MâCHE SALAD WITH CREOLE VINAIGRETTE
Mâche is sold in different ways - sometimes it comes in a package with soil plugs attached and sometimes you can find it loose, like mesclun. If you're buying it with plugs attached, you'll need 1 1/2 pounds; if you're buying it loose, you'll need 5 ounces.

Steps:
- Rinse the mache carefully (there may be a bit of sand at the roots) and spin it dry. Leave the bunches whole if the roots are clean and tender; trim them otherwise.
- Squeeze the juice from a clementine- this should yield about 3 tablepoons juice. In a medium salad bowl, whisk together the clementine juice, balsamic vinegar, parsley, and the tablespoon of olive oil. Season with salt and pepper.
- Peel the remaining clementines and separate them into segments. Pick any strand of pith from the segments. (If you use tangerines and the segments are large, cut them in half or thirds lengthwise).
- Pat the tuna dry with paper towels. Pour the poppy seeds in a shallow soup plate and dip the fish in to coat all sides, pressing gently so the seeds will adhere. Toss the mache with the prepared dressing and arrange on plates.
- Heat the 2 teaspoons olive oil in a large nonstick skillet over high heat. Place the fish in the skillet and cook for 1 minute on each side, until the surface is opaque but the flesh inside is still rare. Season with salt and pepper. Transfer the slices onto a cutting board and cut in cubes, working quickly so the fish won't get cold. Top each plate with tuna and clementine segments, and serve immediately.

RARE SESAME SEARED TUNA
Easy, great tasting tuna coated with sesame seeds, and quickly seared. This tuna is served rare, so be sure to use a good quality fresh tuna.

- In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.
- Coat the tuna steaks with the remaining soy sauce mixture. Spread the sesame seeds out on a plate, then press the tuna into the sesame seeds to coat.
- Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.

KOREAN-STYLE SEARED TUNA
I pulled this off the web and it has become one my absolute favourite recipes. We have it at least once a month, sometimes more. Guests never fail to ask for the recipe. Note that prep time and cook time are approximations. It's a very quick and easy recipe.

Steps:
- In a small bowl, combine the soy sauce, sugar, red pepper flakes, and broth.
- In a small sauce pan, heat sesame oil.
- Stir in the green onion and garlic and cook, stirring, for about 1 minute.
- Add the soy sauce mixture; simmer until reduced to approximately 1/3 cup.
- Meanwhile, sprinkle the fish with the salt and black pepper.
- Heat the cooking oil in a large frying pan over moderately high heat.
- Add the tuna and cook until brown, about 3 minutes.
- Turn and cook the fish until done to your taste.
- (This is best with the tuna still very pink in the center.) When done, cut the tuna into slices and serve with the sauce.
SESAME SEARED TUNA

PAN SEARED TUNA
I don't know if any of you have friends that won't eat 'raw' fish but I've conformed a bunch of my leary friends after they had this extremely rare tuna which was described by them more like a steak. Lots of oooos and ahhhhs. I like to add Asian Seasoning in the sauce also from the Pampered Chef line. Very Good and do not over cook the tuna, should be rare. I usually serve this as an appetizer but would make a great meal too!

- In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 1/4 cup of olive oil.
- Stir the ingredients together until well incorporated.
- Place a large skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil.
- Season the tuna pieces generously with salt and pepper.
- Lay the tuna in the hot oil and sear for 1 minute to form a slight crust; flip and sear the other side 1 minute. I use a timer.
- Pour half of the cilantro mixture into the pan to coat the fish.
- Transfer the seared tuna to plates and serve with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

- Whisk the soy sauce, sesame oil and pepper together in a shallow dish. Heat the sunflower oil in a non-stick frying pan. Sear the steaks on both sides until cooked to your liking. Transfer to the dish with the marinade, then chill for 1 hr. Turn the steaks, then continue to chill until ready to assemble.
- Tip all the veg into a large serving bowl with both types of ginger and the nori. Drizzle over the mirin and lime juice, then add the coriander and chilli. Toss and rest for 20 mins.
- Make the dressing by whisking everything together. To serve, slice the tuna and arrange over the salad, then sprinkle over the coriander seeds and drizzle over the dressing.

SESAME AND BLACK PEPPER SEARED TUNA
I've tried a few seared tuna recipes and took elements I liked from them to create this recipe. I find it to produce a really tasty product. Let me know how you like it! I find it best served with a spinach salad and/or other side dishes.

- Mix together ingredients 2 through 5 to make a marinade.
- Marinate the tuna steaks for at least 10 minutes (I tend to buy sashimi grade tuna medallions/steaks).
- Pour the two oils into a frying pan, preferably non-stick or anodized, and heat over low-medium flame.
- Place the tuna steaks in the hot oil.
- Pour one teaspoon corn starch onto each tuna steak, then one teaspoon sesame seeds and half the fresh ground black pepper.
- After about 4 minutes, flip the steak over. Cover the other side with 1 teaspoon sesame seeds and the rest of the fresh ground black pepper.
- Cook for another 3-4 minutes.
- Flip the tuna steak over one last time for about 1 min to toast the sesame seeds.
- Let rest for a few minutes before slicing and serving.

MACHE AND ENDIVE SALAD WITH CLEMENTINES AND WALNUTS
Mache, a delicate green with a mild, subtle flavor, packs quite a nutritional punch, as it is high in omega-3s (as are walnuts) and folic acid. The salad is simple to throw together, but its flavors are complex, with sweet juicy mandarin (or tangerine or clementine sections), crunchy bitter endive and walnuts, soft and almost sweet mache, and vibrant fresh herbs. The recipe will serve 4 to 6 but I admit to eating a good half of this salad when I tested it.
