APPLE-CHERRY COBBLER PIE
I made this for Company last night and it was fabulous and so easy... Got it from Betty Crockers Fall Baking Magazine...I used a Pillsbury refrigerated pie crust. The only thing I changed is I used Splenda instead of sugar as I was feeding a diabetic...

Steps:
- Place sheet of foil on oven rack below the rack pie will be baked on to catch any drips.
- Heat oven to 375°F.
- Put pastry into a pie pan, crimp edges.
- In large bowl, mix filling ingredients until fruit is coated.
- Spoon into pastry-lined pie plate.
- In medium bowl, mix 1 cup flour and 3/4 cup sugar. Using a pastry blender or fork, cut in butter until coarse crumbs form.
- Stir in almond extract and egg.
- Spoon topping over filling as evenly as possible.
- Bake pie uncovered 20 minutes or until topping and crust begin to brown.
- Cover entire surface of pie with another sheet of foil to prevent overbrowning;.
- Bake 30 to 40 minutes longer or until topping is golden brown, and pie is bubbly.
- Cool completely, about 1 hour, before serving.
- Enjoy!

FRENCH APPLE COBBLER
This recipe was in a box of recipes I bought at a neighbors estate sale. The prep. time is a guess since I didn't time how long it took me to prepare it.

Steps:
- For the filling:
- Combine dry ingredients.
- Add apples, vanilla and water.
- Mix well.
- Put in a greased 8x8 baking dish.
- Dot with butter.
- Let stand while preparing topping.
- For the topping:.
- Combine all ingredients.
- Mix until smooth.
- Drop batter in 9 portions on top of apple mixture.
- Batter spreads during baking.
- Bake at 375* for about 40 minutes or until applea are done and topping is a golden brown.
- Serve warm plain or with whipped cream if desired.

- 1. Preheat oven to 350 degrees.
- 2. Melt butter in a 9x13 (preferably glass) baking dish. Do this by placing it in the oven while it preheats.
- 3. Mix sugar, flour, vanilla, and milk in a mixing bowl.
- 4. Pour mixture into baking dish over the butter. Do not mix with butter.
- 5. Spoon in apples or your fruit of choice in random spots.
- 6. Bake for 45 minutes.
- 7. The crust will rise around apples. Serve. Enjoy!

- In a large cast-iron or other ovenproof skillet, combine the rhubarb, apple, brown sugar and 1/4 teaspoon cinnamon; bring to a boil. Reduce heat; cover and simmer until rhubarb is very tender, 10-13 minutes. Combine cornstarch and water until smooth; gradually add to the fruit mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. , In a small bowl, combine the crumbled cookies, butter, sugar and remaining cinnamon. Sprinkle over fruit mixture. , Broil 4 in. from the heat until lightly browned, 3-5 minutes. If desired, serve warm with ice cream.
