NAPA CABBAGE SALAD WITH MIRIN DRESSING



Napa Cabbage Salad With Mirin Dressing image

This is another of Martha's Salads!! So tasty - and the dressing is so good, just a little different flavor -

Number Of Ingredients 10

1 medium daikon radish, about 4 oz. peeled and thinly sliced lengthtwise into 18 pieces
3 scallions, white part only, halved lenghtwise, bottom left intact
3 tablespoons mirin
2 tablespoons rice wine vinegar
2 tablespoons saffower oil
1/4 teaspoon sesame oil
coarse salt
1 small head napa cabbage, cored and finely shredded, about 6 cups
1 fresh lotus root, rinsed, and thinly sliced crosswise into about 18 pieces
8 ounces silken tofu, drained and cut into six 2-inch cubes

Steps:

  • Place daikon and scallions in a large bowl filled with ice and water.
  • Whisk together mirin, vinegar, oils, and a generous pinch of salt.
  • Place cabbage in a large bowl, and toss with half of the dressing. Divide among 6 plates. Top with 3 slices each daikon and lotus root, a tofu cube, and a fanned out scallion half.
  • Drizzle the remaining dressing.

This is one that I have had for years. It is a sweet, tasty dressing that is good on all kinds of green salads.

Number Of Ingredients 7

2 cups oil
2 cups sugar
2/3 cup catsup
1/2 cup vinegar
1 teaspoon salt
2 tablespoons horseradish
1 1/2 tablespoons grated onions or 1 teaspoon onion juice

Steps:

  • Put all the ingredients in a blender.
  • Blend well.
  • Pour into a sterile jar or bottle and refrigerate.

ISRAELI BREAKFAST SALAD

Breakfast was my favorite meal (by far) when in Israel. Salads and vegetables in general are very common for breakfast. This mixed cheese salad was a favorite and leaves lots of room for variations. Enjoy! (Cook time is just rest time)

2 medium cucumbers, peeled
1/2 cup cottage cheese
1/2 cup crumbled feta cheese
1/4 cup onion, grated and drained
1 green pepper, seeded and chopped finely
1/4 cup lemon juice
1/4 cup olive oil
salt and black pepper
1 sprig of fresh mint (garnish)

Steps:

  • Halve the cucumber lengthwise, score with the tines of a fork, sprinkle with salt and let stand for 30 minutes.
  • In mixing bowl combine the cheeses with the onion, green pepper, lemon juice and olive oil.
  • Mix thoroughly and season generously with salt and pepper.
  • Drain the cucumber and cut into small cubes.
  • Mix into the cheese mixture.
  • Transfer to a shallow serving bowl and garnish with the mint sprigs and let stand in a cool place for 1/2 hour before serving.

½ cup balsamic vinegar
5 dashes lemon pepper
2 tablespoons brown sugar
1 tablespoon lemon juice

Steps:

  • Whisk together oil, vinegar, lemon pepper, sugar and lemon juice. Use a funnel to pour into a clean bottle with a tight fitting lid. Shake bottle before using and pour over favorite green salad.n
