CAJUN MACARONI AND CHEESE WITH SHRIMP
I had this at my monthly Bunco group. One of the lady's husbands made it and gave us the recipe. It is to die for. I add in diced green pepper, saute it with the shrimp and more seasoning than called for when I make it.

Steps:
- Preheat oven to 350°F.
- Melt butter in medium sauce pan.
- Add shrimp, sprinkle with 1/2 tsp cajun seasoning.
- Cook 3-4 minutes, remove.
- In same pan melt 2T butter, add onion and sauté 1 minute.
- Whisk in flour, cook 1 minute.
- Whisk in milk and heat approximately 4 minutes.
- Add Swiss, cheddar and 3/4 lb. pepper Jack cheese, stir until smooth.
- Add 1/2 teaspoons cajun seasoning, salt, and pepper.
- Stir in cooked shrimp and pasta.
- Pour into buttered cassserole dish.
- Top with 1/4 lb. pepper Jack cheese, bread crumbs, 3 T. melted butter and parsley.
- Bake 45 minutes or until browned and bubbling.

- Preheat the oven to 350 degrees F (175 degrees C).
- Pour 5 cups water into a saucepan. Cover and bring to a boil over high heat. Add macaroni and boil until tender yet firm to the bite, about 8 minutes.

- Heat oven to 350 degrees F.
- Cook the pasta in salted, boiling salted water until al dente. Drain in a colander.
- Add the cherry tomatoes to a sheet tray, drizzle with olive oil and season with salt and pepper. Bake for 20 minutes, until visibly plump and softened.
- Heat a large skillet over medium heat. Add 2 teaspoons of olive oil. Saute the chorizo in a saute pan until crisp. Remove.
- Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour, stirring for 1 minute. Whisk in the warmed milk and bring to a boil. Continue to whisk constantly. Stir while adding the mustard, hot sauce and Worcestershire. Stir in the cheese; reserving 1/2 cup for the topping. The mixture will thicken as the heat increases.
- Pour the drained pasta into the cheese sauce and mix well. Add to a 3-quart casserole dish. Add the chorizo and roasted cherry tomatoes. Top with reserved cheese and the fried onions. Bake for 35 minutes. Can be made ahead, covered and refrigerated. Bring to room temperature before baking if refrigerated.

- Preheat the oven to 350 degrees F.
- Cook the macaroni according to package instructions. If you are using fresh broccoli, blanch in hot salted water for 5 minutes, then drain. If you are using frozen broccoli, thaw and drain it. Add the broccoli to the macaroni. Set aside.
- Meanwhile, place the sun-dried tomatoes in a small bowl and add enough warm water to cover. Let stand until softened, about 10 minutes. Drain well, then chop into 1/4-inch pieces and set aside.
- Melt the butter in a medium saucepan set over medium heat. Add the green onions and cook until tender, about 2 minutes. Stir in the flour, cayenne, basil and salt. Add the milk and cook, stirring, until slightly thickened and bubbly. - Preheat the oven to 425 degrees F. Prepare the butterfly shrimp according to the package directions for the oven. Bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook according to the package directions for al dente, about 10 minutes. Drain well and reserve.
- Meanwhile, melt the butter in a large ovenproof skillet over medium-high heat. Add the chile and cook until just tender, 1 to 2 minutes. Whisk in the flour until completely moistened and bubbling, about 1 minute. While whisking continuously, slowly pour in the milk and continue to simmer until creamy and thickened, 2 to 3 minutes. - Combine oil, cayenne pepper, thyme, parsley and 1 tablespoon Hidden Valley Original Ranch Dips Mix. Add Shrimp. Refrigerate and marinate shrimp for at least 2 hours.
- Preheat grill to medium heat. Skewer shrimp, piercing one end near the head and again near the tail. Discard Sauce. Lightly oil the grill grate. Grill shrimp for 2-3 minutes each side, until opaque.

- Grease a shallow baking dish and Preheat oven to 350-375 F.
- Cook pasta until about 2 min shy of done according to package, drain.
- Back in the pan, mix pasta with butter, then egg, cheese, cayenne, paprika, and salt and pepper to taste.
- Pour pasta mixture into the baking dish and spread out evenly.
- Fill with enough milk to almost cover the pasta.
- Bake for 10 minutes, remove and stir to distribute any cheese clumps into the milk.
- Bake another 15 minute Remove and top with bread bread crumbs.
- Bake for 10 more minutes until bread crumbs are crispy and casserole is bubbly.
