple juice from the can and whisk to combine. Refrigerate pineapple chunks until needed.
  • Place mahi mahi fillets in a large glass or ceramic bowl. Add marinade and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 3 hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Cover a rimmed baking sheet with foil and spray foil with cooking spray.

Steps:

  • Melt butter in a skillet and brown garlic. Remove from heat and add teriyak, lemon juice, honey, and sesame and mix well. Marinate fillets 30 minutes. Grill over medium coals until white and flakey.

I was playing around with some things I had in the pantry and decided to do something tropical with the frozen Mahi Mahi filets I had. Smuckers Pineapple Preserves and add crushed macadamia nuts and you have a great sauce! YUMMY!!!! A little taste of Hawaii!

6 fresh or frozen (thawed) mahi mahi filets
1 jar(s) (small) macadamia nuts, crushed
MARINADE
1 Tbsp lite soy sauce
3 Tbsp lite teriyaki sauce
1/4 c pineapple juice
2 Tbsp crushed pinapple
1 Tbsp brown sugar
1 Tbsp macadamia nuts, crushed fine
SAUCE
1 small jar smuckers pinapple preserves
2 Tbsp brown sugar
1/8 tsp ground black pepper
2 Tbsp lite teriyaki
1/4 c crushed pineapple
remaining macadamia nuts, crushed (minus 2 tbsp)

Steps:

  • 1. Preheat Oven to 350 F. In 1 gallon storage bag combine all marinade ingredients. Close bag and shake or squeeze til all ingredients are blended well. Rinse and dry w/paper towel the Mahi Mahi filets, add to bag and close. Marinate in refrigerator for 30 minutes.
  • 2. In a small bowl combine remaining ingredients except for 2tbsp. crushed macadamia nuts. Wisk together until well blended.
  • 3. Pour sauce from bowl into a small non-stick sauce pan. Heat on medium until heated through, turn down heat to low and let simmer, stirring occasionally until slightly thickened.
  • 4. After marinating fish fo 30 mins. place on a baking sheet or 9x12 baking dish, sprayed with cooking spray. Bake in oven for 10 mins. Remove from oven, cover fish with all of the sauce. Return to oven for 5-10 mins (until fish is flaky).
  • 5. Remove fish from oven, place all fish on a serving platter (or serve 1 filet per plate)spoon over any remaining sauce if desired and sprinkle each filet with the remainder of the macadamia nuts.
  • 6. ENJOY!!!
