3 tablespoons unbleached all-purpose flour
1 teaspoon dry mustard
1/2 teaspoon paprika
1/2 teaspoon kosher salt
1 1/2 cups nonfat milk
1 cup nonfat sour cream
1 egg, lightly beaten
2 cups shredded reduced-fat cheddar cheese
4 cups cooked elbow macaroni (from about 2 cups dried)
1/4 cup corn flake crumbs or 1/4 cup dried breadcrumbs

Steps:

  • Coat 2 quart casserole with nonstick spray. Preheat the oven to 350°F.
  • Melt butter in medium saucepan. stir in flour, mustard, paprika, and salt. slowly pour in milk, whisking continuously until there are no lumps in the flour. continue to stir with whisk, raise the heat, and cook until milk bubbles and thickens. Remove from stovetop and stir in sour cream, egg, and cheese.
  • Toss macaroni and the cheese mixture together in a bowl and then pour it into the casserole. Top with the cornflake crumbs. Set in the oven and bake for 20 min, or until bubbling around edges.

2 cups fat-free (skim) milk
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground red pepper (cayenne)
2 cups shredded reduced-fat sharp Cheddar cheese (8 oz)

Steps:

  • In 3-quart saucepan, cook and drain macaroni as directed on package. Return to saucepan; cover to keep warm.
  • Meanwhile, heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 2-quart saucepan, stir milk, flour, mustard, salt, black pepper and red pepper with wire whisk until smooth. Cook over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat. Stir in cheese until melted.
  • Add cheese sauce to cooked macaroni; mix well. Spoon into baking dish.
  • Bake 20 to 25 minutes or until edges are bubbly.

1 (16 ounce) package elbow macaroni
1 head cauliflower, roughly chopped
1 tablespoon olive oil
1 onion, finely chopped
kosher salt
½ teaspoon ground black pepper
1 (8 ounce) package grated sharp Cheddar cheese
1 ½ cups reduced-fat sour cream
½ cup 1% milk
1 tablespoon Dijon mustard
1 cup bread crumbs
½ cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Add cauliflower during the last 3 minutes of cooking. Drain and transfer to a bowl.
  • Reduce heat to medium and add oil to the pasta pot. Add onion, salt, and pepper; cook, stirring occasionally, just until soft, 5 to 7 minutes. Mix in pasta-cauliflower mixture, Cheddar cheese, sour cream, milk, and Dijon mustard. Transfer mixture to a shallow 3-quart baking dish. Sprinkle with bread crumbs.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes. Top with parsley before serving.

1 cup skim milk
2 teaspoons cornstarch
1 sprig fresh parsley
1 sprig fresh thyme
1 bay leaf
2 cups low-fat cheddar cheese, grated (about 8 ounces)
1 tablespoon unsalted butter, cut into small pieces
1 to 2 teaspoons Dijon mustard
1 1/2 teaspoons kosher salt
Freshly grated nutmeg
Cayenne pepper
Freshly ground black pepper

Steps:

  • Bring a large pot of cold water to a boil and salt it generously. Add the noodles, and cook, stirring occasionally, until al dente, about 8 to 10 minutes.
  • Mix about 1 tablespoon of skim milk with the cornstarch and set aside. Heat the remaining skim milk in a saucepan over medium heat with the parsley, thyme, and bay leaf. When fragrant, whisk in the cornstarch mixture and bring to a boil over high heat, and simmer until the milk thickens. Remove the herbs and stir in the cheese, until melted. Whisk the butter, mustard, salt, nutmeg, and cayenne into the sauce.
  • Drain the pasta and transfer to a large bowl. Toss with the cheese sauce and season with salt and black pepper. Serve.

morton lite salt (to taste)
2 tablespoons low-cholesterol butter
3 tablespoons flour
1 dash pepper (to taste)
2 cups skim milk
2 cups grated low-fat cheese (Suggestion, Alpine Lace American, DELICIOUS) or 2 cups low-cholesterol cheese (Suggestion, Alpine Lace American, DELICIOUS)

Steps:

  • Boil macaroni in salted water, according to package.
  • Drain.
  • Set oven at 375°F.
  • Melt butter in saucepan.
  • Add flour, mix until smooth.
  • Add milk.
  • Stir constantly until smooth and thick.
  • Add cheese, add additional salt (if desired) and pepper.
  • After mixture is thick and smooth, add cooked macaroni and mix thoroughly.
  • Pour into greased 2 quart casserole dish. (Make sure you use low cholesterol oil), OR spray with PAM.
  • Top with slices of low cholesterol cheese.
  • Bake for 30 minutes.
  • Remove from oven and take off aluminum foil or lid and bake for another 15 minutes or until golden brown.
