This is my family's very favorite soup! It taste just like take-out! It's quick and easy. I have been making it for years. Have a cold? Forget that plain old chicken soup! ***IMPORTANT TIP*** I suggest making this soup a day or two ahead to let the vegetables and tofu marinate! Then just heat and serve. Enjoy!

6 cups chicken stock
1/4 lb julienned lean pork or 1/4 lb chicken
2 tablespoons garlic and red chile paste
2 tablespoons soy sauce
3/4 teaspoon ground pepper
4 eggs, beaten
5 tablespoons cornstarch
1 cup sliced shiitake mushroom
1 (15 ounce) can peeled straw mushrooms
1/2 ounce dried black fungus (soak in water for an hour before using)
1 (7 ounce) can sliced bamboo shoots
1 (7 ounce) can sliced water chestnuts
1 (15 ounce) can baby sweet corn cobs
1/2 lb soft tofu, sliced into 1/4 inch cubes
1/4 cup white vinegar
1 teaspoon sesame oil
finely chopped scallion (to garnish)

Steps:

  • Bring stock to a simmer, add soy sauce, pork, mushrooms& chile paste, simmer for 10 minutes.
  • Add meat, pepper, vinegar, bamboo, baby corn, water chestnuts, fungus and tofu, simmer 10 min Mix cornstarch with 5 tbsp water and add.
  • bring back to a simmer and pour the eggs in a very thin stream over the surface.
  • Let stand for 10 seconds before gently stirring in the sesame oil.
  • Serve with a garnish of chopped scallions.

Recipe video above. A firm Chinese starter favourite! A glossy soup broth that's savoury, sour and as spicy as you want it to be, filled with mushrooms, tofu and bamboo shoots. Skip the chicken to make it meat free, or add shrimp/prawns or fish pieces. Serves 6 - 8 as a starter, or 4 as a light meal.

220 g / 7oz chicken breast
12 dried shiitake mushrooms ((or 150g/5oz fresh) (Note 1))
1/2 cup wood ear mushrooms (, chopped 1.5cm/ 3/5" pieces (Note 1))
1 tsp dried chilli / red pepper flakes (, adjust spice to taste (Note 2))
2 tsp dark soy sauce ((Note 3))
1 tbsp light soy sauce ((Note 3))
1 tsp ginger (, finely grated)
1/2 tsp white pepper ((sub black))
6 cups (1.5L/1.5qt) chicken or veg stock/broth (, low sodium)
1 tsp sesame oil
1 tsp sugar
1/4 cup (65 ml) white vinegar ((adjust to taste))
125 g / 4oz firm tofu (~ 1 cup) (, cut into 1.2cm / 0.5" cubes (Note 4))
1/4 cup bamboo shoots (, thinly sliced (Note 5))
2 eggs (, whisked)
1/4 cup (40g) cornstarch/cornflour
1/4 cup (125 ml) water
Salt to taste
1 shallot/scallion (, finely sliced)

Steps:

  • Cover shiitake mushrooms with plenty of boiling water. Stand 20 - 30 minutes until soft, drain, then slice thinly. (Discard or reserve liquid for other use)

I love Madame Wong's Long-Life Chinese Cookbook and this is another one of her great recipes. The work is all in the beginning...getting the ingredients sliced and diced, but it's all worth the effort. I think you'll like this soup. Serve it on a cold, winter night, early or late, your family will love you.

4 dried black mushrooms
1/4 cup dried black fungus
boiling water
1/2 cup lean pork, cut into a fine julienne
1/2 cup bamboo shoot
1/2 teaspoon salt
1 teaspoon cornstarch
1 tablespoon oil
6 cups chicken stock
2 tablespoons light soy sauce
1/2 teaspoon pepper, white pepper is best
3 tablespoons vinegar
2 tablespoons cornstarch, dissolved in
1/4 cup water
1 container firm tofu, cut into thin strips
2 eggs, beaten
1 tablespoon sesame seed oil
2 scallions, cut into 1 inch lengths (green onions)

Steps:

  • Put mushrooms and fungus into separate bowls.
  • Cover each with boiling water.
  • Let soak 3-4 hours, or overnight (to be honest, I let them soak about 15 minutes but I'm writing the recipe the way Madame Wong wrote it).
  • Remove stems from mushrooms.
  • Remove woody parts from fungus.
  • Separately cut mushroms, fungus, pork and bamboo shoots to fine julienne.
  • Mix pork with salt and cornstarch in a bowl.
  • Heat wok and add a dash of oil, stir-fry pork until color changes.
  • Bring chicken stock to a boil in a large pot.
  • Add mushrooms, fungus, pork and bamboo shoots.
  • Stir constantly.
  • Add soy sauce, pepper, and vinegar.
  • Thicken with dissolved cornstarch, stirring constantly over moderate heat.
  • Add bean curd, bring to a boil.
  • Turn off heat.
  • Add beaten eggs.
  • Stir quickly 30 seconds.
  • Add sesame oil.
  • Garnish with scallions and serve hot.
  • Note: add more vinegar and pepper if a spicier taste is desired.
  • Note#2: This can be prepared in advanced up to adding the bamboo shoots, or frozen after adding the soy sauce, pepper, vineagar and thickening with the cornstarch.
  • Bring to room temperature and complete.

SHRIMP (OR CHICKEN) WITH CASHEW NUTS



Shrimp (or Chicken) with Cashew Nuts image

This is so easy to prepare and the taste is incredible. I've adapted this recipe from More Long-life Chinese Cooking From Madame Wong and though it calls for deep-frying the shrimp, or chicken, I usually stir-fry it to make it easier and more healthy. I LOVE this recipe!

1 lb shrimp, shelled and deveined or 1 lb boneless skinless chicken breast, cubed
1 tablespoon cornstarch
2 -4 cups oil, for deep-frying
1/2 cup cashews, i use regular roasted salted cashews for this recipe
10 whole dried red chilies
1 green onion, cut into 1 inch pieces
1 clove garlic, minced
1/2 onion, in large dice
1 green pepper, in large dice
1/4 cup chicken stock
2 tablespoons light soy sauce
1 teaspoon red wine vinegar
1 teaspoon cornstarch, dissolved in
2 teaspoons water

Steps:

  • Combine sauce ingredients and set aside.
  • Mix shrimp with cornstarch.
  • Heat oil*.
  • Deep-fry shrimp (or chicken) until color changes.
  • Drain.
  • Remove.
  • Deep-fry cashews in large strainer until light brown (about 30 seconds).
  • Drain, Remove.
  • Reheat 2 T.
  • oil in wok.
  • Fry chilies until dark brown.
  • Add scallion and garlic.
  • Stir-fry 30 seconds.
  • Add onion, stir-fry 1 minute.
  • Add green pepper, stir-fry 30 seconds more.
  • Remove chilies.
  • Pour in sauce, bring to a boil.
  • Add shrimp (or chicken) and nuts.
  • Mix until shrimp (or chicken) and nuts are glazed.
  • Removed to serving platter.
  • Serve over rice.
  • *You don't HAVE to deep-fry the shrimp and cashews, I usually stir-fry them in 1 T.
  • oil* I use peanut oil for this recipe.

  • Bring the chicken broth, white pepper, and sesame oil to a boil in a saucepan. While stirring slowly in one direction to get the soup moving, pour the beaten egg into the soup in a slow but steady stream. Gently stir in the peas. Ladle into serving bowls; sprinkle with green onion to serve.
