I got this recipe off of hillbillyhousewife.com. It is SO easy and versatile! You most likely have all the ingredients you need in your pantry right now! Try the Healthy "Secret" shake to get all the goodness of spinach underneath the disguise of a yummy milkshake!

Number Of Ingredients 17

1 1/2-2 cups ice water
1 1/2 cups of dry nonfat dry milk powder
2/3 cup sugar
1 teaspoon vanilla
ice, 1-2 trays (as much as you can spare!!!)
2 tablespoons oil
nonstick cooking spray, second squirt (The original recipe calls for these last two ingredients, though I never really put them in. They ar)
1/4 cup unsweetened cocoa powder
1/2 cup fresh strawberries
1/4 cup unsweetened cocoa powder, and
1 teaspoon instant coffee
1/4 cup unsweetened cocoa powder, and a big spoonful
peanut butter
1 tablespoon vanilla, and add
1 cracked egg
1/4 cup unsweetened cocoa powder, and a big handful
fresh spinach (It tastes just as good! Just try it!!!)

Steps:

  • Place the first four ingredients and ingredients to preferred flavor in the blender.
  • Fill the blender the rest of the way with ice and add remaining ingredients.
  • Turn on the blender at medium speed and process for about two minutes.
  • Fill 2 cups to the top.
  • Enjoy!

2 cups peanut butter chips or 2 cups cherry chips
1/2 cup coconut oil (virgin or refined)
1 pinch sea salt (optional)
ice cream
frozen banana (peeled)

Steps:

  • Combine ingredients in a wide microwave safe bowl, heat at 30 second intervals until chips are almost completely melted. Stir to combine; cool.
  • Transfer to a tall mason jar or glass. Dip into jar or pour topping over frozen treats.
  • Note: Once the chocolate cools completely it become firm. You can either put it in a hot water bath to re-liquify or put it in the microwave for about 15 seconds at a time, stirring in between.

No ice cream machine? No problem not necessary for this recipe. From Cook's Country-Aug. 2011. I made yesterday and it is delicious, but next time I will increase the strawberries from 1 1/2 cups to 2 cups so changed it here. I also wonder what would happen if you left a few berries chunky? The texture is good and color is a nice pink. The vodka idea is intriguing--"to prevent the strawberry solids from icing up" is what the article says-and it works! If you plan to store the ice cream for more than a few days, place plastic wrap directly on its surface. Mine froze very hard so next time, I am going to set it in the fridge for 30 minutes before serving to see if it softens a bit. Raspberries might be good too?

2 cups strawberries, hulled
1/2 cup sweetened condensed milk
1 ounce white chocolate chips
1 tablespoon vodka
1/2 teaspoon vanilla extract
salt, pinch
1 1/4 cups heavy cream, CHILLED

Steps:

  • Chill mixing bowl and beater/whisk in freezer.
  • Process strawberries in food processor until smooth, about 30 seconds (puree should measure 3/4 cup).
  • Microwave sweetened condensed milk, white chocolate chips, and vodka in large bowl until chocolate melts, about 1 minute, whisking halfway through cooking.
  • Whisk in strawberry puree, vanilla, and salt.
  • Using stand mixer fitted with whisk, whip cream on medium low speed until foamy, about 1 minute.
  • Increase speed to high and whip until soft peaks form, 1 to 3 minutes.
  • Whisk one-third of whipped cream intro strawberry mixture, then gently fold in remaining whipped cream, 1 scoop at a time, until combined.
  • Freeze in airtight container until firm, 6 hours or up to 2 weeks.

I found this in Cook's Country June/July 2009, and it really is a 10 minute recipe for creamy chocolate ice cream without an ice cream machine. This is the perfect recipe for when you want ice cream, but you don't want to mess with an ice cream maker. Serving size is estimated.

1 teaspoon instant coffee or 1 teaspoon espresso powder
1 tablespoon hot water
4 ounces bittersweet chocolate, chopped fine
1/2 cup sweetened condensed milk
1/2 teaspoon vanilla extract
1 pinch salt
1 1/4 cups heavy cream (cold)

Steps:

  • Combine coffee or espresso powder and hot water in a small bowl.
  • Let stand until coffee dissolves, about 5 minutes.
  • Microwave chocolate, sweetened condensed milk, and coffee mixture in a bowl, stirring every 10 seconds, until chocolate is melted (about 1 minute).
  • Stir in vanilla and salt. Let cool.
  • With electric mixer on medium-high speed, whip cream to soft peaks, about 2 minutes.
  • Whisk 1/3 of whipped cream into chocolate mixture.
  • Fold remaining whipped cream into chocolate mixture until incorporated.
  • Freeze in airtight container until firm, or at least 6 hours or up to 2 weeks. Serve.
