  • Prepare Dinner as directed on package. Stir in peas.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray; top with bacon.

Kosher salt
1 pound medium shells or large elbow noodles
1 1/2 cups frozen peas
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk
One 8-ounce block cream cheese, at room temperature
1/2 teaspoon freshly ground pepper (I like white, but any pepper will do)
1/4 teaspoon ground mustard
1 to 2 tablespoons bourbon, optional
8 ounces extra sharp white Cheddar, shredded
8 ounces white American cheese, shredded if from a block, otherwise diced

Steps:

  • Bring a large pot of water to a boil. Season generously with salt. Cook the pasta according to the package directions. When you have 1 minute of cook time left, pour in the frozen peas. Drain and set aside.
  • Melt the butter in a large high-sided 10-inch saute pan over medium heat. Stir in the flour and cook until golden brown, about 2 minutes. Slowly whisk in the milk. Reduce to low heat, bring to a simmer and cook until it becomes a thin gravy, about 5 minutes. Add the cream cheese and break up until smooth. Add the white pepper and ground mustard. Remove from the heat, add the bourbon if using and whisk to combine until fully incorporated. Stir in the Cheddar and American cheeses and cook until all the cheese is melted, 2 to 4 minutes. Taste and add salt as needed.
  • Add the cooked pasta and peas to the cheese sauce and stir to thoroughly combine. Taste again and salt and pepper as needed before serving.

6 ounces ditalini, small elbow or small shells
1/2 onion, diced
1/4 cup olive oil
1 can peas, undrained
1 pinch dried basil, oregano,or both
1 cup water (from cooking the pasta)
salt and pepper

Steps:

  • Start the water for the pasta.
  • Meanwhile,heat a little of the oil in a sauce pan.
  • Add the onions and cook until golden.
  • (DO NOT BURN).
  • Add the herbs, peas,and 1/2 cup of water and the rest of the oil.
  • Keep warm.
  • Drain the cooked pasta and put it in a bowl.
  • Add the peas and mix.
  • Add the rest of the water, if needed.
  • I have also used Great Northern or Pork and beans--all undrained.
  • You may add a diced tomato to the onions and peas, if you like.
  • add the rest.

1 clove Garlic (minced)
1 30 oz Tomato Sauce or Puree
1 6 oz Tomato Paste
3 6 oz cans water
1 tsp Salt
.5 tsp Black Pepper
1 box Thin Spaghetti
1 can Le Sueur Young Sweet Peas

Steps:

  • Heat oil over medium heat in a large pot or dutch oven.
  • Add minced garlic and keep it moving until light, golden brown.
  • Add tomato sauce to the oil and garlic and stir to combine.
  • Stir in tomato paste, breaking up and combining with sauce and oil. Using the tomato paste can, add three cans of water. Stir until fully combined.
  • Place lid on pot, and lower the heat to simmer. Stir every ten minutes or so, for about 1 hour. Gravy is ready when it turns dark red and the oil can be seen separating on the top.
  • Boil water in large pasta pot. Once at a rolling boil, generously salt the water, then, breaking the pasta into three pieces, boil until "al dente"
  • Drain the pasta, reserving some of the salty starch water from the pot - enough to barely cover the pasta.
  • Empty the can of peas, water and all, into the pot with the macaroni. Stir to combine.
  • Pour the gravy into the pot with the peas and pasta. Enjoy!

8 slices bacon, finely chopped
3 1/2 cups milk, plus more if needed
Several sprigs parsley
10 black peppercorns
1/2 teaspoon crushed red pepper flakes
1 bay leaf
1/4 teaspoon freshly grated nutmeg
Up to 6 tablespoons unsalted butter
1/2 cup all-purpose flour
8 ounces yellow Cheddar, freshly shredded
4 ounces Gruyere, freshly grated
4 ounces Parmesan, freshly grated
8 ounces macaroni, cooked until very al dente
1 1/2 cups frozen peas
1 cup fresh breadcrumbs
1 tablespoon unsalted butter, melted
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Butter a 2-quart baking dish or eight 12-ounce ramekins.
  • For the bechamel: Heat a medium saucepan over medium heat. Add the bacon and cook, stirring often, until just crisp, about 5 minutes.
  • Meanwhile, combine the 3 1/2 cups milk, the parsley, peppercorns, crushed red pepper, bay leaf and nutmeg in another medium saucepan. Bring to a simmer over medium heat, then remove from the heat and keep warm.
  • When the bacon is crisp, remove it with a slotted spoon and drain on a paper towel-lined plate, leaving 6 tablespoons of the bacon fat in the saucepan. If you have less than 6 tablespoons, make up the difference with the butter and heat over medium heat until melted. Add the flour and cook, stirring, until the mixture is doughy and smells a bit nutty, about 1 minute.
  • Strain in the warm milk about a half cup at a time into the flour mixture and cook, whisking to incorporate after each addition. The bechamel should be smooth and velvety. If it's chunky or too thick, whisk in some more milk.
  • For the mac 'n' cheese: Remove the bechamel from the heat and add all of the cheeses; whisk to combine. Fold in half of the bacon. Next, fold in the macaroni, then the peas. Transfer to the prepared baking dish or ramekins. If using ramekins, place them on a rimmed baking sheet.
  • Combine the breadcrumbs with the remaining bacon pieces, the melted butter and a pinch each of salt and black pepper in a small bowl. Sprinkle over the mac 'n' cheese and bake until the sauce is bubbly and the crust is browned on top, 30 to 45 minutes (depending on the baking vessel).
  • Let rest for 10 minutes then serve.

italian seasoning (mix of oregano, basil, parsley)
1 (28 ounce) can tomato sauce
14 ounces water
1 (8 ounce) package frozen peas
1 lb macaroni

Steps:

  • Saute onions in olive oil. When onions are soft, saute garlic quickly.
  • Add tomato sauce and 1/2 can water.
  • Add seasonings to your taste. (I prefer a lot of red pepper to make the sauce hot).
  • Simmer covered for about 45 minutes. Add peas during last 20 minutes of cooking.
  • Prepare macaroni (elbows or small shells) as directed on box.
  • Serve in a big bowl with lots of sauce. I prefer it as a soupy pasta. Add grated cheese. Delicious with bread and a glass of wine.

12 ounces whole wheat macaroni
1/4 cup unsalted butter
1/2 pint heavy cream
2 cups cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1 cup part-skim mozzarella cheese, shredded
10 ounces frozen peas
2 slices bacon
2 garlic cloves, finely diced
salt
italian seasoning
fresh black pepper

Steps:

  • Preheat oven to 325 degrees F.
  • Bring a large saucepan of salted water to boil on the stove top. Cook macaroni until al dente, following package directions.
  • While the pasta cooks, melt butter in large microwavable mixing bowl. When pasta is done, drain and pour into the bowl, mixing to coat with butter.
  • Stir in heavy cream and cheeses. Season with salt, pepper, and Italian seasoning to taste. (I used about 6 turns of the pepper mill, 6 shakes of Italian seasoning, and just a pinch of salt.) Stir thoroughly. Add frozen peas and stir again.
  • In frying pan over low to medium heat, cook two pieces of bacon. As the bacon gets close to being crisped, add the garlic cloves and cook until they are clear. Drain bacon and garlic on paper towels.
  • Pour the macaroni mixture into an 8x8 baking pan. Break the bacon into bits. Sprinkle the bacon and garlic over the top of the macaroni mixture.
  • Bake for 30 minutes or until cheese is crispy.

  • Bring a pot of salted water to a boil. Cook the bacon in a Dutch oven over medium-high heat, stirring, until crisp, 3 to 4 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate.
  • Add the scallions to the Dutch oven (reserve 1 tablespoon of the dark scallion greens for topping). Cook over medium heat until softened, about 1 minute. 1/4 cup finely chopped red onion
1 (15-ounce) jar salad dressing (recommended: Miracle Whip)
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 1/2 teaspoons sugar
10 ounces frozen peas, thawed
1/2 cup shredded sharp Cheddar cheese
6 slices bacon, cooked until crisp and crumbled

Steps:

  • Cook the pasta in salted boiling water as directed on box for al dente, about 8 minutes. Drain and place the cooked pasta in a large bowl filled with ice water to stop the pasta from over cooking. Stir until the pasta is cool, then drain in a colander shaking to release as much water as possible.
  • To make the dressing: In a large bowl mix the red onion, salad dressing, apple cider vinegar, Worcestershire sauce, and sugar. Taste and then season with a pinch of salt and grind or two of pepper. Add the pasta and completely coat with the dressing. Add in the peas, cheese, and bacon. Cook's Note: If making ahead, cover and refrigerate the salad until ready to serve, then add the bacon right before serving.
