ARRABIATA SAUCE

Steps:
- Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the red pepper flakes, garlic and onions and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and Italian seasoning and stir to combine. Add a pinch of sugar and some salt and pepper to taste. Reduce the heat to low and simmer for 30 minutes.
- Let cool, then portion into 4 freezer bags and freeze.
MACARONI AND CHEESE

- Preheat the oven to 450 degrees F.
- Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.
- Whisk the cream, milk, flour, 1/2 teaspoon salt, and pepper in large bowl to blend. Stir in 1 cup Fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, ham, if using, and parsley. Add the noodles and toss to coat. Transfer the noodle mixture to the prepared baking dish. Toss the remaining 1 cup Fontina, 1/4 cup Parmesan, and 1/4 cup mozzarella in a small bowl to blend. Sprinkle the cheese mixture over the noodle mixture. Bake until the sauce bubbles and the cheese melts and begins to brown on top, about 20 minutes. Let stand for 10 minutes before serving.

Steps:
- Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
- Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes.
- Stir in parsley. Ladle over the hot cooked pasta of your choice.

PENNE ARRABIATA
A great smooth pasta dish with a kick. Arrabiata means angry in Italian. By pushing the sauce through a mesh strainer or moulie makes the sauce like one you would find at an expensive Italian restaurant.

Steps:
- Put oil in a heavy saucepan over medium heat.
- Add garlic cook for 5 minutes until beginning to turn golden, careful not to burn.
- Turn down to medium low.
- Add chili and stir.
- Add Tomatoes and sauce and stir.
- Put a plenty of salted water on to boil in a big saucepan.
- Cook sauce for about 20 minutes stirring occasionally.
- Cook penne until al dente.
- Strain pasta.
- Push sauce through moulie or meshed strainer into saucepan with the back of a spoon getting as much through as you can.
- Heat and add 1/2 cup of pecorino cheese.
- Taste for seasoning.
- Add cooked penne and toss.
- Serve hot with extra pecorino cheese at the table.

- In a large saucepan, combine tomatoes, olive oil, and red pepper flakes. Simmer 30 to 40 minutes, or until sauce is thickened. Stir in garlic, and simmer 10 minutes. Remove from heat, and stir in basil, salt and pepper.

PORK BBQ MACARONI AND CHEESE

- Preheat the oven to 250 degrees F.
- Rub the pork with the BBQ Rub, then place in a pan with the vinegar. Cover with plastic and foil, then roast for 3 to 4 hours. Let cool, then remove the fat cap and bone and shred the pork.
- Heat 3 ounces pulled pork. Place the macaroni and Cheese Sauce in a saucepan and cook on medium heat until hot. Place the macaroni and cheese in a bowl, then top with the pork, BBQ sauce, smoked Cheddar and green onion. (Reserve the remaining ingredients for more servings or another use.)
- Combine the chile powder, paprika, salt, granulated sugar, brown sugar, crushed red pepper, cumin, garlic powder, onion powder, cinnamon and ginger in a bowl.
- Place the brown sugar and ketchup in a bowl and mix well. Add the vinegar, mustard, hot sauce, paprika, pepper, salt, Worcestershire and 1 cup water and continue to mix until well blended and the sugar has dissolved.
- Melt the butter in a pot, then add the flour, stirring until smooth. Cook for 3 minutes. Add the milk, cream, salt and pepper. Cook on medium heat, stirring often, until thickened. Turn off the heat and add the cheese. Stir until melted.
MACARONI AND CHEESE ARRABIATA
Arrabiata means a hot, spicy dish with tomatoes. My boys love this dish and you can adjust just how spicy you like it. Good for those crisp fall evenings. I got this recipe out of our newspaper a long time ago.

- Cook pasta in boiling, salted water until al dente.
- In a medum skillet heat olive oil.
- Saute garlic until golden.
- Add the tomatoes and the peppers.
- Simmer uncovered over medium heat for 5 minutes, until tomatoes are almost mushy.
- Stir in olives and basil and set aside.
- Melt butter in heavy saucepan.
- Stir in flour.
- Cook and whisk over medium heat for l minute.
- Add milk all at once, whisking until smooth.
- Cook and stir until thickened and bubbly.
- Stir in fontina and 1/4 cup Parmesan cheese and remove from heat.
- Stir until cheese melts.
- Add salt to taste.
- Stir in tomato mixture and stir well.
- Drain macaroni.
- Return to pasta pot and shake until all moisture evaporates.
- Add sauce, sirring well to coat all the pasta.
- Pour into a 9 by 13 inch baking pan.
- Sprinkle with remaining Parmesan chees.
- Bake at 400 degrees for 20 minutes, until golden brown.
PRAWN ARRABIATA
Quick and easy and very tasty. Most of the ingredients are store-cupboard stapes. You can substitute tinned tomatoes for the fresh if you prefer. Increase the amount of chili if you prefer a little more kick. Serve with linguine or rice with lemon juice squeezed through.

- Heat 1 tablespoon of the oil in a large pan and add the prawns. Sprinkle with salt and cook for a couple of minutes until just pink all the way through (don't overcook!).
- Remove the prawns and set aside.
- Add the remaining oil, garlic, onion and chili to the pan and cook gently until the onion is translucent - do not brown.
- Add the chopped tomatoes, tomato puree, lemon juice and basil. Simmer for approximately 20 minutes, stirring regularly until the tomatoes start to break down a little.
- Add the red wine and continue to simmer until the tomatoes are completely soft. Taste and season if required.
- Add the prawns and cook until warmed through.
- Stir in the parsley just before serving.

- In a large skillet, heat 2 tablespoons olive oil over low heat. Add onion, chilies and garlic; cook and stir until fragrant, 2-3 minutes. Add the tomatoes, gently breaking up with the back of wooden spoon; cook until tender over medium heat, about 10 minutes., Meanwhile in a large saucepan, cook penne according to package directions for al dente. Drain pasta, reserving 1/2 cup pasta water. , Add vinegar to thickened tomato sauce; season with salt and pepper. To make breadcrumb topping, heat remaining olive oil over medium heat in second skillet. Add breadcrumbs and fresh thyme, if desired; fry until crispy, 2-3 minutes. Remove from heat., Add drained pasta and reserved pasta water to tomato sauce; toss to coat. Top with fried breadcrumbs. If desired, drizzle with additional olive oil and garnish with fresh herbs and cheese.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- Heat the milk in a small saucepan. Stir in mustard, Worcestershire sauce, salt, and hot sauce. Set aside.
- Stir 1 1/2 tablespoons butter and 3 cups cheese into the drained macaroni. Pour the hot milk mixture over the cheese and macaroni. Transfer to prepared baking dish. Sprinkle remaining 1/2 cup cheddar on top. Combine the bread crumbs with the melted butter, and spread over the top. Sprinkle with paprika.
- Bake in preheated oven for 30 minutes, and then place under the broiler for 1 to 2 minutes.
