This non-traditional pumpkin pie is flavored with only 2-3 tablespoons of pumpkin puree. As the pie bakes, it magically turns into three distinct custard-like layers.

2 egg whites (from large eggs)
2-3 tablespoons pumpkin puree (or baby food butternut squash)
3 tablespoons all-purpose flour (23 gr)
2 egg yolks (from large eggs)
⅔ cup granulated sugar (130 gr)
dash of salt
⅙ teaspoon cinnamon
a generous pinch of nutmeg
a generous pinch of allspice
1½ cups milk (only use 1 cup for 8-inch crust (370 gr))
8 or 9 inch par-baked pie crust

Steps:

  • Whip the egg whites until stiff and set aside.
  • Combine pumpkin, flour, egg yolks, sugar, salt, and spices. Blend milk into this mixture adjusting the amount according to the size of the pie pan you are using. 1 c. is plenty for an 8-inch pie but you may need more for a 9-inch pie plate.
  • Mix in egg whites carefully. The mixture should be thoroughly blended but no more. (I use a hand mixer.)
  • Pour into a partially baked pie shell. Bake at 350˚F for 40-50 minutes. The pie should be set with the slightest jiggle when done. The top should be a deep golden brown. If cooked too long, the filling will pull away from the crust as it cools.
  • Allow the pie to cool and refrigerate before serving. If the layers are distinct when you slice it, you did it right!

1/2 cup flour
1/4 teaspoon salt

  • Preheat oven to 350 degrees F.
  • Place all ingredients in a blender and combine thoroughly.
  • Grease and flour 10" deep dish pie plate.

4 eggs, room temperature, separated
1 teaspoon cream of tartar
3/4 cup brown sugar, firmly packed
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup pumpkin puree
3/4 cup melted butter
3/4 cup plain all-purpose flour
2 cups evaporated milk, unsweetened
powdered sugar, for topping

Steps:

  • Preheat oven to 160C/320F and line the base and sides of a 20x20cm/8x8inch square tin.
  • Whisk the egg whites with the cream of tartar until stiff. Scoop out and place in a clean bowl.
  • Using the same mixing bowl, whisk the egg yolk and brown sugar until paler in colour.
  • Add the vanilla, cinnamon, nutmeg and pumpkin and whisk for 30 seconds until combined.
  • Add the melted butter and whisk for 1 minute.
  • Add flour and mix on slow to incorporate.
  • Then add the evaporated milk in slowly to the mixture mixing.
  • Add the egg whites in three lots folding in after each addition so that there are no white streaks or clouds of white.
  • Pour into the prepared tin and bake for 60-70 minutes (until the centre of the cake is no longer wobbling). Cool completely. Serve with icing sugar on top.

3 eggs
1 cup milk
½ cup vegetable oil
15 ounce pumpkin (canned)
½ cup evaporated milk

Steps:

  • Preheat oven: Preheat Oven to 350°F.
  • Prepare the Cake: Mix according to package instructions or using the ingredients in the cake layer, then pour into a lightly greased 9x13-inch cake pan. DO NOT BAKE. Set aside.
  • Combine Wet Ingredients: In another bowl whisk together the ingredients for the pumpkin pie layer until smooth. Slowly pour the pumpkin pie mixture all over the cake mix. Do not mix.
  • Bake: Carefully place the cake pan into the oven and bake for 50-60 minutes or until the center is no longer jiggly and a toothpick inserted into cake mix comes out clean. NOTE: The cake might be slightly darker than normal so don't worry, it's not burnt. You'll notice the cake layer is on top now. Let the cake cool to room temperature.
  • Make the Frosting: Place the vanilla pudding mix into a large bowl, add the pumpkin pie spice and pour in the cold milk. Whisk until combined and starts to thicken. Gently fold in the Cool Whip until it's completely combined. Spread on top of the cooled cake.
  • Serve: Cut into slices and serve immediately or chill the cake for a couple hours.

4 large eggs
1 box spice cake mix
1 cup salted butter (2 sticks) (melted)
1 container white or vanilla frosting

Steps:

  • Preheat oven to 350f degrees.
  • Lightly spray the bottom only of a 9x13" baking dish with nonstick cooking spray.
  • In a stand mixer, (or large mixing bowl) mix together pumpkin pie mix and eggs.
  • Then mix in cake mix and melted butter. Mix for a full 2 minutes.
  • Pour batter into prepared baking dish and bake for about 45-55 minutes (center of the cake shouldn't be jiggly.)
  • Allow cake to cool completely then spread the frosting on top.
  • Cut into 12 squares and serve!

230 g digestive biscuits (or graham crackers) ((notes))
115 g butter, melted
1 can 395ml sweetened condensed milk (not skim)
½ cup 100g white (granulated) sugar
½ cup 100g light brown sugar
¼ cup liquid glucose, or light corn syrup
115 g 1 stick / ½ cup unsalted butter
½ cup pumpkin puree ((see notes))
2 teaspoons vanilla extract
1 teaspoon cinnamon
1 teaspoon allspice
½ teaspoon salt
200 g white chocolate, chopped

Steps:

  • Line an 8x8 inch square baking pan with baking paper.
  • Put 30g of biscuits aside. Blend the other 200g to fine crumbs, then add the melted butter and blend to combine. Tip the mixture into the prepared tin and press down. Place in the fridge to firm up.
  • Crumble the remaining biscuits and set aside.
  • Before starting the fudge make sure to have your other ingredients read to go as you don't want to leave the fudge cooking while you are doing other things, or it may burn.
  • Have the ½ cup of pumpkin puree at the ready. Put the white chocolate, cinnamon, all spice, salt and vanilla in another bowl.
  • Now start the fudge: Combine the sweetened condensed milk, sugars, glucose or corn syrup and butter in a heavy based saucepan.
  • Stir, over low heat, without boiling, until the sugar is dissolved and the mixture is smooth. Cook for 5 minutes, allowing a slight bubble, until it starts to thicken. If at any time, you notice the mixture is starting to catch on the bottom, stir well and turn the heat down a little. If it catches too much and you see burnt bits, you can still save it, just pour the mixture through a strainer into a new saucepan and continue.
  • Add the pumpkin puree and bring to a gentle simmer while stirring regularly until the mixture is smooth and thickened again (another 6-8 minutes or so).
  • Remove from heat and immediately add the remaining ingredients (vanilla, cinnamon, all spice, salt and white chocolate). Stir until the white chocolate has completely melted and fully mixed through, then pour the fudge over the biscuit base. Tap gently on your workbench to smooth out the fudge, then sprinkle over the crumble biscuits.
  • Leave for 30 minutes to cool at room temperature, then cover with plastic wrap and refrigerate for around 4 hours or overnight.
  • Cut into squares and serve.

Steps:

  • Preheat oven to 350 degrees
  • Spray a 9x13 pan with nonstick spray.
  • In a large bowl place the cake mix ingredients (substituting milk for water). So for my cake mix, it called for ½ cup vegetable oil, 1 cup water, and 3 eggs. I substituted one cup of milk in place of the water.
  • Mix per the package instructions. For my cake mix, it was on medium for two minutes.
  • Pour the cake batter into the prepared 9x13 pan. Set aside.
  • In a medium-size bowl place the pumpkin puree, evaporated milk, pumpkin pie spice, eggs, and brown sugar. Whisk together until smooth.
  • SLOWLY pour the pumpkin mixture right on top of the cake mix, over the whole cake. The key is to pour this slowly and drizzle it all over the top of the cake, along the edges so it covers the top. It will already begin to sink.
  • Bake for 50 minutes to one hour or until no longer loose in the middle. (Mine took 50 minutes.)
  • While the cake is cooling in a large bowl whisk together the pudding mix, milk, and pumpkin pie spice until smooth.
  • Fold in the Cool Whip until combined.
  • Spread over the cooled cake.
  • Refrigerate until ready to serve.
